Chicken Quesadilla Recipe

Easy Chicken Quesadilla Recipe


Hello Everyone!

Wowza!! 2016-  Oh yes!! first food blog of the year and I'm super excited. Its been like a month since the last time I updated this blog (xencia na) Got super busy celebrating Christmas and New Year with my family and friends. Anyways- I'm glad to be back and I can't wait to share with you this Mexican inspired recipe. I'll promise you! This Chicken Quesadilla recipe, is super easy to make, delicious, and such a crowd pleaser.  I know for sure that this is going to be your family's next favorite meal. Yum! Are you excited? Lets start cooking!:)

Note: You can totally personalized this recipe according to your preference. You can add fresh diced tomatoes , lettuce, sour cream as your toppings. Enjoy!


Chicken Quesadilla Recipe Made Easy

Ingredients:
1 cup cooked chicken
2 cups shredded cheddar cheese (divided)
1 (14.5 oz) can of Diced Tomatoes and Green Chilies (drained)
1 package McCormick Southwest Chicken Quesadillas Seasoning Mix
8 flour tortillas (8- inch)

Directions: 
1.) Preheat oven to 400°F. In a large bowl. Mix 1 1/2 cup of cheese, drained diced tomatoes and green chilies, and a package of McCormick Southwest Chicken Quesadillas Seasoning Mix. Mix until well blended.
2.) Place 4 tortillas on large baking sheet. Spread the chicken mixture evenly on each tortillas. Top the remaining tortillas. Then, sprinkle with the remaining cheese.
3.) Bake 6-10 minutes or until the cheese is melted and the tortilla is lightly browned. Cut into wedges. Served with your favorite toppings! Enjoy:)

Tips:
 Chicken Quesadillas still an option even if you don't have an oven. Yes! you heard it right. It's called Skillet Quesadillas and I tried it so many times already, and its delicious! All you have to do is prepared the ingredients as directed, using all 2 cups of  shredded cheese in the chicken mixture. Add butter into a large pan. Add the quesadilla; cook 3-4 minutes per side or until lightly browned. Served with your favorite toppings! Enjoy



I prefer my Chicken Quesadilla with sour cream and mild taco sauce on top. I don't mind having taco rice on the side, and maybe some chopped lettuce. So good! How about you? Happy Holidays to all!
Its a time of year where giving is so much fun, being a secret Santa Claus and making memories of lifetime by spending Christmas with family. I enjoyed every moment of it from shopping, gift wrapping and the most FUN part when my kids woke up screaming " Mommy, Daddy!! Santa came!! Santa came!! My kids enjoyed unwrapping their gifts, exploring and talking about how much they loved it. It's the most precious moment as a parent.
After the kids opened their Christmas gift we proceed to our Traditional Christmas breakfast which is Pillsbury Cinnamon Rolls- I just simply love how easy it is to make and the house smells divine!
and who can resist a delicious cup of Celestial Tea "Candy Lane flavor" I can't! a perfect time to take a sip of Celestial Tea that I received with my "Frosty Voxbox" courtesy from Influenster


I made round cinnamon bun and I also make some twisted cinnamon bread. Both are equally delicious especially if paired with Celestial Tea- peppermint flavor! Yum- At first I don't think both will work but actually the minty flavor from the tea will compliment the sweetness of the cinnamon rolls.
I've tried different flavor of teas but haven't tried the Candy Cane flavor and I was surprised how good it taste. So fresh, minty and I just feel the holiday. Yumm-O!


If you love Candy Cane and love that peppermint flavored tea, then this is perfect for you. I love how cool and fresh that peppermint flavor and it taste great! I love it paired with cinnamon rolls and can drink this tea every day. I'm glad that I'm able to test this Celestial Seasoning Tea for free. Its really good. I hope you enjoy your Christmas celebrations as much as I do. Keep those sweet moments and always remember that being with family this holiday season is always amazing!!:)

After couple days of finding this delicious snacks- finally! its sitting on my kitchen table. Yum! They just looks so good. Just all good stuff! Yum---:)

Leche Flan Recipe

Leche Flan/ Caramel Custard Recipe


Sweet Morning everyone!
Excitement overload!!because we are going to do trick-or treating today. My kids are been waiting for this day- we are literally counting the hours right now hahaha!wohoo! I'm excited for my kids! Talking about excitement. How about a super easy Leche Flan recipe? oh yeah! I finally posted Leche Flan recipe after almost 3 years of blogging- As you may all know, This is one of my favorite dessert next to macaroni salad and mango float. I remembered all those sweet memories with my family back home, eating and sharing Leche Flan every weekend, So, this recipe is special to me-:) To be honest, I was kinda intimidate to make Leche Flan at first, but when my craving strike. I decided to make it right there and then, so spontaneous. It also a good recipe idea if you have a lot of eggs on your fridge,  although we only need the eggyolk on this recipe, you could used the egg whites to make Pasencia Cookie which is also, by the way sooo delicious! or maybe a ham and egg white sandwich in the morning? Yum!
This recipe really work for 4 individual serving and came out just perfect! I would recommend to double the quantity for larger crowd. I love to make extra for myself for personal consumption purposes..wink:)-- It's also really good toppings for  HALO-HALO as well. Do you agree? I'm like drooling right now.. hahaha! Notes: This recipe is good for 4 individual serving. Adjust the quantity for larger crowd. Make sure that you stir the custard mixture gently to avoid air pockets on the flan ( which I didn't do on this recipe..ooops! for future reference ) Enjoy!

Ingredients:
6 Egg yolk
1 can evaporated milk
1 can condensed milk
1 teaspoon vanilla

1/4- 1/2 cup granulated sugar- caramel sauce
4 ceramic bowls/ flan molder- used whatever you have in hand.:)



Directions:

1.) In large bowl combine the egg yolk, condensed milk, evaporated milk and vanilla. Mix well until everything combine. Set aside.
Note: Mix the mixture gently to avoid bubbles on your flan.
2.)  Time to make the caramel mixture. Simply put the granulated sugar in pan, turn heat into medium low. Let the sugar melt and caramelized to perfection. Turn off the heat and we are ready to assemble our delicious flan.
 3.) Line up the ceramic bowl,  add 1-2 teaspoon of caramel sauce depending on sweet you want it to be. Pour the custard mixture evenly.
Notes: I did steaming process and Baking process. Both came out just perfect! I would personally love the baking process because I can fit all four ceramic bowls at one time. 
 4.) If you do BAKE your Leche Flan- Preheat the oven into 350 and bake for one hour. Make sure that the Leche Flan is bake with water bath. The warm water should be halfway full with the ceramic bowls.
5.) If you do STEAM- I used rice cooker on this recipe and its perfect! I did steam mine for good 1 hour.
6.) Let it cool down completely. Served the Leche Flan upside down. ENJOY!

My family love Leche Flan! and I hope yours too. They are super easy to make and so delicious! A perfect sweet treat for company coming over or just simply a treat on an ordinary day. I hope you find this recipe so scrumptious and try to make it at home.

How was your week doing so far? Did you do something exciting? or maybe tried new recipe? My week  is doing pretty good and full of inspiration. I finally watched the movie "Divergent" and OEmGEE! I was totally into it. The characters in the movie are simply the best!  and guess what? I watched the movie 5 times within the period of 48 hours. Hahahha! I know its kinda annoying if you think about it buy hey! I enjoyed and loved every moment of it) wink. Aside from being obsessed with the movie Divergent, I'm also please and excited to try new product of Truvia, introducing the Truvia Brown Sugar Blend,, yippee! As you all remembered I hosted a TruFan Lemonade Stand in my neighborhood not too long ago and it was a blast! and now I get a chance to try a new Truvia Brown Sugar Blend- So grateful! @Truvia- Thank you so much.:)
I'm static to do a review on Truvia Brown Sugar, As you all know Me! I'm into trying new recipes and this is right on my alley. Couldn't ask for more! There's 7 great recipe cards included on the package and when I saw the Apple Crisp recipe, I was totally sold! It's one of my family's favorite dessert and its super easy to make. I made Apple Crisp before but I didn't add oatmeal to the toppings and now its my chance to to re-do the recipe and used Truvia Brown sugar blend. I'll promise you, this recipe is simply the best! great for company coming over, potluck party and much more.

Are you excited to get this dessert take it to the next level? Come On join me in my kitchen, As, I make this super easy and delicious dessert that everyone will love. Also to experience the New Brown Sugar Blend  that has all the taste and texture of Brown Sugar, but only a quarter of the calories. Isn't is amazing?  Below is the recipe.
* Notes: Feel free to used and substitute ingredients according to your preference. Enjoy!


Yield: 6 servings
Ingredients:
4 cups apples, sliced
2 Tbsp. lemon juice
1 cup oatmeal
1/2 cup all-purpose four
1/4 cup butter, unsalted
1/2 tsp. salt
1 tsp. ground cinnamon
1/4 cup Truvia Brown Sugar Blend
Nonstick Cooking spray



Directions:
1.) Preheat oven to 375 degree Fahrenheit.
2.)  Spray bottom and sides of an 8-inch square pan with nonstick cooking spray.
3.) In a medium mixing bowl, toss apple slices in lemon juice to coat, then evenly layer them in the pan
4.) In a medium bowl, mix all the remaining ingredients and sprinkle over apples.
5.) Bake for 30 minutes or until topping is golden-brown and apples are tender when pierced with fork.


 This is recipe is so good and I don't even feel the difference between a regular sugar and Truvia. Awesome! My family love the Apple Crisp, especially if you add vanilla ice cream and let it melt over the warm apple crisp... Delish! Can't even put into words how good it is. ( hahaha) A perfect way to end your delicious meal or a sweet breakfast in the morning. I actually tried having it for breakfast the other day and it was yummy. I add vanilla yogurt on top. Yum!After trying the Truvia Brown Sugar, I simply loved the product! It taste and feels like brown sugar but only a quarter of the calories. That's amazing! #YAYBROWN indeed.

Hello Everyone! How was your week doing so far? Last week, my daughter started kindergarten and I couldn't be more happier. It's been a hectic schedule for me and still getting used to my new routine. I'm so happy to share that my kindergarten made her first week. She definitely love school! Anyways, talking about school and what not? I have a really awesome recipe that you could make for school lunches and even perfect for any special occasions. Pineapple Hopia is a perfect after school merienda that your kids will love and enjoy.  First, lets talk about what is HOPIA?- its basically a pastry dough filled with sweet or savory filling. It's flaky, sweet and just simply delicious. It's very popular in the Philippines for snacks and favored gifts to friends and relatives. This is also one of my favorite snack!  So, the other day I made a Pineapple Hopia for my family and it was a SUCCESS! Hopia is usually filled with Mungbean paste or Ube ( purple yam) Since, I don't have those ingredients on hand. I used crushed pineapple instead. It was delicious! The flavored just blend in with flaky hopia and the sweetness of the pineapple. Yum!- That's the story behind this Pineapple Hopia (wink)
The recipe was inspired by my desire to munch on some hopia. I terribly missed it! and now I'm so glad I'm able to just make my own anytime I want. I found the dough recipe online (totally forgot the site) and its super easy to make. I suggest to give the Pineapple Hopia a try but the Classic Hopia flavor is also really good. Are you excited to make some Hopia? C'mon join me in my kitchen and lets bake some! This is going to be a fun surprise for your kiddies when they get home from school... wink!


Ingredients:
- Notes: Feel free to used available hopia filling you have like Monggo Beans, Ube or Pork.
 
Hopia Filling-
(1) 20 0z can Pineapple crush
1/2 cup sugar

- Notes: Put the dough mix in two separate bowl.
Dough #1 
2 cups of flour
1/2 cup oil
1/2 cup butter
Pinch of salt

Dough #2
1 1/2 cup flour
1/4 cup shortening
1/2 cup butter
1/2 cup sugar

- Eggwash - for finishing touch. 

Directions:

1.) Cook the filling by combing the pineapple and sugar into a pan. Stir and mix until the pineapple feel sticky and the juice dissolve. Set aside and let it cool.
2.) Now, Its time to make the dough by mixing all the ingredients separately for dough#1 and dough#. I suggest to used different color bowls when mixing the dough.
3.) After you mix the dough separately. Take dough#1 into light floured surface and roll it flat about 1/2 inch thick. Put dough#2 on the top and spread it nicely around dough#1.
4.) Carefully roll the dough, gather the edges and set it aside. Repeat the process until all the dough is roll up.
5.) Preheat the oven onto 400 Fahrenheit.
6.) Sliced the roll dough into small pieces, see the photo below for reference. Roll the sliced dough into lightly floured surface, put the filling on the middle, collect on the side and form it into little ball and flatten it before putting into the pan.
7.) Repeat the process until all 18-24 hopia is done. The size varies depending on how big you want it to be.
8.)Brush the Hopia with eggwash and bake for 15-20 minutes or until its golden brown on top.
9.) Enjoy your fresh bake hopia. Yum!



Pretty easy huh? I told you and its delicious!. I think this is the best time to bond with your friends and simply make some hopia while waiting for your kids to get home. I enjoyed the whole process of making Hopia, I think its so much fun! especially when you smell it all over your house.

Hello Everyone!
Hungry for some snack or merienda today? Perfect!, I got a scrumptious recipe for you to try at home. As you all know me, I love sweets, and who doesn't? Especially if it is made from scratch just like how I remembered it back home. Do you remember my post from last year of Butsi Recipe?  I can't get enough of this classic merienda that I dearly love. It's not only its my favorite merienda growing up, It also remind me of my grandma, she made butsi all the time, that's were I learned how to make them. Thank you, Grandma!:) Anyways, the recipe from previous post is no different this time. The only thing that I change is the size of the Butsi, that's all! I love making little butsi but I found it easier to fry when they are little larger and less time spent in the kitchen as well. 
We call it Butsi-( Butsi with sweet coconut filling inside and coated with granulated sugar) back home especially in Mindanao area where this sweet treat is very popular. There is also Butchi with sweet monggo filling rolled into a sesame seeds which you can get at( Chowking) famous fast food chain in the Philippines. I love those kind of Butchi too. They are different in terms of ingredients but both are equally delicious.
Anyways, which one do you prefer to eat? I would go with Butsi that I'm familiar with and I know exactly how to make them. Are you hungry already just by talking about it? Me too, Come on join me in my kitchen as I made this delicious and super easy treat that is so perfect for everyone.:)




 
Ingredients:
2 cups All purpose flour
1/2 cup lukewarm water
1/4 cup sugar
1 egg
1/4 cup butter- cold and chopped into cube
1 pack yeast or (2 1/4 teaspoon yeast)
1 tsp. salt
granulated sugar- for coating
oil for frying- I used canola oil
Coconut Filling-
- combine 2 1/2 cups of shredded coconut/ or coconut flakes and 1/2 cup brown sugar let it set overnight. Note: Used fresh coconut if you have one if the above method is pretty close.:)

Procedure:
* NOTE: Flip the Butsi ONE to avoid greasy butsi. Stay close to the fryer, because it cook FAST! 
1.) In large bowl combine the flour, salt, sugar, yeast and chopped butter. Mix until well combined.
2.) Add the lukewarm water and egg and mix it well.
3.) Knead the dough into clean surface until it become elastic. Let the dough rise 1-2 hours.
4.) Divide the dough into 8 parts. Form the dough into balls, flatten it out using rolling pin. Add as much coconut filling as you want as long as it close tightly for frying. Repeat the process until everything is done.
5.) Let it rise dor like 25-30 minutes. It also gives you time to heat up your oil or frying..:)
6.) Fry the butsi in medium low for about 2-3 minutes on each side.  Make sure that its cook all the way before turning it over.  Drop this cuties into granulated sugar for coating. YUM!
7.) DONE! Serve it hot or cold along with your favorite drink and let your friends come over. 
In large bowl combine flour, sugar, yeast, salt and butter. Mix well until everything incorporated.

Happy Mother's Day to my Mom and to all Mommies out there!:)
I would consider this Sunday as extra special one. It's time to give thanks, love and appreciation to our Mom's whose been such a great example. I'm the eldest among three siblings and me and my Mom is so close to each other. She taught me a lot of things in life, the person I can count on, lean on and asked advice for. She's such a great Mom! So, Today, in honor of Mother's Day. I made something that remind of my Mom and those unforgettable memories of my childhood. This Mini loaf Bread is made with sweet bun with sweet ube coconut filling. Yum! Which my family's favorite! Are you big fan of UBE and sweet coconut filling? This recipe is so perfect for any occasion like birthday's, potluck party and giveaways for parties. I'm sure any Mom's would appreciate the love and effort you put into to express how much you love and care for them. Come on and join me in my kitchen and lets start baking some sweet good for all the sweet Mommies out there.

Notes:
- Choice your favorite filling for the bread. It could be ham and cheese, monggo, ube or sweet coconut filling.
- Personalized the bread the way you want it to be.

Ingredients:

3 1/2 cups bread flour                        
2/3 cup- Lukewarm water                 
2/3 cup- Lukewarm milk                   
1/4 cup sugar                                  
1/4 cup butter melted                          
1 pack yeast  ( 2 1/2 tablespoon)                                         
1 1/2 tsp. salt
  
Filling:
Ube Yam- store bought
Shredded coconut and brown sugar- combine this two ingredients.

Directions:

1.) Mix the flour, sugar, salt and yeast on the big bowl ans set aside.
2.) Pour the lukewarm water and lukewarm milk into the dry ingredients and mix it well.
3.) Pour the melted butter into the mixture, mix well. Knead the dough until the dough is smooth and elastic bout 15 minutes or so.
4.) Let it rise for 1-2 hours
5.) Divide the dough into 4 pieces. Flatten each divided dugh, using the rolling pin, roll it until its big enough to fill the sweet ube coconut filling.
6.) First put the ube paste on the flatten dough, spread it around. Add the coconut filling. Fold both ends, and roll make sure it will fit on the mini loaf pan that you prepared.
7.) Let the filled dough rise for like 30 minutes. Meantime, preheat the oven onto 350 degrees
8.) Brush with eggwash and bake all four mini loaf for about 15-18 minutes until its golden brown on top.

 Let's make this day extra special and give your Mom's a lot of hug and kisses. We are going to my in-laws house today in celebration of Mother's Day. It's going to be FUN and I'm excited!! Sweet Day Everyone!
 The best thing that I love waking up in the morning is having Puto Maya and Sikwate. Yum! Do you missed those time? When your whole family just sit on the market stalls eating Puto Maya and Sikwate early in the morning or even late afternoon?  Well, I do! missed it a lot. There's nothing more exciting than smelling the aroma from Puto Maya and Sikwate, having fun eating with family and friends. Today, I'm going to make that traditional Filipino snack that you probably missed with my super easy simple recipe..:) Before, I proceed with the recipe I give you little introduction on what is Puto Maya and Sikwate means? Shall we:)

Puto Maya- a sweet sticky rice cooked with coconut milk. YUM! 
Sikwate/ Tableya- is a traditional Filipino hot chocolate beverage made of roasted cocoa beans that are grinned and form into “tablets.” Once tableya or tablets mix with water and sugar. It turn into this deliciously good hot chocolate most of the locals called it Sikwate or Tableya.
-Puto Maya + Sikwate = DELICIOUS!

Now, that you know little bit about the delicious food that I'm going to share with you. Are you excited to make it at home? Yes?  This is not the first time I made Puto Maya, This is like more my" to go" merienda so I make this recipe all the time. The recipe is very similar on making Suman Malagkit but without the banana leaves, and kinda same with Biko Espesyal Recipe but without caramel sauce. The Puto Maya is often served with Sikwate and some folks especially my friends told me that they are equally delicious paired with Mango as well. YUM! Although I haven't tried it with mango, I'm curios what it taste like.:)
C'mon you guys! join me in my kitchen and lets enjoy and devour Puto Maya! Below are the recipe ob both Puto Maya and Sikwate..check them out.:)

NOTES:)
- Used fresh coconut milk if you have it on hand. Adjust the recipe for larger crowd and taste according to your preference.

PUTO MAYA Recipe:

Ingredients:
2 cups of sticky rice
1 can of 13.5 oz coconut milk
Ginger- sliced
salt
sugar- depend on how sweet you want it to be

Instructions:
1.) Put the 2 cups of sticky rice in a pan or you can simply used rice cooker in this process. Rinse the sticky rice with water. Add the whole can of coconut milk, little salt, sugar and ginger.
2.) Let it cooked on medium high heat. That's it!
3.) Once the coconut milk is gone turn it low.

Sikwate Recipe:

Ingredients: 
Tableya
Water

 The ratio on a perfect Sikwate is (1 tableya into 1 cup of water). Just simple put the tableya and water in large pan and let it boil to perfection. Add brown sugar and serve it on your favorite mug. Enjoy!


A perfect combination snack for you and the whole group to enjoy. One word to describe about this recipe is DELICIOUS! No wonder why we keep coming back every Sunday  just to buy Puto Maya and have a stock of tableya on hand all the time. This is the closer I can get to bring those childhood memories.  Hi Everyone! I'm excited!! Weekend here we COME! wohoo! Nothing special going on this weekend but I'm hoping for a nice weather for my kids trip to a playground nearby. What about you? Do you have any plan this weekends? Any recipe ideas you want to try? What about this Honey Mini Corn Dog Muffins? Sounds good right? So, This week, I'm sharing my super easy mini corn dog muffins recipe. YUM! I personally love this recipe. It's a combination of my two favorite ingredients Corn Bread + Hotdogs= Mini Corn Dog Muffins. My family is a big fan of corn dogs and who doesn't? hehehee.. They are just so good.. those perfect little bites of goodness. ( delicious )
I'm pretty sure your kids will going to love this honey mini corn dog muffins. My kids LOVE them and always ask when we are going to have corn dog muffin again ( hahah)...and if your looking for a super easy appetizer for any parties or get together, this recipe is perfect for you. Before I forgot, the corn muffin mix is store bought, So, you don't have to worry about mixing and measuring for corn muffin mix. It is perfect every time, promise!. Just simple follow the direction on the back of the package, add HONEY and.. Viola! DONE! Just bake it 10-12 minutes at 350 degrees. The excitement of my kiddies face watching the oven is priceless. A moment to be treasure for the rest of my life.
Join me in my kitchen as we make the perfect Honey Mini Corn Dog Muffins.


Ingredients:
1 pack Jiffy Corn Muffin Mix
1 egg
1 cup milk
2 tablespoon honey
4 pieces hot dogs- cut into 1- 1 1/2 inches
non-stick spray
mini muffin tin

Directions:
Preheat oven into 350 degrees
1.) Cut the hotdogs into 1 to 1 1/2 inches about 24 pieces. Set aside.
2.) In large bowl combine one pack of Jiffy corn muffin mix. Add one egg, milk and honey. Stir until everything is combine.
3.) Spray the mini muffin tin with non-stick cooking spray. Add a spoonful of a mixture or until halfway through the tin. Put the cut hotdogs into the middle of the mixture.
4.) Bake on 350 preheated oven for about 10-12 minutes or until golden brown.
5.) Done! Used toothpick to take out the corn dog muffin. Let it cool:)
6.) Best served hot or cold. I like mine to have little ketchup on top YUM!.:)

Notes: 
-One package of Corn Muffin mix is only good for 24 mini muffin. Double the ingredients for larger crowd.
-  Used your favorite hotdogs brand, and the sauces are optional you can used ketchup or honey mustard
- Oven varies, so you are welcome to adjust the baking time if you need too.:)
- Add more honey if you want it little sweeter or adjust the ingredients according to your taste preference.

Weekends is here! and It's Valentines Day a perfect day to have a dinner date with your love ones. I would prefer home cook meal with family to avoid the crowd folks whose also dining out tonight and to get that relaxing feeling at the comfort of your home. While waiting for hubby to come home, I made my kids their favorite treats. As if, getting candies and chocolate this morning is not enough. It's Valentines and I'd like to spoiled them and its their favorite.. Bake Puto/ Bake Rice Cakes in 4 different colors. This is not a typical way of cooking PUTO but the taste is still have that delicious and soft traditional puto.
 Its called Semi- Homemade because I used a store bought Puto Mix which can be found any Asian store BUT if you do have a good recipe for Puto Cheese I would love to try it. Share me the recipe on my comment box below. As you may noticed I BAKED my puto instead of a traditional way " Steaming" process, for the reason that I don't have those puto mold cups. So, to those who don't have puto cups used for steaming and want that perfect PUTO on your table. This is the perfect recipe for you.!Super duper easy to make and it come out perfect every time. I forgot to mention that it also work if you like your PUTO steamed, add your favorite cheese on top! Delish.. This is perfect for your kids party or merienda at any time. It's cute and fun way to mixed up their favorite color into this yummy treats. Give this a try and let me know what you think. I enjoyed eating this scrumptious treat. YUM! A little knowledge from Wikipedia about PUTO:)
 Puto is a kind of steamed rice cake in Philippine cuisine derived from the Southern Indian dish Puttu. It is eaten as is or with butter and/or grated fresh coconut, or as an accompaniment to a number of savoury viands (most notably, dinuguan).-(source:wikipedia )



 Notes:
- Box of White King Puto Mix consist of two pack. In this recipe I only used (1 pack) good enough to make 24 mini bake rice cakes ( puto ) BUT if you decide to used the (2 pack) double the ingredients. 
- If you like to have bigger PUTO used a bigger muffin tin and adjust the cooking temperature.

Ingredients:
1 box White King Puto Mix- ( I only used one pack on this recipe)
2 tablespoon oil
1 cup water
1/2 cup granulated sugar
food coloring- purple, green and pink
small muffin cups
non-stick cooking spray

Directions:
-Preheat the oven to 350 degrees
1.)  In large bowl combine 1 pack of Puto Mix, granulated sugar, water, and oil. Mix well.
2.) Divide the the puto mixture into 4 parts. Drop food coloring on each bowl according to your preference and mix well.  I used pink, purple and green ( my kids favorite colors)
3.)  In small muffin tin, line the muffin cups. Spray with cooking spray. Add teaspoon of Puto mixture or until its halfway through. It should covered the 24 mini puto cakes.
4.) Bake the 24 puto for 10 minutes. Viola!!! Enjoy..:)

Birthday Cake

Birthday Cake for Reese

 Happy Weekend Everyone! We gonna make Christmas Cookie today with my family. Yay! I'm excited its like my in-laws family tradition to make cookies, I look forward to this event every year. I'm talking a lot of cookies and varieties. Sharing the warmth and love this holiday season we gonna give the cookies to our family, friends and neighbors... Do you have any plans for this weekend?
 Before heading to my in-laws house I'm gonna share to you my homemade birthday cake that I made a week ago, Remember the spider man cake  that i made for my son's birthday last month? This week is like baking madness in my kitchen. Yup!! The house smells like bakery and all those sweet stuff. Lots of celebration this month birthday's, Christmas get together and exchange gift party! So, talking about baking and birthdays,I made this cake couple days ago for Reese's and Phillip joined birthday celebration. We celebrate their birthdays a week before Christmas and also to have a family get together. I made a yellow cake with chocolate icing and purple icing for decoration... and of course some candies for little touch. She loved the cake and pretty happy about it.
I think cake or cupcake is must have on out table this Christmas? What do you think?

Note: 
-I used store bought icing, feel free to used homemade icing if you want.
-Used whatever pipping tip/design you want.
- Change the color of icing flavor and color according to your preference.

Things you'll need in making this awesome birthday cake:
- 2 8x8 inches round cake (I used yellow cake )
-1 tub chocolate icing 16 oz
-1 tub vanilla icing 16
Purple icing color, candies sprinkles- for decorations
Pipping bag/ pipping tip- choose whatever you like!:)

Directions:
- Stack the 2 cakes together and just simple put the chocolate icing on top. Carefully distribute the whole icing to covered the whole cake. Get the pipping bag put the purple icing and simple start pipping on the side until everything is covered. Feel free to choose whatever design you want. Write the Happy Birthday on the middle of the cake, sprinkles the cake and add some candies on the side and on top... Be creative and festive with your homemade cake. Yum!


The joined birthday party of Reese and Phillip is a big success and surely love all the food that my in-laws prepared. Happy moments with family!
