My Birthday Celebration 2018

Sweet Hello Everyone!:)

I can't believe that we are on the second month of  year 2018; and realized how long its been since the last time I posted on this blog. It's amazing how time just flies! Anyways, aside from being super busy with kids; which are both very active on their own respective sport choice. I also work more hours now. It's more on time management I guess- I always make sure that my family comes first;  always spend quality time with them. With that being said; As busy as I am right now, I will still find time to do my blog and keep it updated :)

Show me that happy smile guys! and let's get started on my birthday celebration escapades. It's a little late, BUT hey " better late than never" So, here we go.

Birthday is all about celebrating blessed year with your family and friends. If you remembered my Birthday Celebration: Chicago weekend getaway. Click the link HERE. I'm so blessed and grateful that I have awesome family and friends whose always there to make my day an extra special one (not only on my birthday but everyday) Super Thank You to all of you!:)

My birthday celebration started with great breakfast. Yes, I made our delicious breakfast as my treat for my loving family. It was delicious! Then, we headed to Red Velvet Cafe where I choose my birthday cupcakes and favorite bubble tea ( one of my favorite place for cupcakes and bubble tea )

We then decided to have dinner at Bonifacio. Yes, I love Bonifacio! As you may remembered my last year blog post Birthday Celebration: Chicago Weekend Getaway. Such a perfect place for modern Filipino cuisine experience. Yummmo! We had Lumpia Shanghai, Lechon Kawali, Sisig Taco's, delicious drink ( totally forgot the name of it ) and of course Halo-Halo for dessert. Indeed scrumptious!:)

Few days later after my birthday, one of my close friend visited me and brought delicious food, scrumptious cake, and my favorites. Yum!! It was such a treat seeing her. Thank you, Baye:)

That's not all.. my family set up another birthday celebration where we celebrate our birthday's together. It was so awesome!

 We all gathered at my sister in-laws house (Sommer's residence) to celebrate my birthday, Kindra (sister in-law) Mom Cheri (mother in-law) and Fusako. We had chicken noodle soup, mashed potatoes, corn, peas, bread, green salad- and ice cream cake. You guess it right!? It was really FUN birthday celebrations.

.. and that's how I celebrated my birthday. Indeed a moment to remember for lifetime! I would like to say "Thank You" to my family and friends for all the love and sweet greetings offline/online, for being so generous, and for making my day a very special one. I LOVE you all!

Easy Pumpkin Bars Recipe

Easy Homemade Pumpkin Bars Recipe

Hello Everyone:)

I consider myself sweet tooth- always looking for something sweet at the end of every meal. When it comes to desserts, I have tons of favorites (no surprise!:) One of them was this delicious Pumpkin Bar. My family made Pumpkin Bars pretty much every Halloween and holiday seasons. This year is no different, my beloved in-laws made homemade Pumpkin Bars as our sweet treat after kids trick or treating, as always every bite was scrumptious. So, today's recipe was inspired by my in-laws pumpkin bars. It taste so yummy that I have to share this recipe to all of you. 

This is one of my family's favorite bars and I hope it will be your next favorite too. Indeed, this Pumpkin bars is perfect treat for everyone. A must-try recipe for sure! I hope you all excited as I am. If so, grab your favorite drink and all the ingredients needed. Lets get started, Shall we?

**Note: For this recipe I used store bought pumpkin and cream cheese icing. Feel free to use your own homemade icing recipe. Adjust the quantity for larger crowd. I made 24 little squares of this recipe. Enjoy baking and have fun!:)

Easy Homemade Pumpkin Bars Recipe

Ingredients:

2 cups All-Purpose flour
1 can (15 ounces) solid -pack pumpkin
1 cup canola oil
1-2/3 cups sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

ICING -feel free to use your own cream cheese icing recipe. I used one store bought ( 16 oz Betty Crocker Creamy Cream Cheese Icing)

Directions:

1.) Preheat the oven to 350 
2.) In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. In a separate bowl, combine the dry ingredients (flour, cinnamon, baking powder, baking soda and salt)
3.) Gradually add the dry ingredients into the pumpkin mixture and mix well. Pour into an ungreased 15x10x1 inches baking pan.
4.) Bake at 350 degrees for 25-30 minutes or until set. Cool completely
5.) Once the Pumkin Bars is cool completely. Spread the icing over bars. Store in refrigerator until served. Share this pumpkin bars to your family and friends. Enjoy!

It's super easy to make and taste delicious. A perfect bite of goodness indeed. Now, that holiday is fast approaching this quick and scrumptious pumpkin bars dessert for the whole family is a must-have. I personally love this recipe and perfect for holiday. Yum!

Blueberry Pancake Recipe

Maine Blueberry Pancake for Breakfast:)

Hello Everyone :)

I fell in-love the first time I was at Maine. It was such a great vacation that I'm thinking going back there next year (hopeful). I know, sometimes I get little obsessed but to tell you- I missed being at Maine-the place was just incredible, relaxing, full of adventures awaits, and breath-taking views. On top of that, wild Maine blueberries is everywhere. Yes, literally everywhere! So, I helped myself and grabbed blueberries while we we're at Cadillac Mountain & Acadia Mountain. So, today's pancake recipe is inspired by this delicious Maine Wild Blueberries.

Maine Blueberry Pancake Recipe

Notes: On this recipe I used store bought pancake mix and frozen wild Maine blueberries. Feel free to use any homemade pancake batter recipe and either fresh or frozen blueberries on hand.

Ingredients:

2 cups Pancake Mix 

1 1/2 cup water

Butter

1 cup Maine Blueberries- frozen

Directions:

1.) Combine pancake mix and water in a bowl and stir until large lumps disappear. Set aside

2.) Pour slightly less than 1/4 cup batter onto hot pan (lightly grease pan if necessary)

3.) Then, add frozen blueberries on top of the pancake. Turn pancakes when tops are covered with bubbles and edges looks dry. Turn only once and cook the other side for about a minute.

4.) When little bubbles appear on the pancake, then its ready to flip. Wait for another minute until the other side is cook.

5.) Serve hot with butter on top and maple syrup. Yum! Enjoy :)

I can't get over how amazing Maine, Southwest Harbor. It has everything to offer from delicious and good eats, to scenic picturesque views, adventures that the whole family love and enjoy. It just amazing how this simple recipe took me back to Maine- the adventures that we did, the hikes and trails, and all the memorable moments that we had at Maine. Wonderful Summer Vacation 2017

a-MAINE-zing Summer Vacation

Southwest Harbor, Maine

Hello Gorgeous :)

Summer won't be complete without a summer vacation escapade. I'm just so lucky that we're able to take a week off and spent wonderful time at Southwest Harbor, Maine. This was really exciting for us because it was our first time in Maine specifically (Mt. Desert Island) I wasn't expecting much but to my surprise the place itself is a paradise. Such a sweet treat to see such a scenic views from the car window, the shoppes, and the beauty of nature at its BEST. That's how our memorable, fun, and exciting summer vacation begin.

The most exciting part about this blog post. I am going to take you to our adventures as we unfold our one week a-MAINE-zing summer vacation. Also, it will help you guide for your next summer destination at Maine. So, grab your favorite drink and lets chat. Shall we?

But first,  let me share with you a little story about Mt. Desert Island. The place is beautiful and home to Acadia National Park. 

In all, some 17.188 acres burned. Over 10,000 acres of this was Acadia National Park. Property damage exceeded $23 million dollars. Considering the magnitude of the fire, loss of human life had been minimal. An unknown numbers of animals died in the blaze, but park rangers believe that most outran the fire and found safety in ponds and lakes. Once the fire was over, it was time to start anew.  Some timber was milled, slash was burned, and other logs, still visible today, were left to prevent soil erosion. Nature, however, played the predominant role in the island's restoration. The forest that exist today re-grew naturally. Wind carried seeds back into burned areas and some deciduous trees regenerated by stump sprouts or suckers. Today, instead of one uniform evergreen forest, we are treated to brilliant mix of red, yellow, and orange supplied by the new diverse deciduous forest.

I had so much fun reading the history about Mt. Desert Island, Bar Harbor, and Acadia National Park. I can't help myself but to fell in-love with this place. Are you ready to start this adventures? Lets go!

Stay Cozy at Harbor  Ridge Resort a perfect place to stayed in while visiting Southwest Harbor, Maine. The place was SO PERFECT. It offers everything for a great vacation. A deck overlooking the beauty of south harbor, nice beds and hot tub and of course the kitchen where we cook our food.I personally LOVE this place. Its BEAUTIFUL! 

Looking to camp? Blackwoods, Seawall, and Schoodic Woods are the primary campgrounds in the park.

Now that we have a beautiful place to stay in. Lets move on to our MAINE Food Adventures. Yes!

As foodie lover this is probably the most awaited right? First taste was this delicious Lobster Roll with homemade potato salad. It was so good. A must-try for seafood lover out-there. Next was Lobster Combo Deal where I get to have a whole lobster to myself (lol) Other food we tried are Margaretta Mussels, Fish & Shrimp, Trio Seafood Sampler, Parmesan Scallops and so much more. 

Also, if you're into pies- this Maine Blueberry Pie is a MUST- have when your at Maine. It made with Maine wild blueberry (which you can find everywhere in Maine) and it taste scrumptious.

Next adventures are so fun and exciting! Let me welcome you to Hikes & Trails Galore where I experienced hike granite peaks, carriage road, beautiful trails, climbed mountains, rugged coast of Maine, and relaxing scenery at its BEST. 

Hiking Ideas 

I personally start with very easy trails which includes Bar Harbor Shore Path ( not a park trail ) offers Harbor and Island views. Wonderland Trail offers evergreen forest to rocky ocean shoreline. 

Easy Trails- These hikes are on uneven ground, but overall are fairly level. I love this kind of hike and great to start with if your new into hiking. There are some trails listed but I'm only going to share the trails that I hiked. Bar Island, Great Meadow Loop, Ocean Path its start from Sand Beach to Sea Cliffs. Be careful near cliff edges. 

Moderates Trails- these trails have some steep grades, and some level stretches. Its kinda like a moving up little bit from easy hikes. So, We tried to do two moderate trails out of eight trails listed. Cadillac North Ridge Trail- open scent, views of Frenchman bay. Indeed beautiful!  Great Head Trail was one of my favorite. Its really inviting hike for me and my family. We walked through evergreen forest along sea cliffs and experienced the beauty of nature. We sat on rugged shore line over looking the scenery, and  hearing the ocean waves. 

Strenuous Trails- these trails include steep grades and steady climbs. I was little skeptical about this trail but we made it. Yay! First was Cadillac South Ridge Trail its forest opening to gentle granite scent, exposed ridge. I admit that this hike was little harder compared to other hikes that we've done. It got to the point that I feel so tired that we have to stop multiple times. Its definitely rewarding hikes. It just beautiful and Maine wild blueberry provides good eats. They're literally everywhere and they're so delicious. I helped myself by grabbing blueberries on our way back (wink)

Acadia Mountain Trail was one of my favorite views of some sound, step descent to fire road. I admit that it was little challenging for me at first. But, then again, we stopped multiple times enjoyed the beauty of nature and when we reached the top. It was BEST ever! I can't describe how fun and memorable it was being on the top of Acadia Mountain and seeing everything from top. It was indeed BEAUTIFUL.

Sand Beach, Echo Lake & Indoor Pool Adventures

If your looking for great place to hang out and for swimming. Sand Beach is famous for its unique sand made of shell fragments. It is a great place to go for the day to relax and enjoy the Maine weather. I personally love Sand Beach its located really close to nice hikes and trails Great Head Trail & Thunder Hole are two really popular tourist destination. A great place for lunch or picnic after long hikes. We visited this place twice and can't get enough of its beauty and uniqueness.

Another great place for swimming is Echo Lake is really popular swimming destination. It's located very close to Acadia Mountain Trail and other beautiful trails. My kids love being here and spent half of the day swimming.

Aside from these two great swimming destination. We also enjoyed the indoor pool and soaking on hot tub offer at the resort that we stayed in. It was so FUN!

We done so many things in a period of a week. I surprised myself on how many things we accomplished. Next on our adventures are Sight Seeing Tour Cruise. Yes, the Island offers all kinds of tour cruises, like Whale watching, lighthouse & Acadia Park Tours, Lobster and much more. We decided to go for Sight Seeing Tour Cruise- it was great experience. We're able to visit little island around the area, up close and personal with seals, lighthouse, and able to see 5 Eagles. On top of that, the scenery of the whole Island is beyond amazing. Yup! the trip lasted for like 2-3 hours and it was so wort it. Indeed one of the list on to-do list when visiting Maine.

Even if the weather is not on your side. There are still ton of things to do, to make every single fun and special. Like visiting Museums & Oceanarium, OR take a drive on Park Loop Road where you can see breath-taking views. Its beautiful! We visited Wendell Gilley Museum a special stop in Southwest Harbor for visitors who love woodcarving, since this is the home of marvelous collection of carved birds. Local carver Wendell Gilley became very well know for his miniatures of song birds and sea birds. I loved all the birds carvings inside the museum. They all look SO real and so inspired by Wendell Gilley. Its great for birds lover, kids, and family. 

We also explore Oceanarium where we learned the life of the lobster and the lobster fisherman. I found out that it takes 7 years for a lobster to reach 1 pound. I was so amazed with this information and changed my views towards lobster. It was great visit and learned so much.

** Travel Tips*

* Get your PARK PASS you can buy this online or visit one of the locations. This pass is valid 7 days, and it gives you access when entering Acadia National Park. 

* If you're driving. Packed everything you need from toiletries, pantry essentials, and so much more. I literally brought everything with me. The only thing that we bought while we're there were the basic necessities like milk, butter, lunch.meat, bread, and water. That cut down our expenses to like 90 percent. 

* Packed your own FOOD. To maximized your saving packing lunches are best way to do it. There are lot of picnic areas around the park. It's great to just sit, relax, and enjoy the nature. 

* To enjoy this vacation to the fullest, treat yourself and family for great dinner.There's plenty of nice restaurant around and they all served delicious food. Yum!

* One thing that we enjoyed to do after dinner is sight seeing around the area, shopping, and getting ice cream while watching Bar Harbor.

Birthday Celebration: Chicago Weekend Getaway

Chicago Getaway: A very special birthday celebrations with my in-laws.

Sweet Hello Everyone :)

First post of the month and couldn't be more happier and excited. Indeed, I missed blogging and missed you all dearly. I was just little busy in past few weeks (I think its a good excuse to have.. wink:) Since, I started this blog (5 years ago) I always do a blog post about my birthday celebration and this year is no exception. It's better late than never right? As you may remembered my birthday celebration last year. Get that excitement coming!! because I'm taking you with me and together we are going to unfold fun birthday celebration with family plus unforgettable Chicago trip with my in-laws.Grab your favorite drink and lets make a toss for awesome birthday 2017 and for memorable experience.

I feel so grateful and super lucky to have such a wonderful family who spoiled me not only on my birthday but everyday. It just felt amazing that my hubby and kids took me to Red Velvet Cafe for the first time. I ordered 4 cupcakes and Mango Bubble Tea for drink. It was so good!

Then, we head out to Bonifacio (Modern Filipino Restaurant) for scrumptious dinner experience. I ordered my ultimate favorite Filipino dish which is Lechon Kawali.. It was so tasty! I really feel like I'm home. Other food that my family ordered were Lumpia Shanghai, Spaghetti and Fried Chicken and Sisig Taco for hubby. Overall food experience at Bonifacio was amazing!

Aside from delicious Lechon Kawali that I ordered. I also got very refreshing drink which I totally forgot the name, kinda taste like lemonade level up because of alcohol content (wink).  Lastly, how about Special Halo-Halo for dessert? Can we all scream!!!! for Halo-Halo? I'm just super excited to have Halo-Halo again. Its been almost two years since the last time I had one,and it was back on our 2015 Outerbanks, NC trip It was indeed such a sweet birthday treat for me. 

.. That's not ALL... Let me welcome you to our Girls Weekend Birthday Getaway at Chicago.....

You heard it right! I'm taking you to Chicago where we celebrated our birthday's together with my beloved in-laws. We flew and stayed at Luxurious Waldorf Astoria, Chicago. The place was amazing, relaxing, and fancy. Then, we head out for dinner at Tavern on Rush. The food was so good and the serving was huge. It was really fun night!

We started early the next day for our Spa & Massage Appointment which is located in the hotel. It was best ever experience! Spa + Sauna = Relaxation.

After a very relaxing experience at Spa, we head out to explore Chicago at its BEST. We eat brunch and stroll around. It was so FUN! The people, the surroundings, noises, the big buildings. 

We, then head out for authentic Italian dinner experience at Volare Ristorante Italiano. I was really good! As you may remembered my Instagram post of the food that I ordered I'm such a huge seafood lover.  Can you tell? wink   

Time goes fast when your having fun and it was our last day at Chicago. But, before we head home we explore the place to the fullest. We hit the bridge that overlooked the big buildings of Chicago and it was beautiful. We walked, took a lot of pictures, and subway experience. Indeed, unforgettable birthday experience. I can sit on the couch and talked about our Chicago trip all day..and forever (hahaha) But, it's about time to take my kids to school.  Excitement overload! Introducing this  Nellie's All-Natural - Laundry Soda Packs and Nellie's WOW Stick Stain remover First, I'd like to talk about about the Laundry Soda Packs. Its highly concentrated formula will leave your clothes soft and fresh, rinsing residue free. Also, I noticed that there's little scoop inside the product which makes it so much easier and convenient for me. 

Next is Nellie's WOW Stick Stain Remover. This product is amazing and so perfect for me. It has a perfect scent combination of lemongrass and orange oil which I really liked. Just rub gently onto the stain, agitate the stain under water and wash with Nellie's All-Natural- Laundry Soda Packs. This product is highly recommended.

Next product on my February Daily Goodie Box is my kids new favorite toothpaste. Introducing to you Jack N' Jill Natural Toothpaste super kids friendly toothpaste and it smells so fresh. Chicken Mashed Potato Bowl

Homemade Chicken Mashed Potato Bowl Recipe

Hello Everyone :)

It's been a long time since the last time I posted about food recipes. Due to my busy schedule between family, work, and holiday gatherings. Now, that everything is going in slow pace. I finally have time to cooked and blog about it (Yay!) Get that excitement coming because I'll be sharing my daughter's favorite dish, which is now my family's favorite. Can we all scream (Yumm!)? 

This recipe has everything you need for a perfect meal and indeed a crowd pleaser! I love how all the ingredients compliment each other and make every bite extra special. I hope this recipe gives you excitement because I will be sharing my own version of Chicken Mashed Potato Bowl. Its super easy to make and I promise you- this is going to be delicious experience. Are you ready to get started? If so.. Lets gather all the ingredients needed and start cooking!

Note: Adjust the quantity of the ingredients for larger crowd. Taste according to your preference! Enjoy:)

Chicken Mashed Potato Bowl

Ingredients:

2 Chicken Breast

Salt & Pepper - to taste

Oil - for frying the chicken

Flour and egg- for dredging

4-5 Large sized Potatoes

Butter

Sour Cream

Milk

1 pack of country gravy (store bought)

1 can corn

Shredded Cheese

Directions: 

Fried Chicken Recipe

1.) Seasoned the chicken breast with salt and pepper. Prepare the dredging station which consist of beaten eggs in one bowl and separate bowl for flour mixture.

2.) Put cooking oil on the pan. Start dredging the chicken into the egg mixture and then onto flour mixture. Set aside.

3.) Fry the chicken for about 8-10 minutes each side or until golden brown and crispy. Keep it warm in the oven.

- NOTE: If you don't like to do all the work of making your own fried chicken. Store bought is lways an option :)

Mashed Potato Recipe

1.) Peeled the Potatoes and cut into big cubes. Put water into a large pan and let it boil. Add the potatoes and let it cooked until the potatoes soften.

2.) Drained the cooked potatoes. Transfer it into a big bowl with butter, milk, and sour cream.

3.) Then mashed the potatoes until smooth and creamy. (My kids love to do this part!:) Set aside

Country Gravy

Simply follow the instructions on the gravy mix. Super easy and quick way to make delicious gravy!

Make sure that the corn is heated up. Chopped the fried chicken into bite pieces... And we are ready for delicious Chicken Mashed Potato Bowl.

When making this Mashed Potato Bowl. I'd like mine to be in specific order, start it off with mashed potato, followed by corn, then chopped chicken, gravy and cheese. This is really worth all the work in the kitchen..and its SO good. A perfect comfort meal for the whole family for sure. That's not ALL. How about double chocolate chunk cookies? Yummo!  I made this Double Chocolate Chunk Cookies to make our family dinner extra special. It soft, chunky, chocolatey, and delicious!
