Salmon Paksiw




 Due to holiday season, I wasn't able to post for couple of days. I was extremely busy with Christmas, preparing and wrapping the presents. It's wonderful celebrating the birth of Jesus Christ. I'm so blessed with my loving family and friends, never asked anything this year, but I received good stuffs. It always fun watching my kid opening their presents. Their anticipation of what inside the box, their ohhh! and ahhhh!! This is why I love Christmas!!
 So, this morning I feel little tired, so I decided to make "Salmon Paksiw " I wasn't sure how this thing gonna turn out cause, I never tried this before, specially with Salmon, but HEY!! It work out really good. Super delicious. I highly recommend this for those who like "salmon" and like "paksiw" at the same time.: I'll show you how easy it is to make this and it takes no time at all, very quick!



 Ingredients:
Salmon- I prefer big chunk for paksiw
Salt n Pepper- to taste
Lemon
Green Pepper,
Onion
Garlic
Ginger
Soy sauce
Vinegar

Directions:
 1.) Combine equal part of soy sauce, vinegar and little lemon. Set aside; Meanwhile chopped all the veggies put in the skillet and add little water.
2.) Add the Salmon and the sauce in the skillet. Let it cook.
3.) Salt n Pepper to taste and serve it with rice.

Potato Hash Recipe


Potato Hash With Diced Ham


What a perfect meal to end the weekend. It's Sunday and I'm off. So,  I have all day to make my family some good breakfast. So, I made them their favorite, Potato Hash with diced Ham, I love this meal its very yummy and fulfilling. It's my husband favorite breakfast so I was really inspired making it, secret ingredient to make it so tasty is " LOVE" I'll promise you, It works like magic... Whoala! very delicious meal indeed. I'll show you how easy it is to make this scrumptious breakfast.

Ingredients:
Potato- thinly sliced
Eggs
Ham- dice
Salt and Pepper- to taste
Onion- thinly sliced
Oil

Directions:
1.) Put oil on the pan. Add the onion and saute. Slowly add the slice potato and let it cook.
2.) Add the diced ham, salt and pepper to taste and let it cook.
3.) Once potato is cooked, take it out in the pan, set aside;
4.) Cook the eggs in the same pan, add the cooked potato. Serve it hot with shredded cheese on top. Enjoy!

Sauteed Shrimp

Shrimp is one of my favorite seafood, I like to cook in different way I could, this time I'd like to keep it simple and short, As I would say " simplest  flavor is the best" 
 My Mom taught me how to make this dish, when I was growing up, and the process is very simple. Since,  then I always cook my shrimp the way my Mom cooked it, I still remember the taste of it and its simply delicious. Its very simple process and very fast! I'll show you how east it is to make it.:)



Ingredients:
1/2 lb.Shrimp
 3 tablespoon vinegar
Salt and Pepper- to taste
Parsley- I used dried parsley
2 tablespoon Oil 
4 tablespoon water

 Directions:
1.)Combine all the ingredients, toss and saute on top of stove until shrimp are cooked. 
2.) Stir with spatula and serve with rice.

Tips:
Just remember when the shrimp turn letter "C" and the color change into orange, It means its COOK! 
Shrimp doesn't take long to cook I would between 3-6 minutes depend how much shrimp you're cooking.

Pansit Canton Recipe

( Lo Mein Style)

 

I remember growing up eating this dish in every special occasions, weddings, holidays, fiestas and most especially during birthdays. My Mom told me all the time that, "Pansit" represent long life and good health. Its traditional beliefs that was pass to my Mom's generation and so on and so fort, to make this long story short hahahah! up to this days I always have "pansit" on my birthday and even my kids birthday. I love Pansit I can eat it anytime of the day and yesterday it's calling my name, So that's what we have for our scrumptious dinner. As always my family loved it:)
I'll call it Pansit on the Plate! simply because its fast and you can have it in your plate less than 30 minutes. It's also perfect for potluck party, any special occasion you can think of and whenever cravings strike..
I'll show you how easy it is to make this Pansit Canton.. wink:)


 Notes: I use vegetables I have on hand, So feel free to use whatever you like. Cabbage, peppers, green onion and much more.

 Ingredients:
Chicken- cut into thin strips                  
 Dry noodles                                                        
Onion                                                                  
Garlic                                                       
Carrots- cut into thin strips                              
Bokchoy/ Cabbage                                             .
Soy sauce
Water
Sugar

 Tips: I cook the noodles according to the package but I took it out after 2 minutes in boiling water. It will continue cooking after along with the chicken and vegetables.
                               
 Directions:
1.) Heat oil in the skillet until hot, add the chicken and saute until golden brown.
2.) Add the vegetables, let it simmer for 5-10 minutes depending how you like your vegetables cook.
3.) Add the cooked noodles, mix it well. Stir in soy sauce, sugar, salt and pepper and little water. Let it simmer for 2 minutes.
4.) Stir well and taste. Serve it with rice, bread or just Pansit Canton on the plate.

The Cookie Day

 December 2008, I was first introduced to this " Cookie Making Day" As I would say, because my family gathered together shared their cookie recipes, and make cookies all day long. Sounds very appetizing isn't it? Yup!! since then I was totally hooked. I always look forward every December to make cookies with my family. The most FUN part for me are the rolling of the cookie dough and decorating of merry makers, Everyone love this part, especially the kids they just go crazy with the icing and sprinkles..
In my four years experience doing it, I would say that, Christmas won't be complete without making cookies. It's very inspiring, the sharing of the cookies to the people we valued most our family and friends. That's why I love doing it every year..:)
My hubby's all time favorite cookie : Peanut Butter Blossoms a.k.a Hershey Kisses

Ingredients:
31/2 cups flour
2 tsp. baking soda
1tsp. salt
2 eggs
2tbsp. milk 
2 tsp. vanilla 
1 cup brown sugar
1 cup granulated sugar
1 cup shortening
1 cup peanut butter
Hershey kiss chocolate- (put on top)

Directions:
1.) Cream together shortening and peanut butter. Add the granulated sugar and brown sugar and cream well.
2.) Slowly add the eggs, milk and vanilla. Beat well
3.) Blend in flour, baking soda and salt. Mix thoroughly
4.) Shape into small balls. Roll in sugar. Place on greased baking sheet.
5.) Bake at 375 for 8 minutes. Remove from the oven. Put the Hershey Kisses on top of each cookies press down little bit.
6.) Return to oven, bake for 2-5 minutes.

I love Lumpia, this is like a tradition to us, that every Christmas and New Year's. We always have Lumpia on our table.This is very popular dish in the Philippines, as being "popular" there's a tons of recipes on how to make this dish, In our family we keep it simple. What makes it differ among the rest is the secret recipe I called " LOVE" the process of making it is very time consuming, specially if this is your first try. Once you practice it many times, you can do it in no time. Once you taste it, you gonna keep coming back for more!!I'll make it so simple yet so tasty just like how my Mom make when I was a little kid. Perfect for family dinner, potluck party and special occasion. 
I'll show you how I make my version of Lumpia shanghai. 


Ingredients:
1 lb Ground pork
1 egg
2 medium size carrots
1 Onio
2 clove garlic
1/2 cup plain bread crumbs
Lumpia wrapper
Salt and Pepper  

Instructions:

Filling:
1) Put the carrots,onion and garlic in food processor, (if you have one) Or chopped (old tradition) into little pieces. Set aside;
2) In large bowl, mix all the ingredients ground pork, chopped veggies,eggs, bread crumbs, salt and pepper. Mix until combine together. Set aside;

Wrapping:
1) Thaw the Lumpia wrapper ( find it at frozen section in any asian store) before using it. 
Tip: Put it on microwave for 5 seconds. It's easy to remove the wrapper when its warm.
2) Put enough filling on the center of the wrapper. Fold the two end, and start rolling.
3) Put little water at the tip of the wrapper to seal the Lumpia. 

Cooking:
1) Fry in on deep fryer on low for about 10-12 minutes. Until center is done and the wrapper is cripsy
Tip: Don't over crowd the fryer if you want crispy Lumpia.
2) Serve it with chilli sweet and sour sauce.

Beef Pares

I love trying new things, trying new recipes, asking my family and friends their favorite meal. So, when my friend Cherry told me about this " Beef Pares" I was intrigue and excited. She told me how good it is and how her husband liked it. The next day I decided to make it, I was surprised how " Beef Pares" turned out.. It's so delicious!! and very easy to make it. I served over fried garlic rice with a twist, I add some of my favorite vegetables carrots and beans. This is really, like perfect dinner date for two, perfect also for family potluck party. I love this recipe! and I can't wait to make it again..:)

Ingredients:
1 lb beef-( cut into chucks )
1/4 cup soy sauce
1 tsp ground black pepper
1/4 cup sugar
2 tbsp ginger, minced- ( I didn't use this)
2 cloves garlic crushed
1 medium-sized onion, minced
4 cups water
1 piece beef cube
2 tbsp cooking oil
3 tbsp scallions or green onions, finely chopped- ( garnished)

Cooking Procedure
1.Pour the water and beef in a pot and bring to a boil until the meat is tender.
2. Remove the tender meat from the pot and let it cool. Set the remaining stock aside.
3. Put oil in a pan, saute the onion, garlic and ginger. Add the beef and saute for couple minutes.
4. Add the soy sauce, stock and beef cube. Stir bring to a boil. Add the sugar.
5. Salt and Pepper to taste. Simmer until the sauce is thicken.
6. Garnish with scallions on top and serve with Garlic Fried Rice.

Have you tried something different lately? I suggest try this Squash Maja Recipe courtesy from my friend Sandy. I personally haven't tried this one yet but it sounds so tasty. Clever idea to put healthy ingredient in very familiar delightful snack. I'll post picture and keep you updated on how this recipe work out.

Ingredients:
2 cups boiled squash, mashed
2 cups corn starch
2 cups coconut milk
1 big can evaporated milk
3 cups coconut cream
2 tablespoons kalamansi
2 cups sugar
1 teaspoon margarine

Procedure:
In a saucepan, combine all ingredients except margarine.
Mix well and allow to boil.
Stir lightly to prevent scorching.
Add margarine when mixture becomes thick and transparent.
Pour the mixture into desired mold.
Allow to cool. Refrigerate and serve cold.

Chicken Stir Fry

 My inspiration behind the making of Chicken Stir Fry is my craving for chinese take out dinner. They're very easy, fast and delicious! I just add all my favorite vegetables and make the sauce that fits on my family's taste buds. I was surprised how yummy it is, I would say it's pretty close to chinese take out I've been craving for two days..hahaha! My family loved it, perfect pair for steamy hot white rice.. Whoala! dinner in no time!!.
 I'll show you how easy to make chicken stir fry:)
 

Ingredients:
Chicken- cut into thin stips
Cabbage 
Carrots
Onion
Cooking oil
Sauce:
3 tablespoon cornstarch,
soy sauce, sugar, orange juice and water.
Tips: Taste the sauce as you go depend on how you like it, I like mine little sweet so I add little sugar.

Directions:
1)   Heat oil in skillet until hot, add the chicken and saute until golden brown.
2.) Add the vegetables, let it simmer for 5-10 minutes depending how you like your vegetables cook.
3.) Stir in sauce mixture until its thicken. Let it set for couple minutes. 
4.) Serve it with rice.

12 Days of Christmas

12 Days of Christmas  

( thoughtful inexpensive homemade card for Christmas)


When I was a kid, I always hear this song; 12 Days of Christmas playing in the radio starting on the month of September, since then it become one my favorite Christmas song. So this homemade card was inspired by the christmas song that I love when I was a little kid, This very thoughtful card is for my husband. I guess I have too much time on my hand, and too much time to broaden my imagination hahahha. It's just ME!! I just love doing something that makes my loveones's happy. It's very inexpensive yet so thoughtful gift, you could ever give to someone during this holiday season. I might not have the most expensive gift but I have the time to make them a homemade card... wink:).




Stuff you need:
Color paper
Scissor
Pen
Marker




1) Fold the paper into half.
2) After folding in half, cut it 1/2 then fold it one more time. 
 3) This time all the work is pretty much DONE.
 4) Write big numbers on the left side of the card.

On my card, It goes this way!just like the Christmas song the only different is I change the name to Wifey.

1st Day of Christmas my Wifey gave to me
2nd Day of Christmas my Wifey gave to me
3rd Day of Christmas my Wifey gave to me
and so on and so fort until the 12th day.

I like making this kind of stuff, simple gesture remind him, how lucky and blessed I am to be his wife. On this Christmas, I couldn't ask for more.. Just being with my family is ENOUGH. Happy holidays everyone!


Boiled Pork

(Boiled Pork with vegetables)


 Have you ever felt being lazy?, Don't feel like getting up on the bed, Don't wanna do anything specially during cold season, But still want that perfect meal! I got an idea for you Nilagang Baboy. This is very fulfilling dish, perfect companion during those lazy moments. Personally, I love this dish! and so my kids. There's a lot of version making boiled pork but I'd like to keep mine as simple as it is; I'll show you, How I make mine as easy as 123...:)

Ingredients:
Pork- (cut into big chunks)
Bokchoy
Green onion
Ginger
Water
Pepper
Salt 

Directions:
1.) Put water, pork,ginger in large pot and let boil for 45 minutes until meat is tender.
2.) Add bokchoy and green onion. Salt and Pepper to taste. Let it simmer for 5 minutes.
3.) Serve it while it hot!

I love Filipino bread, and Pan de Coco is one of them; It's very popular in the Philippines and as Filipino's it's one bread that you crave sometimes. Leaving the country doesn't mean that you left all those good stuff that you used to eat. So, in my personal experience, I become so resourceful and tried many recipes. Eventually, I finally got it right. This is what we call... when craving strike!!




 Ingredients: ( Dough)
4-5 cups of flour
1 pack yeast
1/2 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cup milk
  


  Directions:
1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.


Filling
Sherred coconut
Brown sugar
For best result- mix the coconut and sugar overnight.

The next thing you need to do are;
1.) Slice the dough into small ball. Then using the rolling pin roll the dough as thin as you can.
2.) Put the filling on the center and sealed the dough.
3.) Put the dough into greased baking dish and let it rise for 1 more hour. Just like on the picture.
4.) Brush egg wash on the top before baking. 325 degrees 10-12 minutes; until they're golden brown.


 Pan de Coco fresh from the oven. You can't help yourself but to grab this munchies even when it HOT!, pretty sure it's more delicious with hot chocolate in the morning watching your favorite show. This is very fulfilling, my friends liked it and so do I.The most FUN part is when you're having fun while doing it. It's good when you just eat, talk, laugh and eat some more!! Cassava Cake

Making cassava cake for the first time? Worry no more! I got the simplest recipe for you. I'm craving for this delicious Filipino delicacy from time to time, So, I tried many recipes but this one really fit my taste-bud. I minimize the ingredients down to 5 and still have the tasty quality of traditional cassava cake,  just like HOME! 


5 Ingredients ONLY!

1 pack frozen grated cassava (thawed)
1/2 cup sugar
1 can coconut milk
1 can condensed milk
2 eggs 

That's it!!! and your half way enjoying this scrumptious dessert.


 Directions:
 1)Just mix all five ingredients in large bowl.
2.) Pour the mixtures into greased baking dish. I used 13x9 inches.
3) Bake it for 1 hour at 350 degrees.
4) Broil it for 1-2 minutes, depending how brown you want it to be. :)


This cassava cake is a HIT!. This is a perfect potluck party dish, very easy to make and I'll promise you; It's perfect every time. I love making this kind of dessert, Its very simple and scrumptious, I can't get enough of this! 
It makes me happy knowing that, I can put smile on someone faces while they're eating it; that's smile remind them of PINAS..just like what I felt. Cheerrrs!

Hey! do you remember the last time you eat ensaymada?  I can't..! this is my ultimate favorite when I was growing up.So I decided to make homemade ensaymada, At first I was kinda hesitant making it, because it seems like so hard that I might not get it right.  I was RIGHT! the first time I made ensaymada  it turn out disaster.. BIG TIME!. I tried it 2 more times still not right.. So I decided to use the recipe in making dinner rolls and It work out GREAT! 



Dough:
Ingredients:4-5 cups of flour
2 1/4 teaspoon yeast

1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cup milk

 Directions:

1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.



5) Cut the dough into long strips, roll it using rolling pin and roll it like cigar. Form into like ensaymada just like the picture on the top
 6) Let it stand for 1 hour or so...at room temperature and then bake at 350 degrees for 10-15 minutes until golden brown. 
7) Let it cool before for 30 minutes and then spread some butter on top and sprinkle it with white sugar.
8) Serve it anytime of the day!  


This so yummy!! just like how I remember eating it when I was a kid. I was just so excited how it turn out this time. So I put butter right after I pulled it in the oven hahaha! I can't just wait.. so my kids! You bet they just like diving into it, specially with sugar on top.. ummhhh..as my kids screams YUMMO! 
 

  

Dinner Rolls

 This is dinner rolls my way! Yeah, that's right! instead of making the traditional round dinner rolls. I make something that remind me of my childhood, I mimic the shape and looks of my favorite rolls when I was kid. YUMMY! So, I decided to share this recipe.
 I'll show how to make this dinner rolls in very simple way...


 Ingredients:

4-5 cups of flour

1 pack yeast
1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cups milk





  Directions:
1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.
5) Bake it at 325 degrees; 10-15 minutes until its golden brown.


Wheeeh! I know its long process, we're almost there!
After the dough rise, you're ready to roll, the round one is the simplest one so far ( I guess!). But you know me I'd prefer trying something different. Whatever works our for you.




Overall experience making this rolls.. FUN! FUN! especially I have two little helpers with me in the kitchen. It makes my heart jump with joy every time I saw them smilling and I know that they're so HAPPY!. 
This is my first time making it, OMG! this are good specially pair with hot chocolate in the morning. My family new favorite yay!!

Dinosaur Cake

My son just turned 2 today, so I was really excited about making him a cake. My original planned was to make him like a turkey cupcake since his birthday is right on Thanksgiving but few days before hes birthday I hear him screaming  DINE... BIG... ROAARRR!!! He love watching dinosaur, so AHA! I'll make him a dinosaur cake I'm sure hes gonna love.. This is my first time making this cake so..I'll show you how it goes:)


  After baking the cake, refrigerate for 30 minutes before carving the dinosaur. 



 Put thin layer of your favorite icing to seal the crumbs on the cake then put it on the refrigerator for 30-mins or so..
