Crispy Fried Chicken Recipe


Crispy fried chicken is a standard dish in the Cantonese cuisine of southern China and Hong Kong.[1] The chicken is fried in such a way that the skin is extremely crunchy, but the white meat is relatively soft.

 I grew up eating fried chicken, this is one of my favorite food! It always makes me excited maybe because I don't ate it as often when I was little kid. I missed those days!!! I missed the chicken served at Jollibee-- popular fast food chain in the Philippines and some places here in the US. So, when cravings strike I decided to make my own version. How hard could it be to fry chicken? It's not that hard at all especially if your using deep fryer it makes the whole cooking process 10x faster, No deep fryer? worry no more a big pot and oil still as god as deep fryer. So, I was watching this cooking show (Food-network) and I found out that cornstarch is the key ingredients to make the fried chicken extra crispy.. Yay! you heard it right, I did tried it and it always work... This is like so perfect if your also missing the cripsy chicken served at Jollibee.. My kiddies loved them..!This is also perfect for like birthday party, family gathering and potluck party. C'mon try it at home. Below is the recipe:)

 Ingredients:


Chicken- I used (4) bone-in chicken breast
1 Cup Flour
1/4 Cup cornstarch
1 egg
1 Lemon
Salt and Pepper- to taste
Seasoning of your choice- optional
Chicken Gravy for sauce- optional
Oil - for frying

Directions:
1.) Marinate the chicken with salt, pepper and lemon. Cover with plastic wrap and refrigerate overnight.
2.) In large pan, heat 2 cups of oil or enough to cover the chicken when your frying. In this recipe I used deep fryer:)
4.) Meanwhile, In large bowl combine the flour, cornstarch and salt and pepper. In medium size bowl beat the egg and set aside;
5.)Take the marinated chicken one at a time, soak in egg mixture then in the flour mixture, make sure that you covered the whole part of the chicken the shake the chicken for some excess flour. Do it again until everything is done and ready for frying.
6.) Fry the chicken until golden brown 8-10 minutes for white meat and 13-15 minutes for dark meat.
7.) Serve hot with chicken gravy and rice. Enjoy!

Notes:
- You can used combination of dark meat and white meat for this recipe.
-  The bigger the meat; the longer the cooking process, make sure that the chicken is cook properly before eating.
- Taste according to your preference and used your favorite seasoning.

Pork Chop Recipe


Pork Chop with Gravy Sauce

A pork chop is a chop of pork (a meat chop) cut perpendicularly to the spine of the pig and usually containing a rib or part of a vertebra, served as an individual portion.

I'm big fan of pork and I always make sure that I have it on my freezer all the time. I just simply love pork.. wink:) So, this week why not let have some Pork chop with gravy sauce for dinner.. wheee!! (super inspired) Guaranteed its very easy to make and a stress free recipe.
 Let just say, you have cornstarch,flour and pork, that's it! you can pull off some scrumptious dinner in no time and to make it extra special make some gravy sauce out of it, Ohh No,, gravy??!!!. before thinking about the gravy sauce let me share you something.... I have an idea to make things little faster and its proven and tested by ME!:) wink:). I just simply use store bought gravy pocket mix. It always perfect every time!  Instruction on the back of the gravy mix is provided and to spice up this perfect Pork Chop Dinner, I used chicken stock instead of regular water in making the gravy sauce.
I'm so excited to share this simple yet delicious recipe with you, It's been like 2 weeks or so that I haven't posted one.. So, c'mon lets make this perfect dinner for the week.
 
Ingredients:
Pork Chop- I used boneless, 1/4 thick cut pork 
1/2 cup flour
2 teaspoon cornstarch
Salt and Pepper
Oil- for frying
Optional:
Gravy sauce mix- I used the store bought pocket mix
- Just simply follow the direction on the pocket, very easy!
-This is great addition to a perfect Pork Chop dinner


Directions:
1.) Flour Mixture- In large bowl combine the flour and cornstarch, seasoned with salt and pepper. Mix well, set aside;
2.) Egg Mixture- In separate bowl is the egg mixture. Set aside;
3.) In large pan, put little oil and wait until it get HOT.
4.) Seasoned the pork with salt and pepper. 
5) Let start the process. First put the pork in the egg mixture, then coat it with flour mixture, and then onto the hot pan... Continue the process until everything is DONE.  
6.) Either you can serve it right away or put it on the oven until the gravy sauce is done.
7.) Best serve with hot with rice or seasoned vegetables and gravy on top. Enjoy and Share!:)

Tips:
- Taste according to your preference, using your favorite seasoning is also a PLUS.
- Gravy sauce is optional, but It really does make the difference when it comes to taste.
- Just simply enjoy cooking...:)

Shakoy Recipe


"Shakoy" or Twisted Donuts Recipe

 Shakoy is one of my favorite snack or merienda since I was little kid, I always looked forward having shakoy after school or on weekends. This twisted donuts coated with sugar is very popular in the Philippines as " Shakoy" , I don't know why local called it that way. There's lot of street vendors selling Shakoy at the streets, even bake-shoppe sell this yummy snacks too. Today, As usual my craving strike, and so here it is! fresh from my kitchen, and it tasted like back home! It's sweet, soft and ummhh..just simply good! I ate 3 pieces already (hahah) Don't tell!!
My kids just watched me the entire process of making this yummy snack, I think they're curious what I'm doing, which by the way I loved. I finished it really quick! ( smiley face ) and my 3 year old daughter took picture of the shakoy / twisted donuts before frying. 
My kiddies are so behaved so I awarded them by having the first taste of Shakoy.. and this is exactly my little boy said ....YUM! mommi...and hubby loved it. He gonna take some to work tomorrow..Yay! and I have 2 left for our snack tomorrow..:)
Next time, if your thinking about something for snack or dessert, this is the best recipe for you! Simple ingredients mostly you already have in your household and very easy to make..

Ingredients:
2 cups flour
1/2 cup water, lukewarm
1 egg
1/4 cup sugar
1/4 cup butter or 4 tablespoon - cold and chopped into cube
1 pack yeast ( 2 1/4 teaspoon yeast )
1 tsp. salt
extra sugar- for coating
oil- for frying ( if u have deep fryer, much better:) )



Directions:
1.) In large bowl combine flour, sugar, yeast, salt and butter. Mix well until everything incorporated.
2.) Add the egg into the mixture and lukewarm water and start mixing together.
3.) Knead the dough in clean floured surface until smooth and elastic. Let is rise for 1-2 hours.
4.) Divide the dough into 14 pieces. Start rolling dough into cigar and twist it. ( like the picture on top)
5.) Let it rise for 20-30 minutes. (Enough time to heat the deep fryer on medium low)
6.) Fry it for about 1-2 minutes each side. Let is cool. Put in the plastic bag with sugar and shake it.
7.) Best when serve hot along with your favorite drinks, like coffee or hot chocolate. Enjoy~
 

 We enjoyed eating "shakoy" today with my family. Definitely gonna make more soon!
