Fun Birthday Celebration

My Birthday Celebration 2018


Sweet Hello Everyone!:)

I can't believe that we are on the second month of  year 2018; and realized how long its been since the last time I posted on this blog. It's amazing how time just flies! Anyways, aside from being super busy with kids; which are both very active on their own respective sport choice. I also work more hours now. It's more on time management I guess- I always make sure that my family comes first;  always spend quality time with them. With that being said; As busy as I am right now, I will still find time to do my blog and keep it updated :)
Show me that happy smile guys! and let's get started on my birthday celebration escapades. It's a little late, BUT hey " better late than never" So, here we go.

I'm so blessed and grateful that I have awesome family and friends whose always there to make my day an extra special one (not only on my birthday but everyday) Super Thank You to all of you!:)

My birthday celebration started with great breakfast. Yes, I made our delicious breakfast as my treat for my loving family. It was delicious! Then, we headed to Red Velvet Cafe where I choose my birthday cupcakes and favorite bubble tea ( one of my favorite place for cupcakes and bubble tea )


We then decided to have dinner at Bonifacio. Yes, I love Bonifacio! As you may remembered my last year blog post Birthday Celebration: Chicago Weekend Getaway. Such a perfect place for modern Filipino cuisine experience. Yummmo! We had Lumpia Shanghai, Lechon Kawali, Sisig Taco's, delicious drink ( totally forgot the name of it ) and of course Halo-Halo for dessert. Indeed scrumptious!:)

Few days later after my birthday, one of my close friend visited me and brought delicious food, scrumptious cake, and my favorites. Yum!! It was such a treat seeing her. Thank you, Baye:)

That's not all.. my family set up another birthday celebration where we celebrate our birthday's together. It was so awesome!


 We all gathered at my sister in-laws house (Sommer's residence) to celebrate my birthday, Kindra (sister in-law) Mom Cheri (mother in-law) and Fusako. We had chicken noodle soup, mashed potatoes, corn, peas, bread, green salad- and ice cream cake. You guess it right!? It was really FUN birthday celebrations.

.. and that's how I celebrated my birthday. Indeed a moment to remember for lifetime! I would like to say "Thank You" to my family and friends for all the love and sweet greetings offline/online, for being so generous, and for making my day a very special one. I LOVE you all!

Wonderful Celebrations of June 2016

Daughter's 7th Birthday, Anniversary and Father's Day Celebration


Hello Everyone!

June has been super quick and fun month for us. But, before June ends I would like to share with you  three amazing moments which includes my daughter's 7th birthday celebration. O, yes! She's already seven years old and shes growing fast. As you may remembered from last post HERE. So, this blog post is just a sweet addition to my blog. A birthday celebration won't be complete without delicious food and great company of family and friends right? So, get ready to explore the perfect summer month yet? Birthday Celebration

 Birthday party won't be complete without the cake right? The easiest way to get delicious cake in no time is either store bought or per-ordered personalized cake according to your theme. But, if you love to make your kids homemade birthday cake just like I do. Then, this post is right for you. My daughter really LOVE Shopkins! she collect them, play with them and even her clothes and kitchen utensils have Shopkins characters on it. So, when, she asked me to make her a Shopkins cake. I decided to give it a try. What we have is the Shopkins "Macaroons" Isn't she a pretty cake? The most important thing was my daughter LOVED it.


I just followed the direction in making the cake, bought icing that I needed and tried to make the BEST Homemade Shopkins Cake for my daughter. As you can see on the photo above, the process of making is actually super easy and fun. I added Shopkins topping and candles that matches the color of the cake. It was a success!

After making the cake. I also made some of Reyna's favorite dish which includes Lumpia Shanghai, Bihon and Caldereta. My mother in-law made delicious meatballs, steam corn, and we had great drinks, chips. Just all fun stuff on her birthday.


The BEST thing about birthday celebration are family and friends. So, give me time to introduce you to my wonderful good friends (Michelle, Cherry & MJ) - Thank you for being such a wonderful friends and also for coming over to celebrate my daughter's 7th birthday. 
To my beloved Family- Thank you so much for being so generous as always, for all the glorious gifts, and for making Reyna's 7th birthday super special one. I love you all!:)

Our Wedding Anniversary

Our 8th Wedding Anniversary celebration was simple yet so perfect! I love every minute being with my Sweetie- his the BEST partner, husband, and father to our kids. Words can't express how much I love him. Cheers to our 8th and many.. many... more years together. I love you with all my senses, Sweetie!


Father's Day Celebration

My kids made my hubby a really nice homemade card. It expresses how kids loved and adore him as their wonderful Dad. I was so touched reading their cards. Then, we went out for breakfast with my Father in-law and Reese at IHOP. It was the best and memorable meal ever. As pictured below, I ordered the breakfast platter. It was delicious!!!  



Its never too late to say Happy Father's Day before June ends, right? wink! I hope this post inspire you in so many ways. Lumpia Shanghai Espesyal Recipe

Lumpia Shanghai Recipe -Updated



Hello Everyone!
Did you get excited seeing Lumpia on the photo? I'll do! This is my second favorite food next to Pansit. This is like updated version recipe, Since, I posted Lumpia recipe back when I started this blog which is like two years ago. I've seen few variations of lumpia recipe, so far I tried the Lumpia Shanghai-  which compose of meat usually ground pork and Vege Lumpia- which compose of vegetables but some folks add some rice noodles into the mix. What kind of Lumpia is your favorite? I prefer the Lumpia Shanghai myself, Since, I always made them for my daughter's birthday and some special occasions. Actually one of my favorite!  In this blog post, I'll be showing the step by step on how easy it is to wrap the Lumpia. Awesome!
Now, let's talk about the main ingredients? The Lumpia Wrapper-  If you are living abroad, you'll find lumpia wrapper at any Asian store. The Lumpia wrapper is so thin, delicate and easy to dry up. Make sure that you put towel on the top to make sure that it will stay soft and easy for the wrapping process later on. 
What to do if the Lumpia wrapper is frozen? which is so typical when your living abroad.
* Defrost- I leave the wrapper on the counter for like an hour or so while I'll make the filling
* Put in your microwave on DEFROST for like 25-30 second. Once you feel its soft and you can bend it. Then its good to go.:)
Some folks put some peppers, cabbage and other vegetables. I think they are equally delicious and I Love them all. What are your favorites on your Lumpia? 
The recipe that I'll be sharing you today is the recipe that my Mom taught me. So simple and so easy! C'mon you guys join me in my kitchen and I'll show you how easy it is to make this cute babies. So perfect for any occasion and surely impress everyone.


 Notes: Adjust the taste according to your preference. Don't forget to add your favorite vegetables. Double the quantity for larger crowd..wink:)-


 Lumpia Shanghai Recipe

Ingredients:
1 lbs. ground pork
2 medium size carrots- peeled and chopped
1 egg
1/4 cup breadcrumbs
Lumpia wrapper
1 medium onion- chopped
3 garlic cloved
Salt and Pepper
Water- used to seal the tip on the lumpia

Filling Recipe
 * Put the carrots, onion and garlic in food processor ( if you have one) or chopped into little pieces. Set aside. In large bowl, mix all the ingredients ground pork, chopped veggies,breadcrumbs, egg, salt and pepper. Mix it together until everything is combine. Set aside.
* Defrost your Lumpia wrapper-

Instructions:
1.) Carefully separate the Lumpia wrapper.
2.) Put spoonful of lumpia filling towards the center of Lumpia wrapper.
3.) Fold the two side towards the middle. Make sure that you leave a space on the middle.
4.) Then, fold the other pieces towards the middle. It should look like the photo above ref.#4
5.) Start rolling the lumpia and make it tighter as you go. Make sure that you leave a little space. Brush it with water and it should seal the lumpia.
6.)  Put the perfect rolled lumpia onto the container.  DONE! Just do it all over again until your finish.

Season's Greetings

Merry Christmas Everyone!

HO!HO!HO! Merry Christmas Everyone! I'm finally done wrapping all the presents. It took me awhile to wrapped everything but It was fun! Are you guys excited? Aside from wrapping gifts Christmas is also time to spent quality time with family and friends. When we talk about Christmas its gonna be gifts and food. So, to give you some ideas on what to make for Christmas. I'm gonna list some of my favorite recipes below. Check them out!
