Now that we have everything we need to get this party started. Let's discover my fun party experience courtesy from Rhodes and Tryazon.  I'll promise you this is going to be easy and delicious party experience.



It all started by inviting my family and friends. I prepared all the necessary ingredients, and now just done munching Rhodes product has to offer. 
First stop is the Rhodes Cinnamon Rolls- ( As I mentioned above- Rhodes Microwave Cinnamon Rolls is not available yet at my store, So, I'm using the  Rhodes Cinnamon Rolls) Its super easy to make- all you have to do preheat your oven, remove the top cover and bake it for 25-30 minutes. Pour the icing on top of the cinnamon and let it melt. Grab a plate and served hot! I have to say that, Rhodes cinnamon rolls is one of my family's favorite. It's scrumptious and perfect for snacks, sweet treats, and breakfast. Yummo!
Second is the Rhodes product featured in this party is Rhodes Dinner Rolls- Yes! It's soft, delicious and super easy to make. All you have to do is thawed the dough, and bake on preheated oven and viola! Perfect rolls for any occasion. As you all know me, I'm such a big fan of Pan de Coco and I used the Rhodes Dinner Rolls as my main dough ingredients in making Pan de Coco and it turned out PERFECT! My family and friends enjoyed it. 

My Rhodes- Quick, Easy, & Delicious party experience was awesome! I enjoyed my family and friends company, and we had so much with Rhodes Cinnamon Rolls and Dinner Rolls. It was a very fun party experience and I highly recommend Rhodes products. Yum!

Pineapple Hopia Recipe


Hello Everyone! How was your week doing so far? Last week, my daughter started kindergarten and I couldn't be more happier. It's been a hectic schedule for me and still getting used to my new routine. I'm so happy to share that my kindergarten made her first week. She definitely love school! Anyways, talking about school and what not? I have a really awesome recipe that you could make for school lunches and even perfect for any special occasions. Pineapple Hopia is a perfect after school merienda that your kids will love and enjoy.  First, lets talk about what is HOPIA?- its basically a pastry dough filled with sweet or savory filling. It's flaky, sweet and just simply delicious. It's very popular in the Philippines for snacks and favored gifts to friends and relatives. This is also one of my favorite snack!  So, the other day I made a Pineapple Hopia for my family and it was a SUCCESS! Hopia is usually filled with Mungbean paste or Ube ( purple yam) Since, I don't have those ingredients on hand. I used crushed pineapple instead. It was delicious! The flavored just blend in with flaky hopia and the sweetness of the pineapple. Yum!- That's the story behind this Pineapple Hopia (wink)
The recipe was inspired by my desire to munch on some hopia. I terribly missed it! and now I'm so glad I'm able to just make my own anytime I want. I found the dough recipe online (totally forgot the site) and its super easy to make. I suggest to give the Pineapple Hopia a try but the Classic Hopia flavor is also really good. Are you excited to make some Hopia? C'mon join me in my kitchen and lets bake some! This is going to be a fun surprise for your kiddies when they get home from school... wink!


Ingredients:
- Notes: Feel free to used available hopia filling you have like Monggo Beans, Ube or Pork.
 
Hopia Filling-
(1) 20 0z can Pineapple crush
1/2 cup sugar

- Notes: Put the dough mix in two separate bowl.
Dough #1 
2 cups of flour
1/2 cup oil
1/2 cup butter
Pinch of salt

Dough #2
1 1/2 cup flour
1/4 cup shortening
1/2 cup butter
1/2 cup sugar

- Eggwash - for finishing touch. 

Directions:

1.) Cook the filling by combing the pineapple and sugar into a pan. Stir and mix until the pineapple feel sticky and the juice dissolve. Set aside and let it cool.
2.) Now, Its time to make the dough by mixing all the ingredients separately for dough#1 and dough#. I suggest to used different color bowls when mixing the dough.
3.) After you mix the dough separately. Take dough#1 into light floured surface and roll it flat about 1/2 inch thick. Put dough#2 on the top and spread it nicely around dough#1.
4.) Carefully roll the dough, gather the edges and set it aside. Repeat the process until all the dough is roll up.
5.) Preheat the oven onto 400 Fahrenheit.
6.) Sliced the roll dough into small pieces, see the photo below for reference. Roll the sliced dough into lightly floured surface, put the filling on the middle, collect on the side and form it into little ball and flatten it before putting into the pan.
7.) Repeat the process until all 18-24 hopia is done. The size varies depending on how big you want it to be.
8.)Brush the Hopia with eggwash and bake for 15-20 minutes or until its golden brown on top.
9.) Enjoy your fresh bake hopia. Yum!



Pretty easy huh? I told you and its delicious!. I think this is the best time to bond with your friends and simply make some hopia while waiting for your kids to get home. I enjoyed the whole process of making Hopia, I think its so much fun! especially when you smell it all over your house.

Mini Loaf Bread Recipe


Happy Mother's Day to my Mom and to all Mommies out there!:)
I would consider this Sunday as extra special one. It's time to give thanks, love and appreciation to our Mom's whose been such a great example. I'm the eldest among three siblings and me and my Mom is so close to each other. She taught me a lot of things in life, the person I can count on, lean on and asked advice for. She's such a great Mom! So, Today, in honor of Mother's Day. I made something that remind of my Mom and those unforgettable memories of my childhood. This Mini loaf Bread is made with sweet bun with sweet ube coconut filling. Yum! Which my family's favorite! Are you big fan of UBE and sweet coconut filling? This recipe is so perfect for any occasion like birthday's, potluck party and giveaways for parties. I'm sure any Mom's would appreciate the love and effort you put into to express how much you love and care for them. Come on and join me in my kitchen and lets start baking some sweet good for all the sweet Mommies out there.

Notes:
- Choice your favorite filling for the bread. It could be ham and cheese, monggo, ube or sweet coconut filling.
- Personalized the bread the way you want it to be.

Ingredients:

3 1/2 cups bread flour                        
2/3 cup- Lukewarm water                 
2/3 cup- Lukewarm milk                   
1/4 cup sugar                                  
1/4 cup butter melted                          
1 pack yeast  ( 2 1/2 tablespoon)                                         
1 1/2 tsp. salt
  
Filling:
Ube Yam- store bought
Shredded coconut and brown sugar- combine this two ingredients.

Directions:

1.) Mix the flour, sugar, salt and yeast on the big bowl ans set aside.
2.) Pour the lukewarm water and lukewarm milk into the dry ingredients and mix it well.
3.) Pour the melted butter into the mixture, mix well. Knead the dough until the dough is smooth and elastic bout 15 minutes or so.
4.) Let it rise for 1-2 hours
5.) Divide the dough into 4 pieces. Flatten each divided dugh, using the rolling pin, roll it until its big enough to fill the sweet ube coconut filling.
6.) First put the ube paste on the flatten dough, spread it around. Add the coconut filling. Fold both ends, and roll make sure it will fit on the mini loaf pan that you prepared.
7.) Let the filled dough rise for like 30 minutes. Meantime, preheat the oven onto 350 degrees
8.) Brush with eggwash and bake all four mini loaf for about 15-18 minutes until its golden brown on top.

 Let's make this day extra special and give your Mom's a lot of hug and kisses. We are going to my in-laws house today in celebration of Mother's Day. It's going to be FUN and I'm excited!! Monggo Bread ( Pan de Monggo )

Monggo Beans or Mung Beans-they are small, ovoid in shape, and green in color. It is used as a foodstuff in both savory and sweet dishes. (source : wikipedia)

I grew up in the Philippines, My family plant Monggo Beans in our little farm in Valencia, Bukidnon.As, I remembered monggo beans are very easy to cultivated. Since then, I remembered  Monggo prepared mostly on savory dishes like ginataan, guisado and to my surprised some bakery in my place make monggo bread. My Mom, always have its way to make Monggo, taste so delicious in very simple way mostly on savory dishes accompanied with rice. One of my favorite bread in the Philippines is the Monggo Bread usually in Ensaymada form, So. today why not make it myself. ( wink ) While searching for that right recipe for the Monggo Bread, I stumble upon this video on youtube ( aeriskitchen) on how to make sweet red bean buns and it was so simple and yet look delicious. So, I was like! aha!! instead of red bean paste put as filling, why not monggo beans because, I love monggo beans and it suits on my taste-bud, I love to mention how (aeriskitchen) made the bread look like flower, its pretty amazing.  I was really inspired! I'll show you how simple it is to make this bread and who knows it might be your next favorite snack of the day. My family loved it and hopefully yours too:) wink..

Ingredients:
Filling:                
3/4  Monggo Beans (dried)
 water
 sugar
 Directions:
Bring the Monggo Beans and water to boil until it soften and mushy.
Add sugar, depend on how sweet you want it to be
Let it cool and refrigerate.
Dough:                                              
3 1/2 cups bread flour                        
2/3 cup- Lukewarm water                 
2/3 cup- Lukewarm milk                   
1/4 cup sugar                                  
1/4 cup butter melted                          
1 pack yeast                                          
1 1/2 tsp. salt
 Directions:
1.) Mix the flour, sugar, salt and yeast on the big bowl ans set aside.
2.) Pour the lukewarm water and lukewarm milk into the dry ingredients and mix it well.
3.) Pour the melted butter into the mixture, mix well. Knead the dough until the dough is smooth and elastic bout 15 minutes or so.
4.) Let it rise for 1-2 hours
 
5.) Divide the dough into 16 pieces of small balls. Flatten the little dough balls, using the rolling pin, roll it until its big enough to fill the monggo filling. (I use 1 teaspoon of filling per dough balls. )
6.) Using scissors cut little bit on the side to make it like flower. Put it on greased baking pan, Let it rise for 30 minutes.
7.) Brush it egg wash, Bake at 350 degrees for 15-20 minutes until its golden brown.

Enjoy your fresh Monggo bread right out from the oven! I made 16 monggo bread:)

Binangkal Recipe

I don't usually have this intense craving for " Binangkal" but this time, It's different. I can't resist myself but to make my own for the first first time. I was surprised how it turned out, It was divine!. It's crunchy outside and sweet cakey like taste inside, to top it off! the sesame seed outside the ' Binangkal " made it more divine that I just keep coming back for more until I can't eat anymore ( haha ). My hubby and kids loved it, I was really happy about that. It was delicious and very easy to make.
I remember my  best friend Michelle made this " Binangkal" on my baby shower before, and it was really good. She made it couple more times and I can't get it out of head since then. I have " Binangkal " before back while I'm in Pinas but not as good as Michelle made it though. I don't know her secret recipe but this recipe is little close to what my best friend Michelle used to make ( haha ).
I was having little problem at first how the sesame sticking to the dough but I figured it out right after I made my first batch.  I loved  Binangkal and the craving is finally over. I might keep making Binangkal every once in awhile. It just that good!  It took me like 45 minutes it clean the whole thing up but it's all worthed. I enjoyed eating "binangkal"

Ingredients:
2 1/2 cup flour
1/4 tsp salt
1/2 tsp baking soda
2 tsp baking powder
3/4 cup brown sugar
2/3 cup water
2 tbsp oil
sesame seeds


Directions:
1.) Shift together dry ingredients. Set aside;
2.) Mix brown sugar, water, oil. Add slowly the dry ingredients into the mixture. Mix it well.
3.) Using teaspoon, take bits of batter, roll into little balls and roll into sesame seeds.
4.) Fry it deep hot oil until brown.
5.) Serve it hot or cold along with your favorite drinks and ENJOY!. I like mine with hot chocolate.:)

 Finish product. I made like 20-24 pieces.. wink:)

Sweet Hello 2013! Its been a wonderful year for me and I couldn't ask for more. Its been snowing for couple of days here and I'm telling you, " Its COLD" I have this habit now of having hot chocolate on my hands every morning keep me toasty warm. So, what the best thing to go along with this hot chocolate that I'm talking about is this " Sweet Choco Bread"  they're really good together! dunk the bread in hot chocolate and eat it, OH! super good!! that's how I start my 2013.
My kids loved this bread can't get enough of one sliced, they just keep coming back for more until its gone. I'll show how easy it is to make them, So that next time you're having hot chocolate in the morning. You might wanna give this Sweet Choco Bread a try. It might surprise you, how good it is wink:)

HAPPY NEW YEAR!

Ingredients:
Sugar
Cocoa
Krusteaz- "Sweet Hawaiian Bread" bread mix

Directions:
1.) I just simply follow the direction on the box on how to make the bread dough.
2.) After it rises for 1 hour. I Put the dough on round baking pan.
3.) I dust it with cocoa powder and sugar just a hint and swirl it around the dough
4.) Bake at 325 for 40-45 minutes
5.) Slice,served and enjoy with your choice of drinks.

Ensaymada

Hey! do you remember the last time you eat ensaymada?  I can't..! this is my ultimate favorite when I was growing up.So I decided to make homemade ensaymada, At first I was kinda hesitant making it, because it seems like so hard that I might not get it right.  I was RIGHT! the first time I made ensaymada  it turn out disaster.. BIG TIME!. I tried it 2 more times still not right.. So I decided to use the recipe in making dinner rolls and It work out GREAT! 



Dough:
Ingredients:4-5 cups of flour
2 1/4 teaspoon yeast

1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cup milk

 Directions:

1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.



5) Cut the dough into long strips, roll it using rolling pin and roll it like cigar. Form into like ensaymada just like the picture on the top
 6) Let it stand for 1 hour or so...at room temperature and then bake at 350 degrees for 10-15 minutes until golden brown. 
7) Let it cool before for 30 minutes and then spread some butter on top and sprinkle it with white sugar.
8) Serve it anytime of the day!  


This so yummy!! just like how I remember eating it when I was a kid. I was just so excited how it turn out this time. So I put butter right after I pulled it in the oven hahaha! I can't just wait.. so my kids! You bet they just like diving into it, specially with sugar on top.. ummhhh..as my kids screams YUMMO!

 This is dinner rolls my way! Yeah, that's right! instead of making the traditional round dinner rolls. I make something that remind me of my childhood, I mimic the shape and looks of my favorite rolls when I was kid. YUMMY! So, I decided to share this recipe.
 I'll show how to make this dinner rolls in very simple way...


 Ingredients:

4-5 cups of flour

1 pack yeast
1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
2 1/4 cups milk





  Directions:
1) Mix the flour and yeast in bowl. Set aside;
2) Heat and stir the milk,sugar, butter and salt  just until warm and butter almost melts.
3) Add to the dry ingredient, along with the eggs, mix it well. 
4) Knead the dough in clean surface. Put it bowl and let it rise for 1-2 hours.
5) Bake it at 325 degrees; 10-15 minutes until its golden brown.


Wheeeh! I know its long process, we're almost there!
After the dough rise, you're ready to roll, the round one is the simplest one so far ( I guess!). But you know me I'd prefer trying something different. Whatever works our for you.




Overall experience making this rolls.. FUN! FUN! especially I have two little helpers with me in the kitchen. It makes my heart jump with joy every time I saw them smilling and I know that they're so HAPPY!. 
This is my first time making it, OMG! this are good specially pair with hot chocolate in the morning. My family new favorite yay!!

Banana Bread Recipe

 I was inspired making this banana bread by looking at my over ripe banana on the table, Instead of throwing it away. Why not transform it into something very delicious. So I do some research on how to make this bread and this is so far the simplest and easiest recipe I could find. I omit some ingredients to make it so simple yet tasty. Add your favorite nuts on top to make it more extra special. It was a big hit in my house!
Come on make it at home...:)

Dry Ingredients:                            Wet Ingredients:

2 cups all purpose flour                   3 medium bananas mashed
1 1/2 teaspoon baking powder        2 eggs (beaten)
1/4 teaspoon salt                           1/2 cup cooking oil
1/4 teaspoon ground cinnamon        1 teaspoon vanilla
1 cup sugar

Directions:
1) Heat oven to 350 degrees. Grease bottom of 2 loaf pans; set aside. In large bowl combine all the dry ingredients; set aside.
 2) In medium bowl combine all the wet ingredients. Add the dry ingredients slowly. Mix well.
3) Spoon the batter in prepared pans. Bake for 40-45 minutes. Cool  before slicing and serve it anytime of the day.
