Mini Loaf Bread Recipe


Happy Mother's Day to my Mom and to all Mommies out there!:)
I would consider this Sunday as extra special one. It's time to give thanks, love and appreciation to our Mom's whose been such a great example. I'm the eldest among three siblings and me and my Mom is so close to each other. She taught me a lot of things in life, the person I can count on, lean on and asked advice for. She's such a great Mom! So, Today, in honor of Mother's Day. I made something that remind of my Mom and those unforgettable memories of my childhood. This Mini loaf Bread is made with sweet bun with sweet ube coconut filling. Yum! Which my family's favorite! Are you big fan of UBE and sweet coconut filling? This recipe is so perfect for any occasion like birthday's, potluck party and giveaways for parties. I'm sure any Mom's would appreciate the love and effort you put into to express how much you love and care for them. Come on and join me in my kitchen and lets start baking some sweet good for all the sweet Mommies out there.

Notes:
- Choice your favorite filling for the bread. It could be ham and cheese, monggo, ube or sweet coconut filling.
- Personalized the bread the way you want it to be.

Ingredients:

3 1/2 cups bread flour                        
2/3 cup- Lukewarm water                 
2/3 cup- Lukewarm milk                   
1/4 cup sugar                                  
1/4 cup butter melted                          
1 pack yeast  ( 2 1/2 tablespoon)                                         
1 1/2 tsp. salt
  
Filling:
Ube Yam- store bought
Shredded coconut and brown sugar- combine this two ingredients.

Directions:

1.) Mix the flour, sugar, salt and yeast on the big bowl ans set aside.
2.) Pour the lukewarm water and lukewarm milk into the dry ingredients and mix it well.
3.) Pour the melted butter into the mixture, mix well. Knead the dough until the dough is smooth and elastic bout 15 minutes or so.
4.) Let it rise for 1-2 hours
5.) Divide the dough into 4 pieces. Flatten each divided dugh, using the rolling pin, roll it until its big enough to fill the sweet ube coconut filling.
6.) First put the ube paste on the flatten dough, spread it around. Add the coconut filling. Fold both ends, and roll make sure it will fit on the mini loaf pan that you prepared.
7.) Let the filled dough rise for like 30 minutes. Meantime, preheat the oven onto 350 degrees
8.) Brush with eggwash and bake all four mini loaf for about 15-18 minutes until its golden brown on top.

 Let's make this day extra special and give your Mom's a lot of hug and kisses. We are going to my in-laws house today in celebration of Mother's Day. It's going to be FUN and I'm excited!!   11. Naku sis, Daddy is so into baking to think that we only have an oven toaster right now. How much more pa if we really have an oven. I'm thinking of buying a real one the soonest because Matt will be in school in June na e.
