Family Disney World Vacation 2016

My First Disney World Experience!



Hello Everyone!

Oh YES! I finally hit the paradise destination, Disney World at Orlando Florida with my beloved family last week. It was wonderful vacation, full of excitement, and surprises for the whole family (first time at Disney!) Aside from our magical experience at Magic Kingdom, where my family spent whole day exploring the beauty behind the magical park. I also want to share with you my foodie escapades, all the places we went to and other fun things we did at Florida. Are you ready to experience one week in paradise with me? Grab you favorite drink, keep on reading. One thing for sure this is going fun and magical. :)

 
Paradise Destination (Orlando, Florida)

After almost 18 hours of driving we finally hit our destination. Oh yes! a very long tiring ride but to make it short. We stopped at Cracker Barrel, Georgia where we had delicious brunch. Then, finally we checked in at Westgate Vacation Villas Resort & Spa.   Let me tell you, Westgate Villa & Resorts is amazing! It has everything you need for a perfect vacation. 

Now that everything is situated. Let's start our fun vacation escapades. First stop - Baseball Game Spring Break Practice- We got some cute souvenirs. Then,we had so much watching the game and enjoyed delicious food. Awesome! because The Detroit Tigers won the game..:)

After the game we head back to Westgate Villa & Resorts, where the kids had fun at the pool. Then, delicious dinner at my in-laws unit.


Delicious Filipino Food Dining Experience at Nipa Hut bar/restaurant 
We (me and hubby) decided to take the whole family for Filipino Dining Experience. We did some researched and found one perfect place, who specialized on Filipino cuisine. Nipa Hut is located close to Westgate Resorts, very convenient location. It was a blast! my in-laws had Red Horse beer for the first time and they liked it. Everyone else loved their food. We had Letchon Kawali, Chicken Barbecue, Pansit Bihon, Calamari, Lumpia, Chicken Adobo, Rice, Mozarella Sticks, and my daughter ordered Cheese Burger (hahahah) I just think its funny! It was great feeling..:)
 
Beach & Beyond Escapades 



Oh yes! We hit the beach and the kids are static. They made sand castles, played, and looked for some sea shells to take home. My kids really loved the SUN and the SAND. After our beach relaxation, We hit the shoppes for souvenirs, and eat the best burger. It was so good! no wonder why a lot of people wait in line just to have it.



Magical Experience at Magic Kingdom

Wohooo! the most awaited part of this vacation finally a step away. Tuesday morning when we all drove to Magic Kingdom (excited overload ) I just can't put into words how excited I was. This is something that I only watched on TV when I was a little kid. I would never thought that I'm finally feeling the moment. Magic Kingdom is truly PERFECT paradise for everyone. When we walked to our first ride, which is the Haunted Mansion. I saw the PALACE! I was like (loka mode) Its beautiful and totally amazing. I had to stop for a moment, snapped a picture, and fun adventure begins. 

We enjoyed 11 fun rides, able to meet Aladdin and Princess Jasmine, and watched the Fantasy Parade- which by the way were so entertaining, fancy, colorful and awesome.


Best thing about my Magic Kingdom Experience was the whole MAGICAL experience. You won't see any workers cleaning, picking up trash, or any delivery trucks that delivered food. It just felt like MAGIC! and I LOVE all the rides. If I get a chance to do it again. I will do it in a heartbeat! Beautiful place indeed.

You guys need to come to Disney and experience the magical moment with your family.!

Fine Dining Experience at Four Seasons

The Sommer's (my sister in-law) stayed at Four Seasons resort. She invited us (The Spence's and The Campbell's) for family dinner at Four Seasons resort. The place was superb beautiful! (As in talagang sobrang ganda) I had so much exploring the place and the food were delicious. I ordered Tonno which is basically Tuna fish with eggplant and other great spices. So good! fabulous dinner experience. :)



My mother in-law own a timeshare at Westgate Resort. As perks of being an owner, we are able to enjoy resorts amenities for free. Awesome right? Come on, join us as we unfold great moments

Swan Boat Ride- fantastic feeling and I loved it! It's perfect way to get exercise and seize that moment watching the whole resort has to offer.

Jurassic Mini Golf- The Jurassic Mini Golf designed to entertained everyone. Especially the kids who LOVED dinosaurs. It was awesome mini golf experience and great family bonding experience.



To summarized our wonderful vacation. We spent our last day hanging out in the pool, relaxing in the hot-tub. It was fun afternoon for the whole family. Then, We hit the outlet mall to grabbed some last minute souvenirs, and of course I enjoyed shopping (who doesn't? :). Totally fun, festive, luxurious vacation. I will truly treasured every moment of it.

My Birthday Bash Celebration 2016

My Birthday Celebration Escapade!:)


Sweet Greetings Everyone!
  
You guess it right! Its my birthday bash celebration (excitement overload!)  Since, I started blogging  (4 years ago) I always do a blog post about my birthday celebration ...little late this year though :) As you may all remembered my (last year's birthday). So, this year is no difference. Get that excitement coming because I am taking you with me on my birthday bash birthday escapades. Join me as we celebrate this awesome birthday celebration, where we can experience delicious food recipe, birthday ideas, and all fun stuff. 
Lets start the birthday festivities, shall we? Cheers for another year better! (wink)

..............Celebration with Friends...............
- It so much fun when you have your great friends on your birthday. Devouring delicious Filipino food, wonderful company, glorious gifts, and all fun stuff. My friends made delicious food which are all my favorites, like roasted chicken, eggplant salad, menudo, ginataan na may isda, fish paksiw, spanish bread. Yum! and of course Rose made me a birthday cake (three layered cake) 


.............Birthday Dinner Date with Hubby and Kids........
Hubby know me BEST! He treat me to my favorite steakhouse in celebration of my birthday. I ordered all my favorite drink which is Mango Passion Rita. Followed by Loaded Bake Potato Soup 
(so good!) and the main course which is Steak and Sweet Baked Potato. I also got a free ice cream courtesy from steakhouse (wohoo!) Perfect way to finished up our delicious dinner.
Thank you to my hubby and kids for such a nice birthday treat and for generous birthday gift. (wink)


 ............Join Birthday Celebration with my In-laws..........
Lastly- A join birthday celebration with my beloved in-laws. We had chicken noodles, mashed potatoes, corn, peas, and bread. It was best meal ever! Delicious indeed. Also, my mother in-law made me a chocolate cake with white icing. Scrumptious!
I would like to thank you my in-laws for being so generous, loving and just simply wonderful. I LOVE you all!:)



....... SPA Escape and Lunch with In-laws.....
As part of our join birthday celebration (my sister in-law Tacy) treat us to wonderful SPA Escape and Lunch. We we out (all four of us) with my sister in-law Tacy & Kindra, Mom in-law Cheri and Me. for such amazing SPA escape and followed by scrumptious lunch. I enjoyed my facial experience!
It was great spending time with my wonderful in-laws. Just fantastic day.:)


 
My birthday was surely a very special and unforgettable. Its something that I will cherished for the rest of my life. I would like to say big Thank You to my lovely family and friends who greeted my via offline and online and making my birthday extra special. I'm truly blessed to be surrounded by wonderful and amazing people in the world. I LOVE you all!:)

And that's how I celebrated my 28th birthday! :)

Tortang Talong Recipe

Tortang Talong (Eggplant Omelet) Ultimate Breakfast Experience 

 


Hello Everyone!:)
It's been a super busy week for me and my family. It's holiday season (what can I say?) but, I'm excited that I finally get a chance to sit down and update my blog (wink:)  It's super exciting because its my first blog of the month and two weeks more to go and its Christmas. Yippeee! The recipe that I'll be sharing today is one of my favorite. I made Tortang Talong and It's totally a delicious experience. It gives me inspiration to do some of my Christmas shopping today. It just happen so fast, so quick, but I made progress when it comes to buying gifts. Holiday season is always special and fun to celebrate with family and friends. Let's keep this holiday spirit fun and exciting by making this Ultimate Tortang Talong Recipe. What the best thing I like this recipe? its budget friendly, delicious and totally take you back home.
Join me as we make my version of  Tortang Talong Recipe ( Eggplant Omelet). I'll promise you! This is going to be delicious. Let's go.:)

 
Notes: Adjust the quantity of the ingredients for larger crowd. Enjoy!

Tortang Talong Ingredients:

2-3 Chinese Eggplant cooked
2 Large Eggs
1 medium size onion chopped
1 tomato chopped
Salt and Pepper- to taste
Cooking Oil

Directions:
 1. First, cooked the eggplant by either grilling or boiling process. In this recipe, I choose to cooked the eggplant by letting it sit in a boiling water for about 5-8 minutes. Took the eggplant out in a boiling water. Set aside.
2. While waiting for my eggplant to cool down. I chopped tomatoe, onion, and  beaten the two eggs in a separate bowl.
3. Grab the cooked eggplant. Make sure you retain the crown and the stem of the eggplant. Gently flatten the eggplant meat by using fork.
4. Put3-4 tsp oil in large non-stick skillet.Combine the beaten eggs, chopped onion and tomato, salt and pepper. Then, dip the eggplant into the egg mixture and slowly put it on the hot skillet. I add more egg mixture on the eggplant and make sure that it well distributed.
5. Fry until golden brown on one side, then turn and brown the other side. Drain on paper towel.
6. Serve hot and Enjoy!

I'm so proud that I finally made my ultimate Tortang Talong Breakfast Feast! I know its look a lot but when your craving for something that you wanted for so long. It just a rewarding feeling and I truly enjoyed my breakfast, every single bite of it. Yummo! I love my Tortang Talong paired with tuyo and of course my favorite drink. 
Tortang Talong is definitely one of my favorite Filipino food. Its budget friendly, delicious, and super easy to make. It has all the components of a perfect bite. Do you agree?

A perfect dessert on any special occasions for sure. After opening each sample cakes, I can't help myself to sniff every single one of them. The cakes smells amazing! the aroma of fusion liqueur  and flavors creates distinct memorable smell. So great! and the BEST part is eating them. YUMMO! It has unique taste, delicious, sweet and the cakes are super moist. LOVE the whole experience.

OuterBanks, North Carolina Adventure

Family Adventure at OuterBanks, North Carolina



Hello Everyone!

Wohooo! I'm back from my awesome vacation, back to work, and back into the blogging world. Indeed I missed all of you! I wish I could take you with me and experience all the fun stuff that me and my family enjoyed.  It was truly a very fun vacation, relaxing, and just feel great being with my beloved family. We went to Outerbanks, North Carolina. Yes! As you may remembered my first blog post about my Outerbanks experience back in 2013 and then followed by Outerbanks escapade in 2014.

Packed with excitement I'm taking you with me as we unfold all the fun stuff Outerbanks, NC has to offer! Started off by hitting the road at midnight. O Yea! we drove overnight along with my in-laws. Had a delicious stop for breakfast at IHOP. ( blink together everyone) Viola! we reached our final destination Outerbanks, NC. Yippee!!We stayed in a private condo with easy access to the beach, indoor pool and very close to stores, restaurants and gift shoppe (same place that we stayed last year and the year before that:)

Let's get going and start our fun Outerbanks Adventure!:)
- Note: We hangout in the beach and pool everyday! -:)

  
Sunday Fun Outdoor Cookout
We all hit the beach with full BLAST and EXCITEMENT!  when I say (WE I meant all 16 of us that includes the adult and the kids) and to make this vacation super fun and exciting! We had fun Outdoor Cookout. It was DELICIOUS! We had brats, burger, hotdog, beans, chips, and all tasty food. Yum!




Monday- It's Granny Helen's Birthday
After spending time in the pool and on the beach. We had delicious dinner at Miller's Seafood and Steakhouse in celebration of Granny Helen Birthday. The ambiance of the place was inviting and relaxing. The food is EXCELLENT- they served us with hush puppies as we waited for our order. I had Grilled Mahi-Mahi with tropical salsa, rice and steamed vegetables. It was delicious and impressive food. We head home to finished off the celebration. We had strawberry cake and ice cream for dessert.



Tuesday- Sweetness Overload
This is the DAY were we spent our time with our family. So Me, hubby, Reese and the kids head out to have dinner at Applebees. I ordered baby back rib with sweet fries on the side, which is by the way delicious. Then, we went to shopped for souvenirs and had long sweet walked on the beach (holding hands! char!) and watched the sunset. Awesome!


Wednesday- Bonfire and Smore's Experience
We had fantastic dinner that includes meatloaf, baked macaroni and cheese, chicken, and corn prepared by Mom Cheri, Emma, Abbey and Reese. It super TASTY! and had amazing Bonfire and Smore's experience at the beach. We sang, talked and had fun with sparkles. It feels great to hear the waves splashed and smiles on everyone's faces. Amazing!
 

Thursday- Dolphin Tour and Quinn's Birthday Celebration
In celebration of Quinn's birthday. We all went to see Dolphins and YES! I saw Dolphins up close. It was very exciting moment and unforgettable. The whole Dolphin Tour experience is phenomenal. 
Then- we had dinner at this restaurant (which I totally forgot the name) I had Caribbean Tuna with rice and beans on the side, and Mango Colada for drink to compliment my super tasty dinner. We continue the party at my sister-in-law's place and had cake and ice cream. Yum!


Friday- Seafood Adventure & Jockey's Ridge Escapade
Before heading back in Ohio we had an awesome seafood adventure . As you all know me, I'm such a huge seafood fan! We went to TAPHOUSE and I ordered Seafood Platter which compose of steamed crab legs, shrimp and clamps. Yum! It's like Seafood galore adventure- so GOOD!
Then, we went out to experience the giant sand dune at Jockey's Ridge Park. Loved seeing my kids, nephews, nieces and in-laws enjoying the sunset and the scenic view.

 

Saturday- Virginia Beach, Jollibee Experience!

Jollibee is a famous fast food in the Philippines kinda like Mcdonald's here in the US. So, We stopped by for lunch before heading home. I was totally impressed with whole experience. It just feel like I'm in the Philippines! the crowd, the food and the feeling!! Wohoo! It feel great to have Chickenjoy meal, Halo-Halo and Spaghetti after 3 years! LOVE! LOVE Jollibee!!
 And that's how I spent my amazing summer vacation! Truly an experience to remember forever!

The Gourmet du Village Party Kit was delivered right on my front door and the best part it was packed perfect. A very impressive packaging for sure!:)

 Are you ready to get into this delicious dip recipes? Let's go and start cooking! I'll promise you this is easy peasy recipe.:)

SPINACH & ARTICHOKE DIP RECIPE

Ingredients:
1 Pouch Spinach & Artichoke dip mix
1/2 cup sour cream
1/2 cup grated gruyere cheese
1 can artichokes (strained & chopped)
1/2 cup cream cheese
1 cup real mayonaise
1 cup baby spinach chopped

 Directions:
 - Preheat oven to 350 degree Fahrenheit
1.) In a large bowl, or mixer combine cream cheese, sour cream, mayonnaise, and dip mix. 
2.) Mix in grated cheese ( reserved some to sprinkle on top before baking , spinach and drained and squeezed artichokes.
3.) Transfer to a gourmet du village sip baker or any heatproof baking dish you have at home, and bake (without lid) until hot. About 15-20 minutes. Serve with crispy baguette, pita chips and crackers.
4.) Don't forget to share this yummy dip with family and friends! Enjoy:)


Cheddar & Bacon Dip Recipe

Ingredients:

Pouch of Cheddar & Bacon dip mix
8.8 oz container of sour cream
4 oz cream cheese cut into small cubes & softened
1 cup mayonnaise
3 Tbsp. finely grated cheddar cheese

Directions:

- Put aside 2 Tbsp. of cheddar cheese
-Preheat oven to 350 degree Fahrenheit
 1.) Combine all ingredients ( except for the 2 tablespoon of cheddar cheese that have to set aside) in a bowl.
2.)Transfer to Gourmet du Village dip baker or any baking dish available on hand.
3.) Bake for about 20 minutes or until bubbly around the edges. Remove from the oven and sprinkle top with the cheddar cheese that you set aside.
4.) Place under the hot broiler for 1 minute. BE CAREFUL! the dish is very hot:)
5.)  Share and Enjoy this delicious dip with family and friends.

Easy Southwest Pizza Recipe


Hello Everyone!

I'm back again with another awesome, fun, and easy recipe for you to try this weekend. YES! A super easy Southwest Pizza- Yum! and its so good, seriously good! Can you tell that I'm so excited writing about this recipe at this moment? I can't content myself. (hehehe)
I actually found this recipe on a circular ad while browsing through weekly sales. Let me tell you- I'm so glad I did try the southwest pizza recipe, because its just simply scrumptious. My kids did not even noticed the black beans that I put on the pizza, totally loved it!
The recipe below is good for 4-6 serving. I suggest to double the quantity for larger crowd. I also think that you can add some of your favorite toppings like lettuce or tomato on top since its kinda like a taco pizza. BUT, if you want to keep it simple just like mine then no need to add extra toppings. Are you all ready to make some southwest pizza? Come on and check out the recipe below. Happy cooking! Ingredients: 

1/2 cup- drained, rinsed black beans
2 tablespoon of Taco seasoning mix
1 can of 8 oz tomato sauce
1/2 pound ground beef
1 prebaked pizza crust (12-inch)
1 cup shredded cheese
1/4 cup sliced green onions


Directions:

1.) Preheat oven to 450 degree Fahrenheit.
2.) In separate bowl. Combine the tomato sauce, taco seasoning mix and drained, rinsed black beans. Set aside.
3.) Cooked the ground beef into a medium size skillet for 10 minutes or until golden brown. Drained and set aside.



4.) I sprayed the baking pan with non-stick cooking spray and spread the prebaked pizza crust.
5.) Spread the sauce mixture on the top pizza crust. Add the cooked ground beef on top, cheese galore and the green onion.
6.) Bake for 12-15 minutes or until the crust is golden brown and the cheese are melts.
7.) Enjoy and serve it hot! Yummm!!:)

I know its kinda different from your typical pizza night but this recipe is so good. Kinda like a combination of taco and pizza night together. So scrumptious and super easy to make, so perfect for taco/pizza family night or even potluck parties.

Quick and Fun Party Ideas

Pacquiao VS Mayweather Fight Mini Party

 


Hello Everyone!
How are you all doing today? I know its been awhile since the last time I blog. I was super busy in past couple weeks and my allergies is kicking me out badly. I feel a little better now though (wink)
Anyways, I'm sure most of you watched the fight of the century the "Mayweather vs Pacquiao's" fight and of course being a huge fan of Manny Pacquiao, I hosted a little party for me and my friends. It was so much watching the fight and of course hanging out with each other. Join me as we discover few party ideas and food recipes for this most awaited fight of all time. Yippee!:)

Let's get is ON!
Start it off with DRINKS, Silverware and Snacks
-  I like to have a varieties of drinks from bottled water, tea, different kind of soda's and of course alcoholic drink that includes beer, margarita's and what not.
- In this party I mostly used paper plates, plastic cups,plastic forks and spoon for easy clean up. .
- Then, a lot of SNACKS- and that includes my favorite back home which is Chippy and Piattos and of course the classic snack chips and dip. Yum!



Food Ideas!
- We had Pizza galore. Yes! I mean 6-7 boxes of pizza's. We also have rice, dried fish, milkfish, mung bean stew, green beans and adobo.
- For our dessert we have german chocolate cake, binangkal and cassava cake.

Feeling the MOMENT!

-After our dinner, the fight begun and it was like a roller coaster of emotions. At least for me, I was so nervous the whole time. We were screaming and cheering the whole time and before we knew it..its OVER!



 The pay per view was so expensive and I felt like its not worthed for 30 minutes running around, threw few punches here and there, and hugs galore. The excitement lasted only for few minutes, until I realized that they're doing same thing over and over again run, punch and hugs.
Win or loss- I'm still so proud of Manny Pacquiao and in my heart his truly the champion.

Glorious Outerbanks Vacation 2014

Outerbanks Vacation Escapades


Hello Everyone!
I'm officially back from my great week vacation with my loving family...and Guess what? I'm missed you all! It's been pretty fast month for me, I felt like, I started to felt that vacation mode and the next thing I know, It's time for us to go back. Time went so fast when your having fun, "ika nga" But, Hey! I'm bringing those sweet, unforgettable and fun memories with me and I'm beyond excited to share it with you:)  Are you excited? Come on, hold my hand and join me, As, I uncovered my everyday fun food escapades, great beach adventures and my relaxing moments at Outerbanks.
Here we go!..wink:)

Outerbanks is the place where I can relax and enjoy every moment of it. Actually, I remembered blogging about my last year Outerbanks vacation.:) So, Anyways, Let's start the adventures by driving more than 11 hours. Yup! I know its exhausting thinking about it, but it was fun. We packed snacks and drinks with us and the movie LEGO is great entertainment for everyone. I actually, enjoyed it. " Everything is Awesome!!!"fast forward- We finally arrived at Windjammer the place where we always stay. Everything you can think of that perfect place for vacation, close access to the beach, gift shops, restaurants, indoor pool and hot tub.. and more.
Sunday- We went to the beach and then to the pool. Then we ate out in celebration of Granny's 75th birthday at The Dunes restaurant. The restaurant is amazing, very pleasant ambiance and so relaxing. I really enjoyed my food which is Blackened Mahi-Mahi with tropical salsa topping, Dunes Rice and summer veggies on the side. The dessert is scrumptious! I can't stop going back for more bite and more and more.. until its gone! I have a chocolate mouse cake with whip cream... I should stop! I'm drooling right now hahaha.


 As part of this awesome vacation is our family dinner together. The deal was, one family member should volunteer to make dinner for everyone. Which is pretty cool you think? I think so too. Anyways on our second and third day is pretty much hanging out on the beach and in the pool area. 
Monday- Granny made us meatloaf, mashed potato and green beans. It's really good!
Tuesday- Tacy ( my sister in-law) made us crabcake and corn- I can't get enough of it. It just that good!:)
 -We also explore the Tangler outlet and Wings for some shopping galore! It was really fun..promise!


 Wednesday- It's Quinn's birthday ( my niece/ Tacy's daughter ) The whole family went out for Dophin Watch Tour! I'm so excited! I never seen dolphin up close and I think its really fun experience for my kids too, seeing the dolphin and riding a boat. I surely was right, my kids loved it. Too bad we didn't see dolphin that day but the tour is amazing.  I enjoyed just looking the scenic views and the smell of fresh sea water.
The Dinner was Pizza and of course CAKE! It was unforgettable...


Thursday- If there's like " Beach Day" kinda day, This is the day! We pretty much just being at the beach all day long. My kids loved playing with the sand, we made some cute a.k.a "sand castle". I get to experienced to be buried alive on the sand and so my kids.
Sunbathing- check!
Picnic at the beach- check!
Relaxing- check!! check and more! It was so much!! and I made Beef and Broccoli for dinner! wohoo!! and can't be complete without my chocolate fudge brownie with lemon icing for dessert. Its kinda strange that chocolate and lemon together but it works...wink!:)

 Friday- Our last day at Outerbanks and we are making most out of it. Started off by taking a long walk at the beach with my kids, hitting the beach early and explore every minute exploring the place. My Mother in-law ( Cheri) made salad, baked beans, baked chicken, potatoes and tater tots and ice cream for dessert. Then, we head off to Jockey's Ridge.. how amazing! My kids have full of energy just running up and down at giant sand dunes. We also watched the beautiful sunset..and went out for souvenir shopping.

 We drove Friday night and got home Saturday afternoon.Vacation with family is priceless and a moment to be treasured for the rest of my life.
