Tortang Talong Recipe

Tortang Talong (Eggplant Omelet) Ultimate Breakfast Experience 

 


Hello Everyone!:)
It's been a super busy week for me and my family. It's holiday season (what can I say?) but, I'm excited that I finally get a chance to sit down and update my blog (wink:)  It's super exciting because its my first blog of the month and two weeks more to go and its Christmas. Yippeee! The recipe that I'll be sharing today is one of my favorite. I made Tortang Talong and It's totally a delicious experience. It gives me inspiration to do some of my Christmas shopping today. It just happen so fast, so quick, but I made progress when it comes to buying gifts. Holiday season is always special and fun to celebrate with family and friends. Let's keep this holiday spirit fun and exciting by making this Ultimate Tortang Talong Recipe. What the best thing I like this recipe? its budget friendly, delicious and totally take you back home.

Notes: Adjust the quantity of the ingredients for larger crowd. Enjoy!

Tortang Talong Ingredients:

2-3 Chinese Eggplant cooked
2 Large Eggs
1 medium size onion chopped
1 tomato chopped
Salt and Pepper- to taste
Cooking Oil

Directions:
 1. First, cooked the eggplant by either grilling or boiling process. In this recipe, I choose to cooked the eggplant by letting it sit in a boiling water for about 5-8 minutes. Took the eggplant out in a boiling water. Set aside.
2. While waiting for my eggplant to cool down. I chopped tomatoe, onion, and  beaten the two eggs in a separate bowl.
3. Grab the cooked eggplant. Make sure you retain the crown and the stem of the eggplant. Gently flatten the eggplant meat by using fork.
4. Put3-4 tsp oil in large non-stick skillet.Combine the beaten eggs, chopped onion and tomato, salt and pepper. Then, dip the eggplant into the egg mixture and slowly put it on the hot skillet. I add more egg mixture on the eggplant and make sure that it well distributed.
5. Fry until golden brown on one side, then turn and brown the other side. Drain on paper towel.
6. Serve hot and Enjoy!

I'm so proud that I finally made my ultimate Tortang Talong Breakfast Feast! I know its look a lot but when your craving for something that you wanted for so long. It just a rewarding feeling and I truly enjoyed my breakfast, every single bite of it. Yummo! I love my Tortang Talong paired with tuyo and of course my favorite drink. 
Tortang Talong is definitely one of my favorite Filipino food. Its budget friendly, delicious, and super easy to make. It has all the components of a perfect bite. Do you agree?

Easter is something that I look forward, the festive celebration, the egg-hunt, and egg decorating is just so much fun bonding moments for the whole family. This year, I'm really excited! because my kids is now at perfect age, were they expresses their excitement and thoughts about Easter, and that makes me so happy. To pump it up to the next level-  Two days ago, I started shopping for my kids Easter egg basket and came up with this Awesome Easter Ideas. I can't wait to share my kiddies Easter basket. Also, I'll be sharing some sweet recipes, tips, and ideas for awesome Easter celebration. Are you excited? Let's go!

Shopping for Easter Basket: I shopped a week before Easter, where mostly are on SALE. Yes! saving money on things you buy is so much FUN.
Tips: Use coupons, rewards cards, and take advantage on store sales and discounted products. Seasonal products like Easter candies, basket and eggs usually go on sale, paired that with coupons. Awesome!

A Perfect Easter Basket: Aside from sweet chocolates and candies that you put on your Easter egg. You can also put some cute little things like hair ties, nail polish, lip gloss, and coins. Make it FUN!

Now that we got everything we need for Easter Basket. Let's start!
- Lay piece of paper on the bottom of the basket, to avoid Easter grass from falling out. I used two color of shredded paper on mine as my Easter grass. (Blue and White)
- Put a piece or two candies on the each plastic eggs.
-Once the plastic eggs is all filled with candies. It's time to start putting them on the basket.
- Whoala! Easter basket for kiddies is DONE
Tips:
Used travel size lotion, body wash and hair clips to make more fun. Also used your kids favorite CANDIES.:)



Easter Egg-hunt Ideas:

- Invite your family and friends 3-4 weeks before Easter.
- Scatters the eggs before the egg hunt begin. I suggest hide it all over the house, or if you have big backyard that would be great as well. Make it fun and colorful by using different colors of eggs.
- Make the Easter gathering fun, easy and stress free by letting your friends and family bring some dish to share. Yum!
-Enjoy the moment with your family on Easter and have fun watching the kids hunting for their eggs.

 Egg Decorating with Fiora temporary tattoos:

Aside from the most awaited Easter celebration and making my kiddos Easter basket. I'm also very exited when it comes to egg decorating. Yes! this is something that I look forward to this year. Together with my kids, we dye 6 eggs and color them using an egg coloring. I invited my friends to come over to join with our egg decorating to make it more fun and festive for the kids.We used our Fiora temporary tattoos samples to decorate the eggs. Buko Pie Recipe

Simply Homemade -Buko Pie Recipe



Sweet Morning Everyone!

 How you guys doing? It's been a hectic and cold week for me! Yup- its already snowing here in my place! I love the snow but not really liking the cold though. It's been like 3 weeks since my last blog post and I missed you all! Anyways! Whose excited for some Buko Pie?? It's been like forever since I had my last sliced of  this Filipino delicacy, Can you tell?. So, I challenge myself to make some Buko Pie-- and it went perfect! I felt nervous at first but after I made the Pie filling I'm just on it! Wohoo! I'm just so happy that the pie turned out good and its delicious!  I promise:)
On this recipe I used frozen young coconut meat that I bought from Asian store. I would recommend to used fresh coconut if you have some (can't beat fresh coconut meat and buko juice on this recipe). I also made a  homemade pie crust for top layer of the pie but you can totally grab some at the store all ready for you. This Buko Pie reminds me back home! A perfect treat anytime of the day. I can't wait to share my first buko pie experience with you all. I'm getting excited just by writing about this recipe (hahah) I hope you too! Are you ready to make some Buko Pie?  Notes: Store bought pie crust is good for easy cooking. If want to make your own pie crust. I got a recipe for you below that I used for the top layer of the pie. Just double the recipe if you decide to make the bottom and the top layer of the crust.
-Adjust the cooking time if you have to,:)

Ingredients:
Buko Pie Filling :
1 (16oz) Frozen young coconut meat- thawned
3/4 cup sugar
1/2 cup cornstarch diluted in 1/2 cup young coconut water
1/2 cup milk
Frozen Pie Crust- store bought

Butter flaky Pie Crust
1 1/4 All purpose flour
1/2 teaspoon salt
1/2 cup butter- chopped
1/4 cup Ice cold water or 1/4 cup 7up or Sprite soda



Directions:
First let's start make the filling:
1.) In medium pan. Heat up the milk. Add the sugar and stir well.
2.) Meantime, combine the cornstarch and coconut juice- set aside.
3.) Once the milk boils. Add the coconut meat include the juice and let it cook for 3-5 minutes.
4.) Add the diluted cornstarch and stir to avoid lumps.
5.) Keep stirring until the pie filling is cooked. Turn off the heat and cool down.

Pie Crust:
1.) In large bowl combine the flour, salt, chopped butter. Mix the mixture.
2.) Add the water or lime soda and mix well. Put the dough in the baggie and keep it refrigerated until you ready to used it.
3.) Sprinkle little flour on the board, roll the dough until you achieve the right thickness.
4.) Covered your buko pie with your homemade pie crust. Trim the side, used fork to seal the edge of the pie and for cute decoration on the side as well.
5.) Poke the pie on the middle and on the side. Brush with egg-wash to achieve that golden brown color.

BAKE at 375 preheated oven for 40-45 minutes

This Buko Pie reminds me back home. I would say very close to what I used to eat back in Pinas. The buko pie filling is not to sweet, perfect blend with coconut meat paired with flaky crust. Perfection!  My kids love this pie and so do I ( Shhhh! I already have 2 slice since I woke up..wink! ) Let me tell you something! this Buko Pie is great with your coffee or hot chocolate in the morning. Yum!  Since holiday is right around the corner, what about a perfect gift for friends and family? Pork Sinigang na may Gabi Recipe

Pork Sinigang with Taro roots and Vegetables



Hello Everyone!
Yippee! It's weekends wohoo!I'm excited because one of my good friend is celebrating her birthday today and we are going! It's going to be fun day, pigging out delicious food and great company with my friends and family. Do you have any plan for this weekend with your family? What ever your plans maybe, just have FUN! Anyways, talking about food and recipes- the latest on the list is my Sinigang na Baboy na may Gabi. I know the title kinda long and hard to remember. wink:) Basically, its kinda like Pork Sinigang that I made couple months ago but this one have a taro root instead. YUM! So, perfect for rainy and cold days. I can totally picture myself eating this dish anytime of the day, because this is one of my favorite.
The inspiration behind this dish was when I saw the Knorr Seasoning mix while I shopping at one of my favorite store. The next thing I know was, I see myself looking for some GABI or Taro roots which is available mostly on Asian store. Taro roots makes the soup more condensed and taste scrumptious but if you can't find one just substitute with potatoes or totally skip it. This recipe is very forgiving or I called it FREE Recipe because you can totally make your own version and add whatever kind of vegetables you want. Are you ready to make some Sinigang with Gabi?? NOTES- Adjust the taste according to your preference. Add your favorite choice of meat and have FUN!

 Sinigang na Baboy na may Gabi Recipe

Ingredients: 
Pork- cut into desire pieces
Bokchoy/Petchay- sliced
Knorr Sinigang na may Gabi Mix
Gabi/ Taro Roots- chopped
Corn on the Cob
Ginger
Onion
Green Onions- slice

 Directions:
1.) Put 4-5 cups of water in large pot. Let it boil. Add the ginger and onion, wait for couple minutes and then add the cut pork. Let it boil for like 20 minutes.
2.) Add the corn, taro roots and let it cooked for 10 minutes. Once the vegetables is cooked. Add the Bokchoy/Petchay and green onion. 
3.) Add the Knorr seasoning mix ( NOTE: Adjust the taste according to your taste preference, add little bit more if you want more sour taste) Salt and Pepper to taste. 
4.) Turn off the heat and let it set for couple minutes until the Bokchoy/Petchay is cooked.
5.) Serve it HOT over rice and ask your friends to come over. ENJOY!:)

Macaroni Salad Espesyal Recipe


Hello Everyone! I'm back with another delicious recipe. Yay! My ultimate favorite dessert Macaroni Salad Espesyal. It is special because I made this in celebration of my 26th Birthday last week. It was a joyful and fun birthday celebration with my loving family and friends...cheers!
Last year, As you may remembered I made a very simple macaroni salad recipe .I love those too, but this one its even better. I'm talking about irresistibly good ( hahaha) Can't stop thinking about it and can't stop eating it... Since, It was serve on special occasion. I made it extra special loaded with my favorite ingredients. I wish I have more kaong colors but other than that, Its still very festive and delicious! Try my new version of macaroni salad and as I promise! this is going to be your next favorite dessert and so perfect for potluck party. .wink:)
Who want some Macaroni Salad Espesyal??? C'mon over to my place!! if not!!:( I hope this recipe will satisfy your cravings). C'mon join me in my kitchen and let's make this delicious dessert!

NOTE: Double the ingredients for larger crowd.
             Adjust the taste according to your preference.
             Feel free to add as many ingredients as you want.

Ingredients:
1 box of Macaroni Noodles (16oz)
1 Jar 14oz kaong
1/2 Jar of 14oz. macapuno String
1 can 16oz or larger of DOLE tropical fruit- cut into desired pieces
1 can 14oz. condensed milk
1 can 7.6oz nestle table cream
1/2 cup mayonnaise

Directions:
1.) In the large pot, cook the macaroni noodles according to the package instruction. Drain it really good and let it cool.
2.) Drain the Dole tropical fruit, Kaong and macapuno string separately.
3.) In large bowl combine the  cooked macaroni noodles, slice tropical fruit, kaong, macapuno string, cream, mayonaise and the condensed milk.
4.) Mix everything together. For best result let it chill in the refrigerator for like 4-5 hours or overnight.
5.) Enjoy your delicious macaroni salad with friends company..:)
