Pan De Coco


Pan De Coco

I love Filipino bread, and Pan de Coco is one of them; It's very popular in the Philippines and as Filipino's it's one bread that you crave sometimes. Leaving the country doesn't mean that you left all those good stuff that you used to eat. So, in my personal experience, I become so resourceful and tried many recipes. Eventually, I finally got it right. This is what we call... when craving strike!!




 Ingredients: ( Dough)
4-5 cups of flour
1 pack yeast
1/2 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cup milk
  


  Directions:
1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.


Filling
Sherred coconut
Brown sugar
For best result- mix the coconut and sugar overnight.

The next thing you need to do are;
1.) Slice the dough into small ball. Then using the rolling pin roll the dough as thin as you can.
2.) Put the filling on the center and sealed the dough.
3.) Put the dough into greased baking dish and let it rise for 1 more hour. Just like on the picture.
4.) Brush egg wash on the top before baking. 325 degrees 10-12 minutes; until they're golden brown.


 Pan de Coco fresh from the oven. You can't help yourself but to grab this munchies even when it HOT!, pretty sure it's more delicious with hot chocolate in the morning watching your favorite show. This is very fulfilling, my friends liked it and so do I.The most FUN part is when you're having fun while doing it. It's good when you just eat, talk, laugh and eat some more!! Cassava Cake

Making cassava cake for the first time? Worry no more! I got the simplest recipe for you. I'm craving for this delicious Filipino delicacy from time to time, So, I tried many recipes but this one really fit my taste-bud. I minimize the ingredients down to 5 and still have the tasty quality of traditional cassava cake,  just like HOME! 


5 Ingredients ONLY!

1 pack frozen grated cassava (thawed)
1/2 cup sugar
1 can coconut milk
1 can condensed milk
2 eggs 

That's it!!! and your half way enjoying this scrumptious dessert.


 Directions:
 1)Just mix all five ingredients in large bowl.
2.) Pour the mixtures into greased baking dish. I used 13x9 inches.
3) Bake it for 1 hour at 350 degrees.
4) Broil it for 1-2 minutes, depending how brown you want it to be. :)


This cassava cake is a HIT!. This is a perfect potluck party dish, very easy to make and I'll promise you; It's perfect every time. I love making this kind of dessert, Its very simple and scrumptious, I can't get enough of this! 
It makes me happy knowing that, I can put smile on someone faces while they're eating it; that's smile remind them of PINAS..just like what I felt. Cheerrrs!

Ensaymada

Hey! do you remember the last time you eat ensaymada?  I can't..! this is my ultimate favorite when I was growing up.So I decided to make homemade ensaymada, At first I was kinda hesitant making it, because it seems like so hard that I might not get it right.  I was RIGHT! the first time I made ensaymada  it turn out disaster.. BIG TIME!. I tried it 2 more times still not right.. So I decided to use the recipe in making dinner rolls and It work out GREAT! 



Dough:
Ingredients:4-5 cups of flour
2 1/4 teaspoon yeast

1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cup milk

 Directions:

1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.



5) Cut the dough into long strips, roll it using rolling pin and roll it like cigar. Form into like ensaymada just like the picture on the top
 6) Let it stand for 1 hour or so...at room temperature and then bake at 350 degrees for 10-15 minutes until golden brown. 
7) Let it cool before for 30 minutes and then spread some butter on top and sprinkle it with white sugar.
8) Serve it anytime of the day!  


This so yummy!! just like how I remember eating it when I was a kid. I was just so excited how it turn out this time. So I put butter right after I pulled it in the oven hahaha! I can't just wait.. so my kids! You bet they just like diving into it, specially with sugar on top.. ummhhh..as my kids screams YUMMO!

 This is dinner rolls my way! Yeah, that's right! instead of making the traditional round dinner rolls. I make something that remind me of my childhood, I mimic the shape and looks of my favorite rolls when I was kid. YUMMY! So, I decided to share this recipe.
 I'll show how to make this dinner rolls in very simple way...


 Ingredients:

Wheeeh! I know its long process, we're almost there!
After the dough rise, you're ready to roll, the round one is the simplest one so far ( I guess!). But you know me I'd prefer trying something different. Whatever works our for you.




Overall experience making this rolls.. FUN! FUN! especially I have two little helpers with me in the kitchen. It makes my heart jump with joy every time I saw them smilling and I know that they're so HAPPY!. 
This is my first time making it, OMG! this are good specially pair with hot chocolate in the morning. My family new favorite yay!!

Dinosaur Cake

My son just turned 2 today, so I was really excited about making him a cake. My original planned was to make him like a turkey cupcake since his birthday is right on Thanksgiving but few days before hes birthday I hear him screaming  DINE... BIG... ROAARRR!!! He love watching dinosaur, so AHA! I'll make him a dinosaur cake I'm sure hes gonna love.. This is my first time making this cake so..I'll show you how it goes:)


  After baking the cake, refrigerate for 30 minutes before carving the dinosaur. 



 Put thin layer of your favorite icing to seal the crumbs on the cake then put it on the refrigerator for 30-mins or so..

Finish product turn out great. My son adore the cake and keep screaming DINE!!! Big... ROAARR!!!
It was awesome experience making the cake. I love my kids and I love making cake on their birthdays. So I'm gonna keep posting on the things that I love..!

Banana Bread Recipe


Banana Bread Recipe



 I was inspired making this banana bread by looking at my over ripe banana on the table, Instead of throwing it away. Why not transform it into something very delicious. So I do some research on how to make this bread and this is so far the simplest and easiest recipe I could find. I omit some ingredients to make it so simple yet tasty. Add your favorite nuts on top to make it more extra special. It was a big hit in my house!
Come on make it at home...:)

Dry Ingredients:                            Wet Ingredients:

2 cups all purpose flour                   3 medium bananas mashed
1 1/2 teaspoon baking powder        2 eggs (beaten)
1/4 teaspoon salt                           1/2 cup cooking oil
1/4 teaspoon ground cinnamon        1 teaspoon vanilla
1 cup sugar

Directions:
1) Heat oven to 350 degrees. Grease bottom of 2 loaf pans; set aside. In large bowl combine all the dry ingredients; set aside.
 2) In medium bowl combine all the wet ingredients. Add the dry ingredients slowly. Mix well.
3) Spoon the batter in prepared pans. Bake for 40-45 minutes. Cool  before slicing and serve it anytime of the day.
