Semi- Homemade Baked PUTO/ Rice Cakes Recipe



Weekends is here! and It's Valentines Day a perfect day to have a dinner date with your love ones. I would prefer home cook meal with family to avoid the crowd folks whose also dining out tonight and to get that relaxing feeling at the comfort of your home. While waiting for hubby to come home, I made my kids their favorite treats. As if, getting candies and chocolate this morning is not enough. It's Valentines and I'd like to spoiled them and its their favorite.. Bake Puto/ Bake Rice Cakes in 4 different colors. This is not a typical way of cooking PUTO but the taste is still have that delicious and soft traditional puto.
 Its called Semi- Homemade because I used a store bought Puto Mix which can be found any Asian store BUT if you do have a good recipe for Puto Cheese I would love to try it. Share me the recipe on my comment box below. As you may noticed I BAKED my puto instead of a traditional way " Steaming" process, for the reason that I don't have those puto mold cups. So, to those who don't have puto cups used for steaming and want that perfect PUTO on your table. This is the perfect recipe for you.!Super duper easy to make and it come out perfect every time. I forgot to mention that it also work if you like your PUTO steamed, add your favorite cheese on top! Delish.. This is perfect for your kids party or merienda at any time. A little knowledge from Wikipedia about PUTO:)
 Puto is a kind of steamed rice cake in Philippine cuisine derived from the Southern Indian dish Puttu. It is eaten as is or with butter and/or grated fresh coconut, or as an accompaniment to a number of savoury viands (most notably, dinuguan).-(source:wikipedia )



 Notes:
- Box of White King Puto Mix consist of two pack. In this recipe I only used (1 pack) good enough to make 24 mini bake rice cakes ( puto ) BUT if you decide to used the (2 pack) double the ingredients. 
- If you like to have bigger PUTO used a bigger muffin tin and adjust the cooking temperature.

Ingredients:
1 box White King Puto Mix- ( I only used one pack on this recipe)
2 tablespoon oil
1 cup water
1/2 cup granulated sugar
food coloring- purple, green and pink
small muffin cups
non-stick cooking spray

Directions:
-Preheat the oven to 350 degrees
1.)  In large bowl combine 1 pack of Puto Mix, granulated sugar, water, and oil. Mix well.
2.) Divide the the puto mixture into 4 parts. Drop food coloring on each bowl according to your preference and mix well.  I used pink, purple and green ( my kids favorite colors)
3.)  In small muffin tin, line the muffin cups. Spray with cooking spray. Add teaspoon of Puto mixture or until its halfway through. It should covered the 24 mini puto cakes.
4.) Bake the 24 puto for 10 minutes. Viola!!! Enjoy..:)

Biko Espesyal Recipe

( with macapuno strings )


BIKO- is traditional Filipino rice cake recipe consist of cooked sweet rice/glutinous rice mixed and top with caramel sauce or locally known as (Latik)
Glutinous rice (Oryza sativa var. glutinosa; also called sticky rice, sweet rice or waxy rice) is a type of rice grown mainly in Southeast and East Asia, which has opaque grains, very low amylose content, and is especially sticky when cooked. ( source: Wikipedia )

Who want some Biko everyone?? Good news to all the BIKO lovers out there! I found out, that by adding macapuno strings to the mix. It adds up really good texture and flavor to the dish and it keeps you keep coming back for more bite and more bite... and more!! My Mom believed that it brings luck and prosperity for New Year to come, the sweet sticky quality to it have something that makes your year filled with joy and success.. wink:) Honestly for some reason every New Year I make BIKO...hahaha. I used to have since I can remember, I felt like something is missing if I don't have BIKO on my table every new year.. same thing with having macaroni salad, or spaghetti, pancit..
I got the recipe from a good friend of mine, Larissa. She loved making this dish and to be honest! I'm in-love with the idea of adding macapuno string to the mix and now I'm sharing this delicious recipe moments with you guys! Larissa's recipe have some peanuts on them but you can totally change it up according to your preference. It just depends on how you like them.. and they taste delicious no matter what:). YUM!
There are varieties of Macapuno string brands nowadays so feel free to choice your favorite brand and I think fresh macapuno will be wonderful with this recipe as well. I just don't have the resources here for fresh macapuno..:) wink. C'mon lets discover how easy it is to make this scrumptious merienda that you and your family will enjoy anytime of the day.Lets get cooking!:)
NOTE:
 Adjust the taste according to your preference!
Ingredients:
3 cups Glutinous Rice
3 cups water
1 can coconut milk (13.5 oz)
3 tablespoon of butter
1 or 1 1/2 cups dark brown sugar- depending on how sweet you want it to be
 Half jar of 12 oz Tasty Joy macapuno string- used your favorite brand if you want.


Directions:
1.) Cook the malagkit rice or sweet rice just like how you cook the rice. Simply combine 3 cups glutinous rice and 3 cups water over medium low heat OR You can used rice cooker in this process if you like. :)
2.) While waiting for the malagkit rice to cooked, In separate pan we are going to make LATIK or Caramel sauce. Pour the coconut milk and let it boil. Add the dark brown sugar- NOTE: keep stirring the mixture to get that smooth texture.
3.) Add the Macapuno strings and the butter into the Latik or Caramel sauce and stir until combined. I would recommend to wait for like 5 minutes before turning off the heat..:)
4.) The rice is cooked and the Latik or caramel sauce is DONE. Just simple combine the two, mix it really good until everything combined.
5.) Put the Biko back in the pan or in a baking dish. Add a little latik or caramel sauce on top. I bake mine for like 15 minutes, but you can totally put it back in the pan and let all the flavor put together.
6.) Share it with family and friends and ENJOY!

Sweet Week


Sweet Sale!

 It's all started last week when one of my friend asked me if my sweet pastry for sale.She spotted the photo of Monggo Bread that I recently posted on my Facebook.She I asked me if I take orders, I said, No, but I can make you some if you want and that's how everything started. I made her a dozen of Monggo Bread, delivered it to her house and that was my first sale.. ( hahaha ) It's very exciting and I'm so happy after knowing that she liked the bread. I was really thrilled after making 4 more sales to my friends this week, and I'll be making a tray of cassava cake tomorrow for my friend, Rose. I'm enjoying doing it and that's all matter. I'll be posting some recipe's next week and I'm happy to share some photos of the goodies I sold this week. Happy Weekend Everyone:)
