Pancit Palabok


Pancit Palabok

(Shorcut version)

Pancit palabok and pancit luglug are essentially the same dish, the difference being primarily in the noodles used in the recipe. Luglug uses a thicker noodle than the traditional bihon of a pancit palabok. Both pancit dishes use a round rice noodle (often specifically labeled for pancit luglug or palabok) smothered with a thick, golden shrimp sauce or other flavored sauce, and topped with:
  • Shrimp, (the size and shell-on or shell-off depending on preference)
  • Crushed or ground pork rind
  • Hard-boiled egg (sliced into disks or quartered lengthwise or chopped)
  • Tinapa (smoked fish) flakes
  • Freshly minced green onion
Pancit palabok/pancit luglog and pancit canton are communal comfort food, and can be found at nearly all Filipino potluck parties. They are best made and eaten in batches for they are easily consumed.

I love Pancit Bihon, Pancit Canton, and even this Pancit Palabok. I made this a couple days ago and it was delicious, I would say my next favorite pancit recipe next to pancit bihon. Exciting news!!! I found a way to make the shrimp sauce even faster and stress free. Last week, I noticed this packet sauce at Asian store and I was smiling...BOOM! I didn't know about this until last week, but I believe it was already out on the market long time ago..the good thing about this, there is directions on the back of the package that's very simple follow. So, next time when you go to the market, look for those shrimp packet sauce for pancit palabok and try it at home. You wouldn't believe how easy it is to make Pancit Palabok for whole family. In this recipe, I made my own twist by adding some ground pork and my favorite garnishes but you can totally rock this out by making your own twist. Lets have some Pancit this week! and I'm beyond excited to share this recipe with you guys! check out the recipe below and try it on your next potluck get together..wink:)

Shrimp Sauce:
Note:
- I used the store bought shrimp sauce packet, but if you have a good sauce recipe for Pancit Palabok feel free to make it homemade.
- Taste according to your preference.
- Add your favorite garnish for Pancit Palabok.

Ingredients for making the sauce:
1 lbs. ground pork
1 package of store bought shrimp sauce
2 cups water


Directions for making the sauce:
1.) Put the ground pork on the skillet and let it brown. Add 2 cups of water bring it to boil.
2.) Add the store bought shrimp sauce or Pancit Palabok sauce. Simmer until it thicken the sauce.
3.) Set aside. Pour it over to the cooked rice noodles and add your favorite garnish.

Pancit Palabok:


Ingredients:
Bihon/ Rice noodles
Shrimp sauce
Boiled Eggs- Sliced
Chopped green onion



Directions:
1.) In large pot. Bring water to boil. Add the bihon/ rice noodles let it cook for couple minutes. Drain; set aside.
2.) Pour the sauce into the cooked and drained rice noodles. Mix well
3.) Serve with rice and top it off with variety of garnish. I like mine with boiled eggs and green onion.

Easy Spaghetti

( Family's favorite )

Pasta is the second most consumable food in our household next to rice.

Macaroni, Rotini, Spaghetti noodles is just few dried pasta always present in our pantry. I'd like to make easy quick dinner using dried pasta every once a week and Spaghetti is one them :)
This Spaghetti is no different from the rest of spaghetti  recipe flooding on the internet. As, you know ME :). I'd like to keep my recipe short and simple yet taste delicious. This Spaghetti is our family's favorite dinner, their super easy to make and my kids loved them. 
Every person I know, knew how to make spaghetti, they even have their own version on how to make them, and there all delicious!!. It makes me happy knowing the stories behind their recipes.
 I like my spaghetti with sweet meat sauce like sausage, ground beef whatever available at the house and top with cheese. What do you like with your spaghetti?
Below is my version of Spaghetti:)

Ingredients:
Spaghetti noodles
Italian Sausage
Pasta Sauce- (store bought)
Cheese
Garlic
Onion
Sugar
Salt and Pepper- to taste
 2 tsp. cooking oil

Directions:
1.) Cook the pasta in large pan according to the package direction. Drain and set aside;
2.) Put oil in large pan, sauteed the onion and garlic until translucent. Add the Italian sausage cooked until golden brown.
3.) Add the pasta sauce, salt and pepper and little sugar. Let it simmer for like 5 minutes
4.) Add the cooked pasta into the spaghetti sauce. Let it stand for couple minutes until everything incorporate.
5.) Taste according to your preference. Serve hot! top with your favorite cheese and  with garlic bread on the side. ENJOY~

Pancit Bihon Recipe


Pancit Bihon for Dinner

"Pancit or pansit - is the term for noodles in Filipino Cuisine"
Bihon- is very thin rice noodles fried with soy sauce.
Pancit Bihon is also one of the most popular dish in the Philippines. Its always ON everyone's table every special occasions. As long as you have the rice noodles, meat of your choice and soy sauce, your good to go, very easy and fast meal!. Everyone have different version on how to make their Pancit Bihon. I make mine just like how my Mom made it for us. I've been eating it since I was young, It's always the "BEST"  it can go with rice or bread or just itself. I like Pancit Bihon hot over rice with squeezed calamansi..uhhh! Its just like "Pinas" YUM!!
 My hubby and kids loved it! It always make smile, watching my kids enjoying Pancit Bihon every time we have it for dinner. I love making it for them everytime they ask for it.:) wink!


  Ingredients:
Rice Noodles/ Bihon
Chicken
Carrots
Cabbage
Green Onion
Garlic
Onion
Soy sauce
Salt and Pepper to taste
Calamansi/ lemon- to be squeezed before eating.


Procedures:
1.) Soak the Bihon/ Rice Noodles in water for about 10-12 minutes.
2.) Meanwhile, In large pot saute the garlic and onion. Add the chicken and let it simmer.
3.) Add the vegetables and let it cook for 5-8 minutes.
4.) Add the drain rice noodles/bihon, put some soy sauce. Salt and Pepper to taste. Covered for 3-5 minutes. 
5.) Serve it hot! and squeezed some calamansi or lemon on top before eating. Enjoy!

Pansit Canton Recipe


Pansit Canton on the Plate

( Lo Mein Style)

 

I remember growing up eating this dish in every special occasions, weddings, holidays, fiestas and most especially during birthdays. My Mom told me all the time that, "Pansit" represent long life and good health. Its traditional beliefs that was pass to my Mom's generation and so on and so fort, to make this long story short hahahah! up to this days I always have "pansit" on my birthday and even my kids birthday. I love Pansit I can eat it anytime of the day and yesterday it's calling my name, So that's what we have for our scrumptious dinner. As always my family loved it:)
I'll call it Pansit on the Plate! simply because its fast and you can have it in your plate less than 30 minutes. It's also perfect for potluck party, any special occasion you can think of and whenever cravings strike..
I'll show you how easy it is to make this Pansit Canton.. wink:)


 Notes: I use vegetables I have on hand, So feel free to use whatever you like. Cabbage, peppers, green onion and much more.

 Ingredients:
Chicken- cut into thin strips                  
 Dry noodles                                                        
Onion                                                                  
Garlic                                                       
Carrots- cut into thin strips                              
Bokchoy/ Cabbage                                             .
Soy sauce
Water
Sugar

 Tips: I cook the noodles according to the package but I took it out after 2 minutes in boiling water. It will continue cooking after along with the chicken and vegetables.
                               
 Directions:
1.) Heat oil in the skillet until hot, add the chicken and saute until golden brown.
2.) Add the vegetables, let it simmer for 5-10 minutes depending how you like your vegetables cook.
3.) Add the cooked noodles, mix it well. Stir in soy sauce, sugar, salt and pepper and little water. Let it simmer for 2 minutes.
4.) Stir well and taste. Serve it with rice, bread or just Pansit Canton on the plate.
