My Favorite Food Collections

Hello Everyone!

Today, I'm taking you to for an ultimate food trip. Yes! I'll be sharing my ultimate favorite food, recipes, and foodie escapades. This is just basically a collections summary of my ultimate favorite food. I started blogging back in 2012, since then, I know that my blog is all about my love for food. And sharing that love for food through my blog felt amazing. It's not only that I learned from my fellow bloggers, readers, but also able to learn new recipes and experience new things. Its always fun experimenting food. Do you agree? I remember the first time I received my first cookbook, my first baking experience, and first time trying new recipe. Let me tell you! Its not always a success. I failed so many times but the FUN part was the experience. Its give me motivation to keep me going until I got it right. Moving on... Are you ready to explore my ultimate favorite food? I hope your excited because I'm taking you with me.
I have way to many favorites. Its hard to choose just few, So, I'm giving my long list of my favorites. I'll promise you! this is going to be fun and delicious food-trip ever.  By the way, I made all the recipes mention on this blog post. Kamote Que is deef fried sweet potatoes covered with caramelized brown sugar.  It's one of my favorite because its easy to make, affordable, delicious, and it reminds me back home. Delicious! I'm thinking having this later today. Yum! For recipe check the link HERE.


Shakoy or well known as Twisted Donuts covered with sugar is also one of my favorite because its simply delicious. It reminds me of my Grandma who used to make Shakoy every weekend. Totally love this food. Click HERE for recipe.

Binangkal- is basically fried sweet dough with sesame seeds. This is for sure my ultimate snacks! I love how simple it is and its delicious. If you want to make it at home, just click HERE for the recipe.


Monggo Bread ( Pan de Monggo) is for sure my favorite bread of all time. It has the combination of my two favorite ingredients. Monggo beans and sweet soft bread. This is really something that I would make every now and then.. So delicious! For recipe just click HERE.



Chicken Empanada- is  combination of sweet flaky pastry with chicken filling. Its a perfect meal indeed. Its super easy to make and tasty. Yum! For Empanada recipe just click HERE.


Crispy Fried Chicken- a homemade fried chicken that taste so good is fantastic! This is actually my family's favorite and its so good paired with white rice and homemade gravy. Yum! For super easy recipe please click HERE



 Suman Malagkit- This remind me so much back home! The sweet sticky rice wrapped with banana leaves and cooked to perfection. So good! For recipe just click HERE



 BIKO- this Filipino delicacy is amazingly delicious. It made with sticky sweet rice with caramel sauce. I'm a big fan of BIKO for sure! Its something that I eat once a month. Yummo! For recipe please click HERE.


 Butsi - is something that I crave from time to time and one of my favorite. This little goodies is delicious. Its soft dough with sweet coconut filling inside and covered with sugar. Yum! For recipe click HERE.

TAHO- this is simply good. Its made with tofu, tapioca, and drizzle with caramel sauce. This is great for merienda! For recipe please click HERE.

Chicken- Stuffed Crescent Rolls Recipe

Hello Everyone!
Another scrumptious recipe ideas for dinner tonight! with very few ingredients and super easy step by step tutorial you can totally have this for dinner in no time. Another suggestions that goes along with this rolls are bake potato, steamed corn and some mixed fruits. YUM!. I'm so excited sharing this recipe here on my blog. Why? because it never fail to impress. simply DELICIOUS! Anyway, the recipe idea came from a video that I watched couple days ago from Swagbucks. Actually, I'm impressed how everything taste! I actually make my own chicken filling and it taste so good but you can totally make your filling and your meat choice.. I 'm thinking ground pork or chicken will be good as well on this recipe. I'm planning to make more of this soon, who want to come over? hehehe

Chicken Filling Ingredients:
Note:
 -Choose the meat of your choice and taste according to your preference.
 -All the vegetables are uniformly cut into small pieces for easy filling the dough later.

1 Chicken breast- cut into small pieces
1 small potato-
1 medium size carrots
1 Green onion
1 cup chopped cabbage
1/2 cup of corn kernel
Half of pepper
soy sauce, salt and pepper- to taste

Procedure:
1.) Marinate the chicken with little soysauce. In a large pan, put little cooking oil, let the marinated chicken brown. Add the onion, saute until golden brown.
2.) Add all the vegetables and let it simmer until cooked. Let it cool down..:) FILLING is DONE


Crescent Rolls Recipe:)
Notes- You can make the EMPANADA Dough Recipe on this one if you don't have crescent rolls available in your area.
If want to make more than 8 pieces just buy more crescent rolls..:)

Ingredients:
Chicken Filling
Crescent Rolls
Egg wash
Sesame seeds
Baking Pan
Shredded Cheese

Procedures:
Preheat oven 375 and BAKE for 10 minutes until its golden brown.
1.) Open the crescent roll package. Dash your board with flour o avoid the dough from sticking. Put chopped green onions on the top and roll the dough again. Adding green onion to the dough will add more flavor to the dish but you can escape this process if you want to.
2.) Divide the dough into 8 pieces and roll the dough into circle. Make sure you dash little flour on the board to make the whole process easier.
3.) Once everything is roll out into circle. Put the chicken filling on each of them. Add cheese of your choice.  Close the dough by brushing egg wash on the side of the dough. See the picture above for preference and below for preference:)


4.) Put the dough into a prepared baking dish. Spray the baking dish or use parchment paper. Brush the dough with remaining egg wash and sprinkles with sesame seeds.
5.) Bake into 375 preheated oven bake for about 10 minutes or until golden brown..
6.) Enjoy your freshly baked dinner rolls and share it with your family and friends.

Chicken Empanada Recipe


Little introduction what Empanada all about.
 Empanadas are made by folding dough or bread around stuffing, which usually consists of a variety of meat, cheese, huitlacoche, vegetables or fruits, among others.
 Filipino empanadas usually contain ground beef, pork or chicken, potatoes, chopped onions, and raisins (somewhat similar to the Cuban picadillo) in a somewhat sweet, wheat flour bread. There are two kinds available: the baked sort and the flaky fried type. ( source: http://en.wikipedia.org/wiki/Empanada )

I never made Chicken Empanada before, I just felt that its so hard to make and the process takes forever! but I love this dish!. So, when my friend Cherry came over one time, we decided to make this all time favorite filipino empanada. Guess what? It's easier than I thought.. ( hahaha) I have no idea that the process is just as simple as eating this empanada.( wink)
Chicken Empanada is just perfect meal itself, you have this crunchy bite, flaky, sweet, meaty. All yummy goodness explosion in your mouth at once, and that's the reason why I love chicken empanada.C'mon let start cooking..:)

The Dough

3 cups all purpose flour
1 stick or 1/2 cup cold butter
4 teaspoon sugar
1/2 tsp. salt
3/4 cup water
1/2 tsp. baking soda

Directions:
1.) In large bowl combine the flour, butter, sugar, salt, and baking soda. Mix until well combine;
Note: Make sure the butter is incorporated on the dry mixture.
2.) Add the water, mix well and knead the dough in clean surface. 
3.) Let it stand for 10 minutes, divide the dough into 18 little balls. Set aside;

The Filling Mixture

Note:Frozen or fresh peas in MUST on making empanada. It just happen I don't have it the time I made my empanada..:)
- Cut your chicken and vegetables into small cubed.

Ingredients:
1 chicken breast
1 medium size potato
1 big carrot
1/2 cup peas ( I don't have it on hand )
1/4 cup raisin
Oil
Onion
Salt and Pepper- to taste

Directions:
1.) Put oil in large pan sauteed the onion until translucent.  Add the chicken cooked until golden brown.
2.) Add the vegetables, raisin and salt and pepper to taste. Let it simmer for 10 minutes or until everything is cooked.
3.) Let the filling mixture cool completely. 
NOTE: Adjust the seasoning and taste to your preference and liking.:)


The making of Chicken Empanada

* Now that, we have the dough and the mixture filing. Let start making the Chicken Empanada.
1.) Preheat the oven at 350 degrees.

1.) Using rolling pin, roll the dough onto clean surface until form a circle. Do it until everything is DONE. Next,  Fill each rolled dough with the filling mixture about 1 spoonful.

2.) Fold the dough in half, and then seal the dough by pinching and folding the edges on the Empanada. Just like the photo above.:) 

3.) Put the Empanada into greased baking pan, brush the top with egg white mixture. Bake at 350 degrees for 25 minutes.
4.) Cool completely before eating. Enjoy and Share with your friends and family.
