Easy Thumbprint Cookies



Hello Everyone!

I know it's been a very long time since the last time I posted. A lot of great things happened last year- of course I miss you all. I'm happy and excited to be back in blogging world and to share my very first Thumbprint Cookie Recipe. Let me tell you something about this recipe- it's super easy to make and it's scrumptious!

Feel free to use your own homemade or any of your favorite jam. On this recipe, I made my own super easy homemade mixed berries jam. It just happened that we have extra frozen berries on hand. That's how I come up with my own recipe.

Mixed Berries Jam Recipe

2 cups mixed berries frozen (thawed)
1 cup granulated sugar
1/2 stick butter

Directions:
1.) Mixed all three ingredients in medium size pan over medium heat. Make sure to stir the mixture and let it reduced until it reach to thick consistency.
2.) Transfer it onto clean container and let it cool.





Easy Thumbprint Cookie Recipe

Ingredients:

3 Cups of all purpose flour
1 1/2 Teaspoon baking powder
1 Teaspoon Salt
3 Sticks unsalted butter, softened
1 1/2 Cup granulated sugar
2 large eggs
1 tablespoon vanilla
mixed berries jam ( use your favorite jelly or jam for filling)

Directions:

Preheat the oven to 375

1.) On large bowl combine the flour, baking powder, and salt. Sift the mixture and set aside.
2.) Placed the softened butter, sugar in the bowl of your electric mixer. Cream the butter and sugar together on high speed until fluffy. Add the eggs and vanilla until combined.
3.) Slowly add the dry ingredients until everything mix well.
4.) Use a spoon to scoop small batch of the cookie dough, form into little ball. Place onto baking pan and press the middle of the cookie dough until you get the perfect shape for you jam filling.
( Note: the cookie dough will be a little sticky, use extra flour to help from sticking- just like you make sugar cookie)
5.) As you can see on the photo above- Fill the cookie dough with your favorite jam or jelly.
6.) Bake the Thumbprint Cookie at 375 for 10 minutes.
7.) Let the cookie cool completely before icing. Enjoy!


I personally LOVE this recipe- not only that my family loved it- it's super easy to make! The perfect combination of soft cookie and sweetness from mixed berries jam is amazingly good. This cookie is great for dessert and my family LOVE it!
