I'm calling all the Mango lovers out-there to try this super easy scrumptious Mango Cake recipe. I'm extremely excited about this recipe because I LOVE Mango Cake! It is actually one of my favorite and been wanting it for long time. When I made my first Mango Cake the other day, I was so stoked with the results. I couldn't asked for more, it was indeed DELICIOUS cake! Officially, my kids are now Mango Cake fanatic. Awesome right? I hope you guys are all excited as we unfold how easy it is to make this Homemade Mango Cake at the comfort of your own home. Let's get started, shall we? :)

I know you guys are excited to make this Mango Cake. BUT, before we get into baking. Let me give you an overview on some of the ingredients that I used on this recipe. Stared off with the main ingredients.
Mango- I highly recommend to use fresh ripe mangoes on this recipe. In case its not available, I think frozen or can mangoes will work just fine.
Cream Cheese Icing- feel free to use your favorite icing recipe but I prefer store bought.  The last ingredient that I'd like to introduce to you is this amazing  NEW Truvía® Nectar blend  Truvía® Nectar has 50% fewer calories per serving than sugar and adds a touch of sweetness wherever you would use agave, sugar or honey. Blended with Stevie leaf extract and honey. Its reduced-calorie way to love honey. I received this Truvia Nectar Blend for free courtesy from Crowdtap and TruviaCrowd I'm really pleased and happy with this product, its perfect pair that added sweetness into my Mango Cake recipe. Indeed a perfect blend of flavors. Yum! Here we go with the recipe!:)

Note: Make this Mango Cake as your own recipe. Adjust the taste according to your preference!:)

Mango Cake Recipe

Ingredients:
(3) Ripe Mangoes- chopped
1/2 teaspoon Truvia Nectar Blend
Cream Cheese icing
Non-stick cooking spray
(2) round baking pan for double layered cake
(1) 15.25 oz white cake mix
1 cup water
1/2 cup vegetable oil
3 eggs

* Preheat oven to 350 degree Fahrenheit

Mango Creme Filling - to make the mango creme filling. Simply placed the chopped ripped mangoes into a bowl. Add 1/2 teaspoon of Truvia Nectar Blend for sweetness. Stir until thoroughly combine. Set aside.

Cream Cheese Icing with Mango Bits- to make cream cheese mango bits icing is extremely easy. Just simply combine the store bought icing of your choice, add ripped mashed mangoes and stir until combine. Set aside


Directions: 
1.) To make the cake batter. Simply follow the directions on the back of the cake mix. Mix,  1 cup water, 1/2 cup oil, 3 eggs in large bowl with mixer on medium speed or by hand for 2 minutes. Add finely chopped mango into the mix.
2.) Spray the pan with non-stick cooking spray. Pour the cake batter into pan. Bake at 350 degree Fahrenheit preheated oven for 25-30 minutes or until golden brown. Cool for 10 minutes before removing from the pan. Cool completely before frosting.
3.) As you can see on the photo above. I put frosting on the cake before adding the next layer. This will allow the cake to stick  together make it easy for frosting process. I also lay parchment paper on the bottom for easy clean up after I frost the cake.
4.) Make sure that the whole cake is covered with icing. Then, put the Mango Creme filling on the top of the iced cake. Add the remaining icing on the side to secure the Mango Creme filling from falling out to the side.
5.) There you go folks. Enjoy your Homemade Scrumptious Mango Cake with Truvia Nectar Blend. Share this delicious cake to your family and friends. Enjoy!




 Every single bite of this Mango Cake reminds me back home. The Mango flavor is truly the highlight of this delicious treat. Chocolate-Filled Crescents Recipe

Easy Chocolate Crescents for Dessert

Summer is finally here at Campbell's place. Wohooo! excitement overload- Yes! we are heading to Outerbanks once again with my lovely family for vacation. I simply can't contain myself from excitement! (Oh yeah! lets bring the hottest dance music Watch Me (Whip/Nae Nae) for inspiration hahaha ) 
Anyways, I'm really excited to share with you my latest favorite dessert the Chocolate- Filled Crescents. Yum! It's super easy, fast and delicious dessert that surely your family and friends will loved. I personally loved this recipe, its simple yet so delicious! It's number one dessert requested in my household right now. Indeed my kids loved some chocolate-filled crescents. I can't wait to make more of this scrumptious dessert soon. Yummo! I got the original recipe from Allrecipes.com and made my own version which I'll be sharing here on my blog.
Let's get this excitement going! Come on join me as we make this super easy and delicious dessert.


 Note: This recipe makes 8 chocolate filled crescents. You can sprinkle powdered sugar at the end if desired. Double or triple the recipe for larger crowd. Enjoy!
Ingredients:

1 (8 oz) Refrigerated Crescents  Dinner rolls
1 cup chocolate chips- used any chocolate chip you have on hand.
Butter- optional
powdered sugar- optional

Directions: 
1. Heat the oven into 350 degrees Fahrenheit. Separate the crescents rolls dough into 8 triangles.
2. Spray the cookie sheet with non-stick cooking spray and set aside. 
3. Place tablespoon of chocolate chip on wide end of each triangle. Roll up the crescents dough, rolling into the opposite side. Place on greased cookie sheet.
4. Brush the chocolate-filled crescents dough with melted butter this is totally optional.
5. Bake at 350 for 15-20 minutes or until golden brown. You can sprinkle with powdered sugar if desired.

Easy Southwest Pizza Recipe


Hello Everyone!

I'm back again with another awesome, fun, and easy recipe for you to try this weekend. YES! A super easy Southwest Pizza- Yum! and its so good, seriously good! Can you tell that I'm so excited writing about this recipe at this moment? I can't content myself. (hehehe)
I actually found this recipe on a circular ad while browsing through weekly sales. Let me tell you- I'm so glad I did try the southwest pizza recipe, because its just simply scrumptious. My kids did not even noticed the black beans that I put on the pizza, totally loved it!
The recipe below is good for 4-6 serving. I suggest to double the quantity for larger crowd. I also think that you can add some of your favorite toppings like lettuce or tomato on top since its kinda like a taco pizza. BUT, if you want to keep it simple just like mine then no need to add extra toppings. Are you all ready to make some southwest pizza? Come on and check out the recipe below. Happy cooking! Ingredients: 

1/2 cup- drained, rinsed black beans
2 tablespoon of Taco seasoning mix
1 can of 8 oz tomato sauce
1/2 pound ground beef
1 prebaked pizza crust (12-inch)
1 cup shredded cheese
1/4 cup sliced green onions


Directions:

1.) Preheat oven to 450 degree Fahrenheit.
2.) In separate bowl. Combine the tomato sauce, taco seasoning mix and drained, rinsed black beans. Set aside.
3.) Cooked the ground beef into a medium size skillet for 10 minutes or until golden brown. Drained and set aside.



4.) I sprayed the baking pan with non-stick cooking spray and spread the prebaked pizza crust.
5.) Spread the sauce mixture on the top pizza crust. Add the cooked ground beef on top, cheese galore and the green onion.
6.) Bake for 12-15 minutes or until the crust is golden brown and the cheese are melts.
7.) Enjoy and serve it hot! Yummm!!:)

I know its kinda different from your typical pizza night but this recipe is so good. Kinda like a combination of taco and pizza night together. So scrumptious and super easy to make, so perfect for taco/pizza family night or even potluck parties.

Homemade Sunshine Skillet Recipe

Super Easy Breakfast Recipe and Hubby's Birthday Celebration


Hello Everyone!

 How are you doing today? I know you guys are excited because  the weekends is here. Yippee! I am excited too- I have to spend and enjoy this beautiful weather with my family. To make this weekend a perfect one. What about a super easy and fun recipe to try this week? Yup! I think your kids will love to help you peel the potatoes, or even sprinkles the cheese on top of  your delicious Homemade Sunshine Skillet. Yes!sounds like fun right? I can't wait to get started and I think you too!!
But before we start cooking! I'll just want to share with you, how I ended up making my own version of Bob Evans famous "Sunshine Skillet" Yes! We eat out 3-4 weeks ago at Bob Evans, and we fall in-love with their Sunshine Skillet. So, when my hubby celebrated his birthday not too long ago. I decided to make my homemade version of Sunshine Skillet. Let me tell you! It was fantastic breakfast. Although, the gravy is not that perfect as Bob Evans but its pretty close. Yum!
Getting back to that excitement! Let's make this Sunshine Skillet right now. Don't forget to have fun and explore this new recipe.

* This recipe is good for 2 serving only. Adjust the quantity of the ingredients for larger crowd. Also you can add your favorite vegetables into the mix if you want. :)

Homemade Sunshine Skillet Recipe:

Ingredients:
3-4 medium size potatoes- cut into cubes
8 oz sausage
Cheddar Shredded Cheese
4 beaten eggs
1 pack gravy mix
salt and Pepper- to taste
2 tsp butter
1-2 tsp cooking oil

Directions:
1.) Cooked the potatoes and sausage in separate skillet. Once it cooked and turn golden brown. Set aside.
2.) Make the gravy according to the package instructions. Which a super easy process! I promise:) Once the gravy is done. Turn the heat into LOW to make sure that its hot.
3.) Time to make the eggs. In medium size skillet, add little butter. Add the 2 beaten eggs and let it cook through both side. Once both side are cooked, transfer it to the serving bowl. (Repeat the process#3 for the other bowl)
4.) Once the cooked eggs is on the bowl, you can now add the cooked sausage and potatoes. File them up!! then pour the gravy on top. Then, sprinkle with lot of cheddar shredder cheese.
5.) Enjoy your Homemade Sunshine Skillet Bowl with your family. Yum! #perfectbreakfast



Aside from perfect breakfast that I made for the whole family. I also made a yellow cake with chocolate icing for my hubby. It's kinda like a tradition here to have a delicious cake on birthday's and hubby is no exception.  We surely did enjoyed and had a blast on hubby's birthday. The birthday celebration at my in-laws house is GREAT! It was so much fun hanging out with family eating good food and just enjoying everyone's company.

Buko Pie Recipe

Sweet Morning Everyone!

 How you guys doing? It's been a hectic and cold week for me! Yup- its already snowing here in my place! I love the snow but not really liking the cold though. It's been like 3 weeks since my last blog post and I missed you all! Anyways! Whose excited for some Buko Pie?? It's been like forever since I had my last sliced of  this Filipino delicacy, Can you tell?. So, I challenge myself to make some Buko Pie-- and it went perfect! I felt nervous at first but after I made the Pie filling I'm just on it! Wohoo! I'm just so happy that the pie turned out good and its delicious!  I promise:)
On this recipe I used frozen young coconut meat that I bought from Asian store. I would recommend to used fresh coconut if you have some (can't beat fresh coconut meat and buko juice on this recipe). I also made a  homemade pie crust for top layer of the pie but you can totally grab some at the store all ready for you. This Buko Pie reminds me back home! A perfect treat anytime of the day. I can't wait to share my first buko pie experience with you all. I'm getting excited just by writing about this recipe (hahah) I hope you too! Are you ready to make some Buko Pie?  Notes: Store bought pie crust is good for easy cooking. If want to make your own pie crust. I got a recipe for you below that I used for the top layer of the pie. Just double the recipe if you decide to make the bottom and the top layer of the crust.
-Adjust the cooking time if you have to,:)

Ingredients:
Buko Pie Filling :
1 (16oz) Frozen young coconut meat- thawned
3/4 cup sugar
1/2 cup cornstarch diluted in 1/2 cup young coconut water
1/2 cup milk
Frozen Pie Crust- store bought

Butter flaky Pie Crust
1 1/4 All purpose flour
1/2 teaspoon salt
1/2 cup butter- chopped
1/4 cup Ice cold water or 1/4 cup 7up or Sprite soda



Directions:
First let's start make the filling:
1.) In medium pan. Heat up the milk. Add the sugar and stir well.
2.) Meantime, combine the cornstarch and coconut juice- set aside.
3.) Once the milk boils. Add the coconut meat include the juice and let it cook for 3-5 minutes.
4.) Add the diluted cornstarch and stir to avoid lumps.
5.) Keep stirring until the pie filling is cooked. Turn off the heat and cool down.

Pie Crust:
1.) In large bowl combine the flour, salt, chopped butter. Mix the mixture.
2.) Add the water or lime soda and mix well. Put the dough in the baggie and keep it refrigerated until you ready to used it.
3.) Sprinkle little flour on the board, roll the dough until you achieve the right thickness.
4.) Covered your buko pie with your homemade pie crust. Trim the side, used fork to seal the edge of the pie and for cute decoration on the side as well.
5.) Poke the pie on the middle and on the side. Brush with egg-wash to achieve that golden brown color.

BAKE at 375 preheated oven for 40-45 minutes

This Buko Pie reminds me back home. I would say very close to what I used to eat back in Pinas. The buko pie filling is not to sweet, perfect blend with coconut meat paired with flaky crust. Perfection!  My kids love this pie and so do I ( Shhhh! I already have 2 slice since I woke up..wink! ) Let me tell you something! this Buko Pie is great with your coffee or hot chocolate in the morning. Yum!  Since holiday is right around the corner, what about a perfect gift for friends and family? Semi- Homemade Baked PUTO/ Rice Cakes Recipe



Weekends is here! and It's Valentines Day a perfect day to have a dinner date with your love ones. I would prefer home cook meal with family to avoid the crowd folks whose also dining out tonight and to get that relaxing feeling at the comfort of your home. While waiting for hubby to come home, I made my kids their favorite treats. As if, getting candies and chocolate this morning is not enough. It's Valentines and I'd like to spoiled them and its their favorite.. Bake Puto/ Bake Rice Cakes in 4 different colors. This is not a typical way of cooking PUTO but the taste is still have that delicious and soft traditional puto.
 Its called Semi- Homemade because I used a store bought Puto Mix which can be found any Asian store BUT if you do have a good recipe for Puto Cheese I would love to try it. Share me the recipe on my comment box below. As you may noticed I BAKED my puto instead of a traditional way " Steaming" process, for the reason that I don't have those puto mold cups. So, to those who don't have puto cups used for steaming and want that perfect PUTO on your table. This is the perfect recipe for you.!Super duper easy to make and it come out perfect every time. I forgot to mention that it also work if you like your PUTO steamed, add your favorite cheese on top! Delish.. This is perfect for your kids party or merienda at any time. It's cute and fun way to mixed up their favorite color into this yummy treats. Give this a try and let me know what you think. I enjoyed eating this scrumptious treat. YUM! A little knowledge from Wikipedia about PUTO:)
 Puto is a kind of steamed rice cake in Philippine cuisine derived from the Southern Indian dish Puttu. It is eaten as is or with butter and/or grated fresh coconut, or as an accompaniment to a number of savoury viands (most notably, dinuguan).-(source:wikipedia )



 Notes:
- Box of White King Puto Mix consist of two pack. In this recipe I only used (1 pack) good enough to make 24 mini bake rice cakes ( puto ) BUT if you decide to used the (2 pack) double the ingredients. 
- If you like to have bigger PUTO used a bigger muffin tin and adjust the cooking temperature.

Ingredients:
1 box White King Puto Mix- ( I only used one pack on this recipe)
2 tablespoon oil
1 cup water
1/2 cup granulated sugar
food coloring- purple, green and pink
small muffin cups
non-stick cooking spray

Directions:
-Preheat the oven to 350 degrees
1.)  In large bowl combine 1 pack of Puto Mix, granulated sugar, water, and oil. Mix well.
2.) Divide the the puto mixture into 4 parts. Drop food coloring on each bowl according to your preference and mix well.  I used pink, purple and green ( my kids favorite colors)
3.)  In small muffin tin, line the muffin cups. Spray with cooking spray. Add teaspoon of Puto mixture or until its halfway through. It should covered the 24 mini puto cakes.
4.) Bake the 24 puto for 10 minutes. Viola!!! Enjoy..:)

 My week was pretty busy lately, So, this semi-homemade pizza was become my inspiration. I never made  homemade pizza before, when I saw this Betty Crocker Pizza mix at the store, I didn't have to think twice to give it a try. There's instruction on the back that makes me more excited than ever.. hahaha. How could you go wrong with this pizza mix, aside from easy instruction on the back of the package, the ingredients also is very simple and easy to find at the grocery store. This is like perfect meal for busy day. It turn out good and I loved it! you can change the pizza toppings whatever you like. What's your favorite pizza toppings?
Below is the ingredients of my version of semi-homemade pepperoni pizza.
Ingredients:
1 pack betty crocker pizza mix (6.5 ounces )
6 ounces pepperoni
1 cup mozzarella cheese
2 tsp. olive oil
3/4 cup pizza sauce


Direction:
1.) Follow the direction on the package in making the pizza dough (That's it!)
2.) Form the pizza dough according to the size you want, I did somewhat like oblong/ square. Rub little olive oil on the top. Poke the dough using fork.
3.) Put the pizza sauce first, followed by the cheese, and then scatter the pepperoni and then more cheese on top.
4.) Bake at 350 degrees for 15-20 minutes. Slice and Served!
