Sweet Greetings to all of you!
Its officially summer at Campbell's abode, Wohoo! We are totally enjoying the hot summer this year by cooling it down with this awesome Strawberry Granita Freeze. Yum! why don't you grab something to drink and let's chat. I'm just excited to share my little story on how I came up with this delicious drink idea. I'm a member of Crowdtap for over 2 months now and loving it. What you do basically on the site is just simply participate on quick hits, challenges and mission. Then, you will get invites from crowdtap to try the product for FREE! yeah you heard it right totally free!  Make sure to grab your spot quick and do short survey. Then, they'll notify you if your qualified for the product. Easy huh? I think so too. Last week, I got accepted to try this Sweet'Low calorie sweeter. The package arrived around 2-3 weeks but I think its quicker than that. The package was filled with drink recipes, sweet'nlow zero calorie sweetener sample and coupons to share with friends, 1 package of 50 packets of sweet'n low wrapped very carefully with pink wrapping paper. See my snapshot below! Then all you have to do is submit some photos on your social media sites and report that you will find on crowdtap website. You also get a chance to win gift cards which is prrettty awesome!!


Now that, you know where I get this delicious drink idea. Lets talk about the main ingredients on the drink, The Strawberry! I always wanted to know more about strawberry even before and never really get a chance to dig deeper, but now that I have a blog, I'm kinda like a new person.. wohoo! etchuz! I do some research, read articles and share the knowledge that I learned to all of you. Let's start!

Isn't it fun to know some fact about your favorite fruit? Strawberry is probably my 8-10 favorite fruits but it surely a hit every summer. It's not only they make a really good pie filling but they are totally inexpensive on summer time! Grab some strawberry when your heading to the market this week and treat the whole town with this super easy and delicious Strawberry Granita Freeze..

Strawberry Granita Freeze Recipe 
* Serving- 4 Glass      * 45 Calorie

Ingredients:
16 oz  unsweetened frozen strawberries
2 cups  cold water
1/4 cup lime juice
16 packets of Sweet'NLow zero calorie sweetener
4 fresh strawberries- garnish

Place frozen strawberries, water, lime and Sweet'NLow
6-cup blender container in that
  in the blender container in that order. Cover it tightly ( make sure that the lid is snap and close). Blend 20-30 seconds or until slushy.

Ingredients
  • 16 packets Sweet’N Low® zero calorie sweetener
  • 1/4 cup lime juice
  • 2 cups cold water
  • 1 package (16 oz) frozen unsweetened strawberries
  • 4 fresh strawberries

Place frozen strawberries, water, lime juice, and Sweet’N Low® in 6-cup blender container in that order. Cover tightly (if blender lid doesn’t snap on securely, hold lid down with hand). Blend 20 to 30 seconds or until slushy, stopping blender to scrape down sides if necessary. Pour into 4 tall glasses. Garnish each glass with fresh strawberry.

Special Double Celebration

Reyna's Birthday Celebration


Sweet Day to all you :)
It's been a pretty laid back week for me. We spent most of our time outside enjoying the warm weather. As expected the kids is loving every minute of it which make this summer so much fun. As, I promise from previous post that I'll be posting my daughter's 5th birthday celebration and Father's Day, here it is! I know its kinda late, BUT its not to late to get some birthday ideas and recipes that you might want to try on your next birthday celebration.
Anyways, We did celebrate Reyna's birthday with few of my friends. It was so much! I made them a Strawberry jello ( refer to the pictures above ) macaroni salad espesyal, chocolate crinkles, boiled pork and my friends bring some delicious dish as well to share.
After an awesome get together with my friends. We (Hubby, Me and Garyn) also treat Reyna to her favorite restaurant Red Robin for delicious burgers, pizza and fries dinner. It was scrumptious!!

After 3 days, we celebrated our 6th wedding anniversary. Then, next day we celebrated Reyna's birthday party and Father's Day with my family. It was a blast and fun day being with my family.

FOOD:  The birthday celebrant requested the dish on her birthday. Starting off with  Lumpia Shanghai, Sauteed green beans, Pancit bihonBeef Caldereta. My mother in-law made us some delicious deviled eggs, cheesy baked potato and hotdogs. My sister in-law brought some scrumptious wings for everyone to enjoy.
 Yum! Can't get enough of this food.:)


CAKE
As per request by birthday celebrant, chocolate cake with strawberry icing and sprinkles. The process of icing the cake is super easy and I love it. We decided at the last minute to get another cake from the store in addition to the one that I made and it works just perfect!
We paired the cake with vanilla and strawberry ice cream-the best way to end our delicious meal.


Father's Day

My kids made their Daddy a card ( I did order the card online for free- wink!) which makes it more awesome and bought his favorite chocolate bars. Then, The Sommer's ( hubby's sister and brother in-law) gave this delicious picnic basket filled with sweet goodies, cheeses and spreads, peanuts, popcorn, candies, chocolates, sausage and a bottle of red wine. Everything is just delicious! a perfect Father's Day gift and my hubby is loving it.

I would suggest try to bake your kiddies his birthday cake or cupcakes, I'll promise you! It it so much FUN to make them. Hello Everyone!
It's been an extremely hectic week for me but a fun one. Talking about fun, I'm taking you with me starting off with my 6th year anniversary and hopefully you get some sweet romantic ideas that you might want to do on your anniversary or date night. Here we go!

Special Breakfast/ Breakfast in Bed-  I always love to prepare my hubby with his favorite breakfast ( hash brown, eggs, bacon, biscuits and gravy) but Since, we woke late hubby fix light breakfast for us and ate snack/lunch and send the kiddies to their Grandma's and head to dinner.. yahoo!

Anniversary Gift- I always think ahead of time when it comes to gift and I always make sure it is personal  where I can express the creative side of me ( heheh). I made him a card, cute love bottle and little sweet thoughts ( his favorite chocolate )
It is very simple yet my hubby LOVED them!

The most awaited and exciting part. The Dinner Date for TWO:) As you all know that I'm such a foodie lover and I love to eat...( hahaha )

Perfect Place-  Picking up the perfect place to dine in is so easy! We always go to the same place for over 5 years now. This year is no different! We are heading to Outback Steakhouse. Yum! this is also one of my favorite restaurant to celebrate my birthdays. See the post HERE and HERE. 


Food, Drink and Dessert-  We start it off with my summer fist/tropical sangria ,seriously I totally forgot the name of my drink but it was so good and refreshing. We have garden salad and free bread
The entree's is pretty easy pick but we did take our time to order in that way itt gives us time to eat our appetizer and the bread compliment from Outback.



Tsadaaa! You guess is right my friend " Steak Galore"  Isn't it looks appetizing?  I did ordered a Ribeye Steak, steam mixed summer veggies and Baked Sweet Potato with brown sugar and cinnamon while on the other hand hubby got  fries and outback special.:) I wish, I could put into words how delicious it is.. hehehe:)
Lastly, The Dessert- After eating the steak, I wasn't sure if I'll go for the dessert but this pecan brownie with vanilla ice cream, whip cream and hot chocolate fudge is just calling my name.. ( hahaha) So, we hit GO for it and It was DELICIOUS! that's how we end our perfect anniversary dinner... and the fun was continued! That's how we celebrated our anniversary:) wink!

P.S-  To my Sweetie-Thank you so much for everything for being so kind, loving and generous as always. I love you so much!

Hello Everyone!
Hungry for some snack or merienda today? Perfect!, I got a scrumptious recipe for you to try at home. As you all know me, I love sweets, and who doesn't? Especially if it is made from scratch just like how I remembered it back home. Do you remember my post from last year of Butsi Recipe?  I can't get enough of this classic merienda that I dearly love. It's not only its my favorite merienda growing up, It also remind me of my grandma, she made butsi all the time, that's were I learned how to make them. Thank you, Grandma!:) Anyways, the recipe from previous post is no different this time. The only thing that I change is the size of the Butsi, that's all! I love making little butsi but I found it easier to fry when they are little larger and less time spent in the kitchen as well. 
We call it Butsi-( Butsi with sweet coconut filling inside and coated with granulated sugar) back home especially in Mindanao area where this sweet treat is very popular. There is also Butchi with sweet monggo filling rolled into a sesame seeds which you can get at( Chowking) famous fast food chain in the Philippines. I love those kind of Butchi too. They are different in terms of ingredients but both are equally delicious.
Anyways, which one do you prefer to eat? I would go with Butsi that I'm familiar with and I know exactly how to make them. Are you hungry already just by talking about it? Me too, Come on join me in my kitchen as I made this delicious and super easy treat that is so perfect for everyone.:)




 
Ingredients:
2 cups All purpose flour
1/2 cup lukewarm water
1/4 cup sugar
1 egg
1/4 cup butter- cold and chopped into cube
1 pack yeast or (2 1/4 teaspoon yeast)
1 tsp. salt
granulated sugar- for coating
oil for frying- I used canola oil
Coconut Filling-
- combine 2 1/2 cups of shredded coconut/ or coconut flakes and 1/2 cup brown sugar let it set overnight. Note: Used fresh coconut if you have one if the above method is pretty close.:)

Procedure:
* NOTE: Flip the Butsi ONE to avoid greasy butsi. Stay close to the fryer, because it cook FAST! 
1.) In large bowl combine the flour, salt, sugar, yeast and chopped butter. Mix until well combined.
2.) Add the lukewarm water and egg and mix it well.
3.) Knead the dough into clean surface until it become elastic. Let the dough rise 1-2 hours.
4.) Divide the dough into 8 parts. Form the dough into balls, flatten it out using rolling pin. Add as much coconut filling as you want as long as it close tightly for frying. Repeat the process until everything is done.
5.) Let it rise dor like 25-30 minutes. It also gives you time to heat up your oil or frying..:)
6.) Fry the butsi in medium low for about 2-3 minutes on each side.  Make sure that its cook all the way before turning it over.  Drop this cuties into granulated sugar for coating. YUM!
7.) DONE! Serve it hot or cold along with your favorite drink and let your friends come over.
