Hello friends and readers of this blog-
I will be spending a week with my family and won't be back until 20th this month, Before I head out, I leave you this Ube Coconut Rolls Recipe to be enjoyed for the rest of the week. Keep visiting my blog and I'll see you when I get back.. :)

Honestly, I don't know what this recipe called. This is just one of those "AHA! Moment" in the kitchen. Sometimes I just love to explore the flavor and mix ingredients and see the result myself. This is just a combinations of my two favorite ingredients, Ube/ Purple Yam and Coconut Flakes. The sweet idea about this recipe is,  basically same process of making spanish rollls the only different is the filling and I used coconut flakes instead of breadcrumbs for coating.
The texture of the bread is soft and you have this sweet ube filling inside and toasty coconut flakes outside.. I would say perfect rolls anytime of the day.. YUMMO!  I can't wait to share this recipe with you guys.. C'mon lets start baking :)



Tips:
- I used store bought Ube yam, you can totally make it from scratch as well.
-Adjust the sweetness according to your preference.


Filling:
1 1/2 cup Ube/purple yam- I used store bought
Coating/ Sprinkles:
4 teaspoon brown sugar- taste according to your preference
1 cup Coconut flakes
  -In food processor combine the coconut flakes and the sugar and pulse 3-5 times until


Dough:                           
3 1/2 cups flour                        
2/3 cup- Lukewarm water                 
2/3 cup- Lukewarm milk                   
1/2 cup sugar                                  
1/4 cup butter melted                          
1 pack yeast                                          
1 1/2 tsp. salt

Directions:

1.) Mix the flour, sugar, salt and yeast on the big bowl ans set aside.
2.) Pour the lukewarm water and lukewarm milk into the dry ingredients and mix it well.
3.) Pour the melted butter into the mixture, mix well. Knead the dough until the dough is smooth and elastic bout 15 minutes or so.
4.) Let it rise for 1-2 hours
5.) Divide the dough to 18-22 pieces. Flatten it out, spread the Ube/purple yam and sprinkles with little coconut flakes mixture , fold the dough and roll into a coconut flakes and sugar mixture.
6.) After rolling and coating, covered it with plastic wrap and let it rise for 30-45 minutes.
7.) Bake on 350 preheated oven for about 15-18minutes, until its golden brown:) ENJOY!

Spanish Roll Recipe

Spanish Rolls with Sweet Bean filling

 Spanish Rolls are one of a classic Filipino bread next to Pandesal and Ensaymada. This is one of my favorite growing up! until up to this days, I have no idea why they called it Spanish Rolls. I don't think there is Spanish into it. I tried to do some research but I can't get any answered right.
Typically Spanish Rolls are soft bread dough rolled into a sheet, brushed with melted butter and sprinkled with breadcrumbs and sugar. This time, I made the filling out of sweet bean paste instead of the classic butter, sugar and breadcrumbs, but the process remain the same.
A perfect way to start your day with a glass of hot chocolate next to homemade bake Spanish rolls.
Below it the recipe of Spanish Rolls with sweet bean paste filling.

 Note: You can just totally use butter,sugar and breadcrumbs for filling:)
Filling:                
1 cup peeled mung beans
1 1/2 cups water- add as you go:)
4 teaspoon brown sugar- taste according to your preference
Splash of vanilla
Directions:
1.) Bring the peeled mung beans and water to boil. Let is simmer until it soft and mushy. 
2.) Add the sugar and splash of vanilla. Let it stand until it thicken until it became like paste.
 3.) Let it cool and refrigerate overnight for best results

Dough:

1/4 cup butter melted                          
1 pack yeast                                          
1 1/2 tsp. salt

In medium bowl combine sugar and breadcrumbs together. Set aside

1.) Mix the flour, sugar, salt and yeast on the big bowl ans set aside.
2.) Pour the lukewarm water and lukewarm milk into the dry ingredients and mix it well.
3.) Pour the melted butter into the mixture, mix well. Knead the dough until the dough is smooth and elastic bout 15 minutes or so.

(BEH-fast- Bacon, Egg and Ham sandwich for breakfast )


It's the end of the weekend and why not start my breakfast with this fast and easy, ("BEH-fast"- Bacon, Egg and Ham sandwich) over this super thin wheat bagel which by the way, I love! Trying new food excites me and eating this sandwich for breakfast just great addition to start this day with SMILE! yeah that's right it makes me happy not only I like this food but my family enjoyed eating it as-well.
Surprise your loveone's with this "BEH-fast sandwich" I'm pretty sure they gonna appreciate the time and effort you put into making it. It's very easy process!! let's have some fun making food and learn new things at the same time.
All you have to do is cook the bacon, ham and the eggs.

Tips: Add little milk into the egg and cook it slow and low and you have perfect egg every time.

Pan De Coco

I love Filipino bread, and Pan de Coco is one of them; It's very popular in the Philippines and as Filipino's it's one bread that you crave sometimes. Leaving the country doesn't mean that you left all those good stuff that you used to eat. So, in my personal experience, I become so resourceful and tried many recipes. Eventually, I finally got it right. This is what we call... when craving strike!!




 Ingredients: ( Dough)
4-5 cups of flour
1 pack yeast
1/2 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cup milk
  


  Directions:
1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.


Filling
Sherred coconut
Brown sugar
For best result- mix the coconut and sugar overnight.

The next thing you need to do are;
1.) Slice the dough into small ball. Then using the rolling pin roll the dough as thin as you can.
2.) Put the filling on the center and sealed the dough.
3.) Put the dough into greased baking dish and let it rise for 1 more hour. Just like on the picture.
4.) Brush egg wash on the top before baking. 325 degrees 10-12 minutes; until they're golden brown.


 Pan de Coco fresh from the oven. You can't help yourself but to grab this munchies even when it HOT!, pretty sure it's more delicious with hot chocolate in the morning watching your favorite show. This is very fulfilling, my friends liked it and so do I.The most FUN part is when you're having fun while doing it. It's good when you just eat, talk, laugh and eat some more!! Dinner Rolls

 This is dinner rolls my way! Yeah, that's right! instead of making the traditional round dinner rolls. I make something that remind me of my childhood, I mimic the shape and looks of my favorite rolls when I was kid. YUMMY! So, I decided to share this recipe.
 I'll show how to make this dinner rolls in very simple way...


 Ingredients:

4-5 cups of flour

1 pack yeast
1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cups milk





  Directions:
1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.
5) Bake it at 325 degrees; 10-15 minutes until its golden brown.


Wheeeh! I know its long process, we're almost there!
After the dough rise, you're ready to roll, the round one is the simplest one so far ( I guess!). But you know me I'd prefer trying something different. Whatever works our for you.




Overall experience making this rolls.. FUN! FUN! especially I have two little helpers with me in the kitchen. It makes my heart jump with joy every time I saw them smilling and I know that they're so HAPPY!. 
This is my first time making it, OMG! this are good specially pair with hot chocolate in the morning. My family new favorite yay!!
