My Favorite Food Collections

Hello Everyone!

Today, I'm taking you to for an ultimate food trip. Yes! I'll be sharing my ultimate favorite food, recipes, and foodie escapades. This is just basically a collections summary of my ultimate favorite food. I started blogging back in 2012, since then, I know that my blog is all about my love for food. And sharing that love for food through my blog felt amazing. It's not only that I learned from my fellow bloggers, readers, but also able to learn new recipes and experience new things. Its always fun experimenting food. Do you agree? I remember the first time I received my first cookbook, my first baking experience, and first time trying new recipe. Let me tell you! Its not always a success. I failed so many times but the FUN part was the experience. Its give me motivation to keep me going until I got it right. Moving on... Are you ready to explore my ultimate favorite food? I hope your excited because I'm taking you with me.
I have way to many favorites. Its hard to choose just few, So, I'm giving my long list of my favorites. I'll promise you! this is going to be fun and delicious food-trip ever.  By the way, I made all the recipes mention on this blog post. Kamote Que is deef fried sweet potatoes covered with caramelized brown sugar.  It's one of my favorite because its easy to make, affordable, delicious, and it reminds me back home. Delicious! I'm thinking having this later today. Yum! For recipe check the link HERE.


Shakoy or well known as Twisted Donuts covered with sugar is also one of my favorite because its simply delicious. It reminds me of my Grandma who used to make Shakoy every weekend. Totally love this food. Click HERE for recipe.

Binangkal- is basically fried sweet dough with sesame seeds. This is for sure my ultimate snacks! I love how simple it is and its delicious. If you want to make it at home, just click HERE for the recipe.


Monggo Bread ( Pan de Monggo) is for sure my favorite bread of all time. It has the combination of my two favorite ingredients. Monggo beans and sweet soft bread. This is really something that I would make every now and then.. So delicious! For recipe just click HERE.



Chicken Empanada- is  combination of sweet flaky pastry with chicken filling. Its a perfect meal indeed. Its super easy to make and tasty. Yum! For Empanada recipe just click HERE.


Crispy Fried Chicken- a homemade fried chicken that taste so good is fantastic! This is actually my family's favorite and its so good paired with white rice and homemade gravy. Yum! For super easy recipe please click HERE



 Suman Malagkit- This remind me so much back home! The sweet sticky rice wrapped with banana leaves and cooked to perfection. So good! For recipe just click HERE



 BIKO- this Filipino delicacy is amazingly delicious. It made with sticky sweet rice with caramel sauce. I'm a big fan of BIKO for sure! Its something that I eat once a month. Yummo! For recipe please click HERE.


 Butsi - is something that I crave from time to time and one of my favorite. This little goodies is delicious. Its soft dough with sweet coconut filling inside and covered with sugar. Yum! For recipe click HERE.

TAHO- this is simply good. Its made with tofu, tapioca, and drizzle with caramel sauce. This is great for merienda! For recipe please click HERE.

Puto Maya at Sikwate Recipe


Sweet Day Everyone!
 The best thing that I love waking up in the morning is having Puto Maya and Sikwate. Yum! Do you missed those time? When your whole family just sit on the market stalls eating Puto Maya and Sikwate early in the morning or even late afternoon?  Well, I do! missed it a lot. There's nothing more exciting than smelling the aroma from Puto Maya and Sikwate, having fun eating with family and friends. Today, I'm going to make that traditional Filipino snack that you probably missed with my super easy simple recipe..:) Before, I proceed with the recipe I give you little introduction on what is Puto Maya and Sikwate means? Shall we:)

Puto Maya- a sweet sticky rice cooked with coconut milk. YUM! 
Sikwate/ Tableya- is a traditional Filipino hot chocolate beverage made of roasted cocoa beans that are grinned and form into “tablets.” Once tableya or tablets mix with water and sugar. It turn into this deliciously good hot chocolate most of the locals called it Sikwate or Tableya.
-Puto Maya + Sikwate = DELICIOUS!

Now, that you know little bit about the delicious food that I'm going to share with you. Are you excited to make it at home? Yes?  This is not the first time I made Puto Maya, This is like more my" to go" merienda so I make this recipe all the time. The recipe is very similar on making Suman Malagkit but without the banana leaves, and kinda same with Biko Espesyal Recipe but without caramel sauce. The Puto Maya is often served with Sikwate and some folks especially my friends told me that they are equally delicious paired with Mango as well. YUM! Although I haven't tried it with mango, I'm curios what it taste like.:)
C'mon you guys! join me in my kitchen and lets enjoy and devour Puto Maya! Below are the recipe ob both Puto Maya and Sikwate..check them out.:)

NOTES:)
- Used fresh coconut milk if you have it on hand. Adjust the recipe for larger crowd and taste according to your preference.

PUTO MAYA Recipe:

Ingredients:
2 cups of sticky rice
1 can of 13.5 oz coconut milk
Ginger- sliced
salt
sugar- depend on how sweet you want it to be

Instructions:
1.) Put the 2 cups of sticky rice in a pan or you can simply used rice cooker in this process. Rinse the sticky rice with water. Add the whole can of coconut milk, little salt, sugar and ginger.
2.) Let it cooked on medium high heat. That's it!
3.) Once the coconut milk is gone turn it low.

Sikwate Recipe:

Ingredients: 
Tableya
Water

 The ratio on a perfect Sikwate is (1 tableya into 1 cup of water). Just simple put the tableya and water in large pan and let it boil to perfection. Add brown sugar and serve it on your favorite mug. Enjoy!


A perfect combination snack for you and the whole group to enjoy. One word to describe about this recipe is DELICIOUS! No wonder why we keep coming back every Sunday  just to buy Puto Maya and have a stock of tableya on hand all the time. This is the closer I can get to bring those childhood memories. First Rice Container

My First Rice Container


Hello Everyone! As you know me! I'm a Rice Fanatic, I can eat rice for breakfast, lunch and dinner. I even make rice for dessert like Biko and Suman Malagkit. Yum! So, I been looking for a Rice Container for quite sometime, small enough to fit on my cabinet and big enough to hold 2-3 weeks supply of rice. I've seen some rice dispenser online and it just doesn't fit on the criteria that I'm looking for until yesterday, I found it! Yahoo!! Can you tell I'm pretty excited? No more messy bag of rice and pieces of rice on the floor. It fits just perfect in my cabinet and there's still much room for my pans and baking stuff on the top. It look a lot nicer and neater now compare before. Yay!

Features:
-The Rice Container or Rice Bucket holds up to 25 lbs of rice enough for my 3 weeks supply or maybe less depends on our daily consumption...(hehehe)
- It has 5 little wheels on the bottom, make it easy to move around without lifting. I can actually push it all the way on the very back after using and pull anytime whenever I need too.
- It goes along with little plastic cup for rice. Makes it more convenient to scope the rice.
- Another features that I like on this Rice Container it that its very easy to open and close.
- Perfect rice storage! wink:)


Got a perfect rice container! Now all I need is the perfect rice to go along with it. I personally love Jasmin Rice- it's long grain Thai rice, have a unique aroma when its cooked. Calrose Rice ( California Rose)- it's medium grain rice. I would say its quite similar to "Masipag Rice" in the Philippines but a little soft when its cooked. Last thing, I gotta have some Sweet Rice/ Malagkit- I usually used this rice to cook sweet dessert and it smells divine when its cook. The sticky element makes it a good quality for Biko and Suman Malagkit which is very popular merienda in the Philippines.

Cooking Rice- The process of cooking rice is pretty simple with the help of rice cooker it makes the whole process a lot easier. ( 2 cups water to 1 cup rice ) if want to do it on stove top. Add chicken stock or beef broth to flavor your rice. I preferred mine natural no extra flavoring.  Fried Rice is always go to in our household for left over Rice sometimes I made little extra just to make some fried rice in the morning. Yum!

Biko Recipe

Biko Espesyal Recipe

( with macapuno strings )


BIKO- is traditional Filipino rice cake recipe consist of cooked sweet rice/glutinous rice mixed and top with caramel sauce or locally known as (Latik)
Glutinous rice (Oryza sativa var. glutinosa; also called sticky rice, sweet rice or waxy rice) is a type of rice grown mainly in Southeast and East Asia, which has opaque grains, very low amylose content, and is especially sticky when cooked. ( source: Wikipedia )

Who want some Biko everyone?? Good news to all the BIKO lovers out there! I found out, that by adding macapuno strings to the mix. It adds up really good texture and flavor to the dish and it keeps you keep coming back for more bite and more bite... and more!! My Mom believed that it brings luck and prosperity for New Year to come, the sweet sticky quality to it have something that makes your year filled with joy and success.. wink:) Honestly for some reason every New Year I make BIKO...hahaha. I used to have since I can remember, I felt like something is missing if I don't have BIKO on my table every new year.. same thing with having macaroni salad, or spaghetti, pancit..
I got the recipe from a good friend of mine, Larissa. She loved making this dish and to be honest! I'm in-love with the idea of adding macapuno string to the mix and now I'm sharing this delicious recipe moments with you guys! Larissa's recipe have some peanuts on them but you can totally change it up according to your preference. It just depends on how you like them.. and they taste delicious no matter what:). YUM!
There are varieties of Macapuno string brands nowadays so feel free to choice your favorite brand and I think fresh macapuno will be wonderful with this recipe as well. I just don't have the resources here for fresh macapuno..:) wink. C'mon lets discover how easy it is to make this scrumptious merienda that you and your family will enjoy anytime of the day.Lets get cooking!:)
NOTE:
 Adjust the taste according to your preference!
Ingredients:
3 cups Glutinous Rice
3 cups water
1 can coconut milk (13.5 oz)
3 tablespoon of butter
1 or 1 1/2 cups dark brown sugar- depending on how sweet you want it to be
 Half jar of 12 oz Tasty Joy macapuno string- used your favorite brand if you want.


Directions:
1.) Cook the malagkit rice or sweet rice just like how you cook the rice. Simply combine 3 cups glutinous rice and 3 cups water over medium low heat OR You can used rice cooker in this process if you like. :)
2.) While waiting for the malagkit rice to cooked, In separate pan we are going to make LATIK or Caramel sauce. Pour the coconut milk and let it boil. Add the dark brown sugar- NOTE: keep stirring the mixture to get that smooth texture.
3.) Add the Macapuno strings and the butter into the Latik or Caramel sauce and stir until combined. I would recommend to wait for like 5 minutes before turning off the heat..:)
4.) The rice is cooked and the Latik or caramel sauce is DONE. Just simple combine the two, mix it really good until everything combined.
5.) Put the Biko back in the pan or in a baking dish. Add a little latik or caramel sauce on top. I bake mine for like 15 minutes, but you can totally put it back in the pan and let all the flavor put together.
6.) Share it with family and friends and ENJOY!
