Homemade Sunshine Skillet Recipe

Super Easy Breakfast Recipe and Hubby's Birthday Celebration


Hello Everyone!

 How are you doing today? I know you guys are excited because  the weekends is here. Yippee! I am excited too- I have to spend and enjoy this beautiful weather with my family. To make this weekend a perfect one. What about a super easy and fun recipe to try this week? Yup! I think your kids will love to help you peel the potatoes, or even sprinkles the cheese on top of  your delicious Homemade Sunshine Skillet. Yes!sounds like fun right? I can't wait to get started and I think you too!!
But before we start cooking! I'll just want to share with you, how I ended up making my own version of Bob Evans famous "Sunshine Skillet" Yes! We eat out 3-4 weeks ago at Bob Evans, and we fall in-love with their Sunshine Skillet. So, when my hubby celebrated his birthday not too long ago. I decided to make my homemade version of Sunshine Skillet. Let me tell you! It was fantastic breakfast. Although, the gravy is not that perfect as Bob Evans but its pretty close. Yum!
Getting back to that excitement! Let's make this Sunshine Skillet right now. Don't forget to have fun and explore this new recipe.

* This recipe is good for 2 serving only. Adjust the quantity of the ingredients for larger crowd. Also you can add your favorite vegetables into the mix if you want. :)

Homemade Sunshine Skillet Recipe:

Ingredients:
3-4 medium size potatoes- cut into cubes
8 oz sausage
Cheddar Shredded Cheese
4 beaten eggs
1 pack gravy mix
salt and Pepper- to taste
2 tsp butter
1-2 tsp cooking oil

Directions:
1.) Cooked the potatoes and sausage in separate skillet. Once it cooked and turn golden brown. Set aside.
2.) Make the gravy according to the package instructions. Which a super easy process! I promise:) Once the gravy is done. Turn the heat into LOW to make sure that its hot.
3.) Time to make the eggs. In medium size skillet, add little butter. Add the 2 beaten eggs and let it cook through both side. Once both side are cooked, transfer it to the serving bowl. (Repeat the process#3 for the other bowl)
4.) Once the cooked eggs is on the bowl, you can now add the cooked sausage and potatoes. File them up!! then pour the gravy on top. Then, sprinkle with lot of cheddar shredder cheese.
5.) Enjoy your Homemade Sunshine Skillet Bowl with your family. Yum! #perfectbreakfast



Aside from perfect breakfast that I made for the whole family. I also made a yellow cake with chocolate icing for my hubby. It's kinda like a tradition here to have a delicious cake on birthday's and hubby is no exception.  We surely did enjoyed and had a blast on hubby's birthday. The birthday celebration at my in-laws house is GREAT! It was so much fun hanging out with family eating good food and just enjoying everyone's company.

Super easy and quick to make and surely impress everyone taste buds. Anyways, This American Craft  Sausage with Black Beans and Rice recipe is so forgiving you can totally used whatever you have vegetables on hand,Delicious! I used the American Craft - Garlic and Onion sausage on this recipe, Oh my! the flavor of the sausage is really good.  American Craft Sausage with Black Bean and Rice Recipe




Notes: Grilling the sausage is optional. Used whatever vegetables in hand and taste according to you preference.

Ingredients:
1 pack of Hillshire Farm American Craft Garlic and Onion Sausage
1 can of Black Beans 14 oz- rinsed and drained
2 tomatoes chopped- combination of green and red tomatoes
1 small onion- sliced
2 stalk of green onion
1 green chillies- optional
Salt and Pepper- to taste
2 tsp. of cooking oil

Directions:
1.) Grilled the sausage to achieved that bold and grill flavored. Then chopped it into bite pieces. Set aside.
2.) Step one is optional its all up to you. Chopped the vegetables you have in hand, Drain and rinsed the black beans. Set aside.
3.) In large pan heat up the cooking oil on medium heat. Add the chopped grilled sausage and the vegetables.
4.)  Add the black beans, Salt and Pepper to taste. This recipe is so forgiving, add water if you need too. Let it stand for 5-6 minutes.
5.) Done! Served it on the top of rice or it could be your next favorite side dish.:) Enjoy!

Sauteed Kale with Sausage


 We are officially move in to our new place called- HOME! nothing feel sweeter than this..It does take a lot of work to moved luckily for us we got some help from family and friend that makes work easier and faster for us. It took me 3 days to settled down into our new place, putting all the stuff away and cleaning. We still have a lot of stuff to do but we have forever to do it, little bit a time.
Moving forward! what you gonna say about KALE this week for dinner? Honestly, I haven't tried kale before, I just little intrigue about it when my co-worker talked about how she loved kale, the next thing I know, I found myself buying kale the next day...(hahah) that just typical me, I'd like to explore the flavor behind food. Thinking about adding some green onto our diet... So, here I am preparing Sauteed Kale with Sausage for dinner. It just happened that we have left over sausage from breakfast the other day but you can totally replaced the sausage with the meat of your choice or just leave it as simple as it is. I wasn't sure if my kids gonna liked it, So, I was smiling looking at at their faces when they took the first bite.. I surprised myself, they liked them..:) I also loved them too, I think it taste good..:) Try this Kale recipe on your next meal or vegetable stir fry.
Below is the recipe for Sauteed Kale with Sausage proven and tested on my own kitchen. Cmon lets start for your next family dinner favorite..(wink)

How to find fresh Kale and keep it fresh?
 -To find the freshest kale, look for firm, deeply colored leaves with hardy stems. Smaller leaves will be more tender and milder in flavor. Leaves range from dark green to purple to deep red in color.
-Store kale, unwashed, in an air-tight zipped plastic bag for up to five days in the refrigerator.

Ingredients:
8 ounces sausage
1 bunch Kale
1/2 cup beans- optional
Salt n Pepper- to taste
onion
garlic
2tsp. cooking oil
1 tsp. butter

Directions:
1.) Put water in large pot, around 4-5 cups. Let it boil; Meantime, Remove the tough center stalk of the kale then roughly chopped. Throw the chopped Kale onto the boiling water and let it boil for like 2 minute. Remove from the pot and drained.
2.) Meanwhile, put the oil and butter together in the skillet. Add the sausage let it cooked until golden brown. Add the onion and garlic sauteed until translucent.
3.) Add the Kale and beans; salt and pepper to taste. Let it simmer for 2-3 minutes. Add little water if it dry out.
4.) Remove from the heat. Best served when its hot. Enjoy!



Notes:
- taste according to your preference.
- Add your choice of meat and your favorite seasonings.
- Beans is optional so you can totally replaced it with something you like.

Easy Spaghetti

Pasta is the second most consumable food in our household next to rice.

Macaroni, Rotini, Spaghetti noodles is just few dried pasta always present in our pantry. I'd like to make easy quick dinner using dried pasta every once a week and Spaghetti is one them :)
This Spaghetti is no different from the rest of spaghetti  recipe flooding on the internet. As, you know ME :). I'd like to keep my recipe short and simple yet taste delicious. This Spaghetti is our family's favorite dinner, their super easy to make and my kids loved them. 
Every person I know, knew how to make spaghetti, they even have their own version on how to make them, and there all delicious!!. It makes me happy knowing the stories behind their recipes.
 I like my spaghetti with sweet meat sauce like sausage, ground beef whatever available at the house and top with cheese. What do you like with your spaghetti?
Below is my version of Spaghetti:)

Ingredients:
Spaghetti noodles
Italian Sausage
Pasta Sauce- (store bought)
Cheese
Garlic
Onion
Sugar
Salt and Pepper- to taste
 2 tsp. cooking oil

Directions:
1.) Cook the pasta in large pan according to the package direction. Drain and set aside;
2.) Put oil in large pan, sauteed the onion and garlic until translucent. Add the Italian sausage cooked until golden brown.
3.) Add the pasta sauce, salt and pepper and little sugar. Let it simmer for like 5 minutes
4.) Add the cooked pasta into the spaghetti sauce. Let it stand for couple minutes until everything incorporate.
5.) Taste according to your preference. Serve hot! top with your favorite cheese and  with garlic bread on the side. ENJOY~

 I grew up eating vegetables. My Mom always have the way making all kind of vegetables taste so yummy. Just combine all the vegetable harvested on the farm, throw it on the pot and whoala! delicious and healthy dinner for whole family. I remember growing up, I helped my parents plating corn, sweet potato, cassava and much more on our farm. Now that I'm thousands miles away from them, sometimes kinda missing those times. So, I made this Vegetable Stir Fry on our New Year's Party recipe from how I remember my Mom made it. It felt like I'm celebrating with my family too:)  I just add little twist to it, I add some Italian Sausage. It's yummy, you gonna keep coming back for more!

Ingredients:
Green Beans
Carrots
Bokchoy
Cabbage
Zucchini
Summer Squash
Green and Red Bell Peppers
Onion
Garlic
Oil
Salt 'n Pepper- to taste

Directions:
1.) Put oil on the pan, add the sausage and let it cook. Add the onion and garlic and sautee.
2.) Add all the vegetables and let it simmer for couple minutes.
3.) Stir and season with salt and pepper. Let it stand for 2 minutes or so.
4.) Serve as side dish or entree.

Tips: Try to add some ( ginisa mix) and its gonna be big hit. Substitute the sausage with meat of your choice or make it pure vegetarian style.
